How To Stuff A Duck: Learning Artisan Foie Gras Production In France, Jean Lavigne Oct 2021

How To Stuff A Duck: Learning Artisan Foie Gras Production In France, Jean Lavigne

Environmental Studies Faculty Publications

I have always hated the taste of liver. Calf’s liver, chicken liver, liverwurst, any kind of pâté that contains even a small amount of liver—for me, the taste is repulsive. I was once served a rabbit’s liver at a family meal in Italy, the prize morsel that is offered to guests; I choked it down with an unconvincing “Grazie.” I never imagined I would come to like a specific kind of liver enough to prepare it myself at home, much less to spend six weeks with an artisan foie gras producer in Southwestern France learning how to produce it from …

Building Bridges Not Walls: An Exploratory Study Of Student Involvement And African American Student Retention At Community Colleges, Brittney Rasjan Hernandez-Stevenson Oct 2021

Building Bridges Not Walls: An Exploratory Study Of Student Involvement And African American Student Retention At Community Colleges, Brittney Rasjan Hernandez-Stevenson

Dissertations

African American students are attending college and working toward earning credentials, yet this population is persisting at lower rates compared to their White counterparts. The purpose of this study is to explore the impact that student involvement has on African American student persistence and retention at community colleges. A Sequential Explanatory mixed methods design was conducted with quantitative data from 743 African American KCTCS community college students that completed the 2019 Community College Survey of Student Engagement (CCSSE) and qualitative data from 11 focus group interview participants. An ordinal logistic regression was used to analyze the data and the quantitative …

Crest Or Trough? How Research Libraries Used Emerging Technologies To Survive The Pandemic, So Far, Scout Calvert Oct 2021

Crest Or Trough? How Research Libraries Used Emerging Technologies To Survive The Pandemic, So Far, Scout Calvert

University of Nebraska-Lincoln Libraries: Faculty Publications

Introduction

In the first months of the COVID-19 pandemic, it was impossible to tell if we were at the crest of a wave of new transmissions, or a trough of a much larger wave, still yet to peak. As of this writing, as colleges and universities prepare for mostly in-person fall 2021 semesters, case counts in the United States are increasing again after a decline that coincided with easier access to the COVID vaccine. Plans for a return to campus made with confidence this spring may be in doubt, as we climb the curve of what is already the second …

Unl’S Wiley Journal Downloads: 2014-2020, David C. Tyler, Casey Hoeve, David Macaulay

University of Nebraska-Lincoln Libraries: White Papers

Because the field of librarianship has been examining its relationship to commercial academic publishers and their 'Big Deal' journal packages, the authors elected to examine one such package, Wiley's. The authors' hoped to determine whether the University of Nebraska-Lincoln's usage was concentrated enough and consistent enough over a multi-year interval for download data to be useful in identifying journals for hypothetical individual subscriptions or for inclusion in a hypothetical smaller, UNL-specific package.

Income And Happiness: A Philippine Context, Rosalina Palanca-Tan Oct 2021

Income And Happiness: A Philippine Context, Rosalina Palanca-Tan

Economics Department Faculty Publications

This paper adds to the relatively scant developing country perspective in the economic literature on happiness by investigating the relationship between income and happiness in the context of Koronadal, a low-income city in Mindanao, Philippines. Subjective happiness and potential contributory factors to happiness (demographic, economic, and social capital variables) are elicited through a survey and analyzed using descriptive and regression analyses. The study provides empirical evidence for the “happy poor” image of the Filipinos, with its survey data revealing that despite high poverty incidence and generally low-income levels, people in Koronadal are pretty happy with a mean self-reported happiness score …

Social Media And Eating Disorders, Alyssa Harrell Oct 2021

Social Media And Eating Disorders, Alyssa Harrell

Masters Theses & Specialist Projects

The impact that social media has on developing eating disorder symptoms is an important subject that needs to be studied more. The previous research on the topic has been limited to looking at college aged females and excluding other under researched populations such as males. Previous research is also limited in the areas of looking at specific social media pages and the time spent on social media. The current study was a correlational study looking at the direct impact that increased time on social media can have on the likelihood of developing eating disorders. There was a total of 37 …

Equine Assisted Therapy For Veterans, Nicole M. Krum

IPS/BAS 495 Undergraduate Capstone Projects

Equine-assisted activities and therapy have been proven to be highly effective in assisting veterans with mental health conditions. This project aimed to provide information and resources about these services to Treasure Valley veterans. In order to do this, an in-person open-house was hosted, to connect veterans to equine therapy. By completing this project, it can be asserted that there is a general lack of accessible and affordable services.

Helping Homeless Veterans, Robert E. Kelley

IPS/BAS 495 Undergraduate Capstone Projects

This project is base on me communicating to homeless veterans and passing on research based on my own research on how to connect with them and be able to get them resources to get help. I attempted to gain the trust through conversations and story telling to allow them to feel comfortable with me enough for them to trust me in sharing information about how to get help to get back in the community.
