This study aimed to explore and understand the impact of the Graduate Certificate in Workplace Diversity, Equity, and Inclusion (DEI Graduate Certificate) on master’s and doctoral students’ social empathy (SE) development. The participants in this certificate engaged in several online activities that increased their knowledge of microaggressions, privilege, and unconscious bias while building their social empathy. This certificate provided various tools and skills to its participants so that they might value diversity, look at the world from another’s perspective, and start a dialogue to promote social change. The Center for Mind-Body Medicine (CMBM), founded by Dr. James Gordon, provides communities with evidence-based Mind-Body Skills Groups (MBSGs) that foster self-care, self-awareness, and self-expression. MBSGs range from 8 to 12-week series on various mind-body practices wherein group members meet, practice, and reflect on the impact of mind-body skills in their lives. Research has demonstrated that participants in MBSGs have positive outcomes. Healthcare professionals (HCPs), especially nurses, gain resiliency from MBSGs. This quantitative study examined factors of internal preparation practices (i.e., coursework in college teaching, fieldwork in college teaching, and frequency of supervision) and external pedagogical experiences (i.e., holding a bachelor’s or master’s degree in teaching and adjunct faculty experiences in higher education) and their potential effects on teaching self-efficacy among counselor education and supervision doctoral students. This study identified both significant and non-significant relationships between the stated variables. Contrary to previous research (Suddeath et al., 2020), internal preparation practices did not significantly predict scores of teaching self-efficacy among this population. This self-exploratory pilot qualitative study examines the impact of critical social media pedagogy on students’ behavior and attitudes toward social media. This study employs a critical lens of course content and self-reported student data from 18 participants who completed a Northern California university course titled “Social Media, Social Change” in the fall of 2019. The changes in participants’ social media behaviors and attitudes were measured via a pre-and post-survey designed by the researcher. Nontraditional students, defined as those age 25 and older, had a first-year persistence rate of just 46.8% in 2019 (National Student Clearinghouse, 2021). The Education Fund, a large non-profit that provides training and tuition assistance to healthcare workers, is acutely aware of this problem as its membership is made up almost entirely of nontraditional learners. The Education Fund has many college readiness programs, and in an effort to improve upon their outcomes, requested this study on student persistence. Because FCS agents teach communities about dietary guidelines, it is important that they are aware of the latest nutrition research. This study assessed FCS agents’ knowledge of popular fad diets (low-carbohydrate, intermittent fasting, detoxes and cleanses) and their potential adverse effects, and its relationship among location, certifications, years of experience, professional association memberships, and education. Agents in Louisiana, Texas, Arkansas, and Mississippi were emailed a survey. RDN, DTR, and CHES certifications had significant associations (p = 0.03) with knowledge of adverse effects of fad diets. Agents who hold these credentials may have more knowledge about adverse effects of fad diets.

Students often struggle with ways to turn their experiences into meaningful stories. Photovoice is a way to use photography for positive social change and to help people tell their stories. I used Photovoice to help students process the uncertainty of moving back home when the university switched to remote in Spring 2020. Since I teach public speaking, I used those stories to teach public speaking skills as well.

This thesis research focuses on sustainability faculty and undergraduate students at the University of South Dakota and how they perceive sustainability education. I conducted semistructured interviews to determine faculty and student perspectives regarding sustainability, sustainability education, and the undergraduate sustainability curriculum at the University of South Dakota.
