Integration Of Disability Studies And Culinary Instruction Into Nutrition Curriculum Development, Joanne Sullivan, Regina Subach, Janice Goldschmidt Jan 2023

Integration Of Disability Studies And Culinary Instruction Into Nutrition Curriculum Development, Joanne Sullivan, Regina Subach, Janice Goldschmidt

Journal of Dietetic Education

The Academy of Nutrition and Dietetics is currently promoting the advancement of cultural humility as a means for nutritional professionals to better appreciate the lived experience and identities of others as well as the power dynamics that create health inequalities. At the same time, the Academy has struggled to advance services to underserved populations such as those with Intellectual and Developmental Disabilities (IDD) and autism spectrum disorder. Here the authors argue that both goals can be achieved by involving nutrition students in the teaching of food preparation skills to individuals with IDD. Dietetic students emerge with an enhanced understanding of …

Navigating The Adoption Of Interprofessional Education As A Performance Standard In Dietetics Education, Paige Whitney, Mary Ann Kluge

Journal of Dietetic Education

Abstract: The purpose of this collective case study was to explore the diffusion of interprofessional education (IPE) in response to specific Future Education Model (FEM) Graduate Program accreditation standards and performance indicators. Data were collected via semi-structured interviews with a purposive sample of 12 FEM program directors from geographically diverse US states. Website and document review were triangulated with the interview data, and Roger’s Diffusion of Innovation (DOI) was used as a theoretical framework to add dimension to the study. Three themes emerged from analysis: 1) Accreditation standards are not the driving force of IPE; 2) Program Directors can serve …

Support For Alternative Route (Ar) Teachers In The New Jersey Public School System, Ashanti N. Holley

Theses and Dissertations

In this study, the researcher explored the perceptions that New Jersey content specialized, alternate route (AR) teachers had about the support provided to them by those in their educational support system (administrators, mentors, peers, students, parents, and others) in their first five years of service. Thirteen (N=13) female individuals participated in a qualitative research design study. The researcher interviewed this selected group of participants to answer two inter-related research questions: 1) To what extent do the alternative route, content specialized, female teachers perceive support from their educational support environment; and 2) To what extent do the alternative route, content specialized, …

A Collective Journey: Coalitional Critical Consciousness And Collaborative Methodologies In Bilingual Teacher Education, Rachel Snyder Bhansari Jan 2023

A Collective Journey: Coalitional Critical Consciousness And Collaborative Methodologies In Bilingual Teacher Education, Rachel Snyder Bhansari

Curriculum and Instruction Faculty Publications and Presentations

This article analyzes critical reflection groups held over the course of a year-long collaborative ethnography between me as researcher and five novice bilingual teachers. Drawing on feminist theories of emotion as knowledge, I argue that coalitional critical consciousness developed in our meetings through emotional expression and acknowledgment of identity in connection to systems of power. I also explore the affordances of collaborative methods in the formation of collective critique for practicing teachers.

Support For Working Students: Understanding The Impacts Of Employment On Students' Lives, Rebecca Summer, Megan Mccoy, Isabelle Trujillo, Esperanza Rodriguez Jan 2023

Support For Working Students: Understanding The Impacts Of Employment On Students' Lives, Rebecca Summer, Megan Mccoy, Isabelle Trujillo, Esperanza Rodriguez

University Honors College Faculty Publication and Presentations

The majority of college students work, and there are well-documented findings about the impacts of student work on academic performance. However, there is little research on the impacts of this work on other aspects of students’ lives. In this study we ask: What are the impacts of student employment beyond academic performance? Using our methodological approach of student-driven research and a mix of quantitative and qualitative analysis, we find that work has four main impacts on students’ lives: it limits flexibility in students’ schedules, leaving them vulnerable in emergencies; it requires students to make difficult financial calculations; it can cause …

Does A College Degree Really Influence Economic Success? It's Complicated, Aaron W. Hughey Jan 2023

Does A College Degree Really Influence Economic Success? It's Complicated, Aaron W. Hughey

Faculty/Staff Personal Papers

Higher education in the United States is currently facing a myriad of challenges, most of which are self-inflicted. Having a more educated populace, in and of itself, does not necessarily guarantee any advantages to anyone. We can blame shifting demographics, evolving economic realities and changing societal priorities – but the ultimate responsibility for our present circumstance lies squarely with those within the academy.

Empowering Hopeful Student Leaders At The Catholic Social Ministry Gathering, Nick Cardilino

Learning Teaching Forum

Since 2013, Campus Ministry's Center for Social Concern has brought a small group of students to the Catholic Social Ministry Gathering in Washington, D.C. In their Young Leaders Initiative program, students learn about social justice issues and how they relate to Catholic teaching. On the fourth day, they have the opportunity to meet with their congressional representatives and senators or their aides to discuss three legislative issues that the U.S. Bishops are advocating for. A panel of past participants will talk about what they learned, how they grew as leaders and how the experience gave them hope for positive change …

Educating The Whole Person: A Mini-Course Designed To Integrate Head, Heart, And Hands, Karen Lovett, Stephen Wilhoit, Elizabeth Ann Mackay, Meaghan Crowley

Learning Teaching Forum

How can a humanities-based mini-course that employs experiential learning help first-year students better understand their vocation by serving others? For the past year, teams of faculty and staff at UD have worked out answers to this complicated question, developing four versions of new mini-course students will take this spring: Educating the Whole Person. Each section of this mini-course will be taught collaboratively by a faculty or staff member with the aid of a community partner. By studying a core set of texts in the humanities, serving others through experiential learning, and reflecting deeply on their own vocations, students will learn …

A Scoping Review Of Campus-Based Animal-Assisted Interactions Programs For College Student Mental Health, Tanya K. Bailey

People and Animals: The International Journal of Research and Practice

Background: People have long found support by interacting with animals, which has developed into a health care modality called animal-assisted interactions (AAI). In the past 10 years, AAI has increased as a way to support college students’ mental health; however, there is no comprehensive evidence on the effectiveness of these programs.
Method: A scoping review was conducted using the JBI and PRISMA-ScR criteria. Empirical articles were identified through Academic Search Premier (EBSCOhost), PsychINFO (Ovid), and Web of Science using three groups of keywords: AAI, college students, and mental health.
Results: Of the 1,195 publications identified, 37 met this study’s eligibility …

Development Of A Micro-Credential Curriculum: The Interprofessional Dementia Caregiving Telehealth Community Practicum Badge, Susan L. Wenker, Chinh Kieu, Tracy Schroepfer, Kristen Felten, Kathleen Smith, Hossein Khalili Jan 2023

Development Of A Micro-Credential Curriculum: The Interprofessional Dementia Caregiving Telehealth Community Practicum Badge, Susan L. Wenker, Chinh Kieu, Tracy Schroepfer, Kristen Felten, Kathleen Smith, Hossein Khalili

Internet Journal of Allied Health Sciences and Practice

Purpose: Informal dementia caregiving by family caregivers is a crucial component of the care provided to people living with dementia (PLwD). The numbers of these family caregivers are rapidly increasing at a time, when in the U.S., the availability of formal caregivers is decreasing. Currently, health professional training focuses on providing care to PLwD and not necessarily addressing the caregiver’s needs, and this training takes place within professional silos and not interprofessionally. This study sought to address this issue by: 1) examining the current state of interprofessional dementia caregiving trainings in the US; and 2) developing a micro-credential curriculum called …

Internet Journal of Allied Health Sciences and Practice

Background: Burnout is linked to various adverse outcomes (i.e., thoughts of dropout, depression, unprofessional behaviors) in healthcare students (i.e., nursing students, medical students). However, potential adverse outcomes associated with burnout in athletic training students, a subset of healthcare students, have yet to be identified. Objective: To adapt a previously tested theoretical model to explore relationships between student workload, burnout, and potential adverse outcomes in a sample of graduate athletic training students. Methods: An online survey assessing the variables of interest and study information was sent to program directors of graduate-level athletic training programs at their publicly accessible email addresses with …

Preparing Faculty Using An Assessment For How Clinical Laboratory Students Learn, Maryanne Stewart, Ronette Chojnacki Jan 2023

Preparing Faculty Using An Assessment For How Clinical Laboratory Students Learn, Maryanne Stewart, Ronette Chojnacki

Internet Journal of Allied Health Sciences and Practice

Purpose: Students interpret and learn information in different ways. Whether students develop deep or surface learning depends in large part on the transmission of information from their educator, which activates their domains of learning. Knowing students’ learning styles as either visual, auditory, psychomotor, or mixed, professors can develop teaching resources that benefit the learning diversity of their students by using different instructional delivery methods. This study examines survey results for how students learn best to enhance the student experience within the Clinical Laboratory Science (CLS) program at a university in Detroit, MI, USA. Method: To determine the resources needed …

Internet Journal of Allied Health Sciences and Practice

Introduction: All healthcare workers are responsible for patient safety and quality improvement and need to “speak up” to communicate issues. As healthcare systems strain under the impact of reduced staffing and workloads increase, allied health new graduates are feeling under pressure and unsupported. Understanding their experiences of speaking up as they transition into the workforce will identify what support they require to fulfil their patient safety and quality improvement responsibilities. Method: An exploratory study was conducted to investigate how new graduates in allied health speak up. Informed by a realist theoretical position, this study was interested in what contexts and …

The achievement gap for the educational attainment of underrepresented populations has been the subject of study for decades. According to the Kentucky School Report Card data for school year 2018-2019, the Latinx community has an achievement gap rate of 42.0% with differences of -19.1% compared to White (non-Hispanic) students. Therefore, it is essential to find pathways to close the educational attainment gap and achieve equity. In this poster, I will research best practices for improving diverse student performance and educational opportunities, including the recruitment and retention of diverse educators and staff. A research report by the Learning Policy Institute states …

Emotionally Unavailable: A Comparison On The Ability Of Children With Developmental Language Disorders To Interpret Emotions In Humans And Inanimate Objects, Savanna B. Gullett, Jade Robinson

Posters-at-the-Capitol

Developmental Language Disorder (DLD) is a neuro-developmental condition that emerges in early childhood and can persist into adulthood, manifesting as a variety of symptoms that can be significantly different in each individual. It has an estimated prevalence of 7.58% and is nearly 7 times more common in children than autism spectrum disorder (McGregor, 2020). As a population, individuals with DLD are at risk of facing significant issues in associating areas of language, including reading comprehension, problem-solving abilities, and social skills. Professionals have noticed emotional disconnect amongst individuals with DLD, leading to the proposition that those with DLD may have a …

Exploring The Challenges Of Biracial & Multiracial Latino/As In The U.S., Kaitlin Coyle, Abbey Poffenberger, José Juan Gómez-Becerra, Socorro Zaragoza

Posters-at-the-Capitol

This research project aims to inform about the challenges that biracial/multiracial Latino/as face growing up in the United States. The U.S. has historically maintained a monoracial view of race, in contrast to Latin America, which embraces “mestizaje,” or “race-mixing,” and the existence of races of multiracial individuals. These differing views of race have presented unique challenges for Latino/as who identify as more than one race in the U.S., including experiences of monoracism/racial essentialization, assimilation, microaggressions, discrimination, and the chameleon effect. Many also go through unique biracial/multiracial identity development and may experience an identity crisis. This research project provides a brief …

Revisiting Cybersecurity Awareness In The Midst Of Disruptions, Avideh Sadaghiani-Tabrizi

International Journal for Business Education

The awareness of cybersecurity and knowledge about risks from a variety of threats, which present harm or steal private information in internetworking could help in mitigation of vulnerabilities to risks of threats in safeguarding information from malware and bots. Revisiting cybersecurity awareness of every member and evaluation of organization’s posture might help to protect sensitive or private information from a network of computers, working together and forming into botnets. The purpose of the qualitative case study narrative was to explore prospects for integrating cybersecurity education into elementary school children’s curriculum through interviews of elementary schoolteachers, IT experts, and parents to …
