Elderberry (Sambucus sp.) fruit is a healthful food with a variety of reported curative properties and is among the richest sources of anthocyanic pigmentation, which are the primary factors for its commercial use. Although a variety of value-added elderberry products are available to consumers, it is questionable as to which product form contains the highest nutrient levels and color stability characteristics, and represents the best value to consumers. It was the objectives of this research to evaluate a variety of commercial elderberry products, and to develop a value-added elderberry product with enhanced nutrient and color stability.

Abstract

Intervention(s): Data was collected using an online Qualtrics survey with a number of questions on demographics, sports participation, disordered eating and body dissatisfaction.

Main Outcome Measure(s): Means, standard deviations, and frequencies for all demographic information. Independent t-tests were conducted to compare: differences in disordered eating and body dissatisfaction between higher and lower performers.

Results: Higher performing athletes were not at greater risk of disordered eating or eating disorders (P>.05). No significant difference was found between higher and lower performers on EDE-Q average score, BSQ average score, or EDE-Q subscales. There was no difference found among cross-country …

Abstract

Objective: To determine if collegiate athletic trainers meet the current national recommendations for a healthy weight, diet and physical activity.

Design: The research was a cross-sectional design consisting of a self-constructed survey formulated using the 2010 Dietary Guidelines and 2009 Academy of Sports Medicine Physical Activity Recommendations.

Subjects: One- thousand randomly selected athletic trainers were contacted to participate. One-hundred and five participants (10.5% return rate) completed the survey. All were District 3 members of the National Athletic Trainers Association.

Measurements: Body mass index (BMI) was calculated using participant self-reported height and weight data. Means and frequencies were computed for …

The objective of this study was to determine the effectiveness of a 6 week afterschool nutrition and physical activity intervention administered by a registered dietitian with the help of a humanoid robot targeting elementary school aged children aged 6-12 years. The study was conducted across four Young Men’s Christian’s Association (YMCA) sites in Miami-Dade County, Florida (N= 114, Mean age: 8.16 ±1.57 years) using a pretest-posttest quasi-experimental design via randomly assigned intervention (two sites; n=63) and comparison groups (two sites; n=51). Introduction: Treatments of retinoic acid, a metabolite of vitamin A (VA) are shown to induce hyperlipidemia in humans and animals, which may influence adiposity. To understand the role of VA in weight management, two studies, one in animals examining effects of VA combined with high-fat diet (HFD) on body mass (BM) gain and the second in humans comparing dietary VA between participants who were overweight/obese and who had and had not lost 10% of body weight by consuming a hypocaloric, low-fat diet, were conducted.

The Health Promoting Schools concept helps schools to promote health in a sustainable and long-term fashion. However, developing the capacity to promote health in this way can be challenging when a busy teaching curriculum must be fulfilled. This study aimed to identify factors which affect the acceptability of health promotion programmes to the everyday school environment.

Semi-structured qualitative interviews were audio-taped with primary school teachers in one Irish county and transcribed verbatim. The resulting transcripts were analysed using content analysis.

Public health professionals in the United States are implementing various interventions in effort to improve dietary intake in low-income individuals. One intervention strategy that has gained attention over the past several years is providing financial incentives for federal nutrition assistance users when they purchase fruit and vegetables at local farmers' markets. The overall objective of the research studies included in this dissertation were to develop, implement, and evaluate farmers' market incentive programs in Utah in effort to determine if this intervention increases fruit and vegetable intake and improves food security status among low-income individuals.

The prevalence of cardiovascular disease is a major public health concern worldwide. It has been theorized that diets rich in fruits and vegetables may be protective against the development of cardiovascular disease mainly through their high content of flavonoids. Flavonoids were thought to influence traditional risk factors of cardiovascular disease such as blood pressure, lipid profile, and systemic inflammation. Physically active females, or female athletes, are at risk for the condition known as the female athlete triad (Triad). The Triad is made up of three components that are distinctly separate, but intertwined: consuming inadequate energy for how much they are exercising, poor bone health, and problems with their menstrual periods. When female athletes don’t consume enough energy for how much they exercise, there can be hormonal imbalances, causing the body to conserve energy from some important functions including menstruation, and increased bone turnover resulting in a higher risk of stress fractures and early osteoporosis. How we view others and ourselves can have a very powerful influence on our lives and how we make decisions. The purpose of this study was to observe self-selected body size images for oneself, self-selected body size figures for a healthy, overweight and obese figure, and the relationship between self-selected body size figures and physical activity (PA) in young adult, male and female, college students (n=34, aged 18-22). During the spring of 2015, PA was measured for seven consecutive days using both accelerometers and the International Physical Activity Questionnaire (IPAQ). Feasible ways are needed to screen for dietary behaviors and taste preferences in clinical settings. We examined the internal validity and reliability of a brief survey to assess food preferences and dietary behaviors among morbidly obese individuals considering bariatric surgery. Survey-reported liking is a proxy for dietary intake, correlating with reported food intake and biomarkers of nutritional status (Sharafi et al, 2015) and linking taste genetics with diet and health (Pallister et al, 2015). Methods –Enrolled were 138 morbidly obese patients awaiting bariatric surgery, who completed a 100-item liking survey of foods/beverages, physical/sedentary activities, and pleasurable/unpleasurable experiences. Vitamin D is known to play an essential role in calcium homeostasis; however, excessive amounts can have harmful effects. Calcium and vitamin D levels are known to be influenced by drug interactions and pathology ranging from of cancer to cardiovascular disease. Vitamin D supplementation has become widespread, and it is important for clinicians to understand the way that certain conditions and medications interact with vitamin D and calcium homeostasis. Methods The present study was designed to examine effect of high fat (HF) diet on cardio-vascular structure and function in spontaneously hypertensive rats (SHR), fed HF diet for 15 weeks, a phenotype designed to mimic metabolic syndrome. Results Development of metabolic syndrome like phenotype was confirmed using parameters, including body weight, total cholesterol and blood pressure levels.
