In modern America, many nutrition-related health issues are on the rise, including diabetes, obesity, and heart disease. Many nutrition professionals link the rise in these three diseases to the Western Diet, which includes a high fat and sugar content within its foods. Due to the increased consumption of this diet high in sugar and fat, obesity, heart disease, and diabetes rates seem to be rising. However, many people who eat this diet and are at risk for these complications, hesitate to change their diet because they feel that healthier alternatives are bland in flavor or have a repugnant taste when …

Background: Obesity rates are higher among rural versus urban adolescents. To examine possible mechanisms for the rural-urban adolescent obesity disparity, we examined the direct and indirect effects of food purchasing patterns, and the home, school, and consumer food environments on dietary intake among rural adolescents. Methods: A baseline survey was conducted among adolescents in eight rural high schools (four in Eastern Kentucky, and four in Eastern North Carolina). Participants answered questions about food purchasing patterns, dietary intake, home food availability, and demographics. The school and consumer food environments were assessed using validated measures from the School Meals Cost Study (United …
Hunger Doesn’T Take A Spring Break: Addressing Childhood Hunger Through Service-Learning, 2017 Purdue University
Hunger Doesn’T Take A Spring Break: Addressing Childhood Hunger Through Service-Learning, Jessica Isaacs
Purdue Journal of Service-Learning and International Engagement
The rate of food insecurity among Hoosier children is slightly above the national average. For many of these children, school lunches are their primary source of nutrition. During school breaks, these children are at risk of going hungry. The Purdue Nutrition Society partnered with Glen Acres Elementary School in Lafayette, Indiana, a school where, in 2016, 72.6% of students qualified for free or reduced lunches. Through the school, 20 students from low-income families were identified and chosen to receive food care packages over their spring break. These packages were delivered to the students’ homes, and they consisted of a minimum …
Weight-Loss Treatment-Induced Physical Activity Associated With Improved Nutrition Through Changes In Social Cognitive Theory Variables In Women With Obesity, 2017 YMCA of Metropolitan Atlanta, Kennesaw State University
Weight-Loss Treatment-Induced Physical Activity Associated With Improved Nutrition Through Changes In Social Cognitive Theory Variables In Women With Obesity, James J. Annesi, Nicole Mareno
Health Behavior Research
Behavioral weight-loss treatments have typically been unsuccessful and a theoretical. Even when treatments were scientifically derived, theory has rarely been used to decompose, and understand the bases of, their effects. This 2-year study evaluated mediation of the prediction of nutritional changes by changes in physical activity, through social cognitive theory variables. Data from women with Class 1–2 obesity, classified as “insufficiently active” (N = 50; Mage = 47.6 years), were extracted from 2 initial trials of a new cognitive-behavioral intervention. That treatment sought to improve self-regulation, mood, and self-efficacy through increased physical activity, to then induce improved eating …

Effect Of Nutrition Education On Food And Beverage Choices Of Adolescent Female Dancers, Marie Ann Williams
Master's Theses and Doctoral Dissertations
Lifestyle choices affect the risk of obesity and ill-health among youth. This study determined whether providing nutrition education to adolescent females enrolled in dance classes influenced their beverage and food choices. It was hypothesized that providing six 10-minute nutrition education sessions for three weeks to adolescent dancers would increase their healthy beverage and food choices. Sixteen girls (12-18 years), from two dance studios in Kingsport, Tennessee, completed this pre-test/post-test study. After nutrition education, soda consumption reduced by 7.7%; sugar sweetened beverages (excluding sodas) reduced by 23%; intakes of fruits and vegetables were enhanced by 5.6% and 21%, respectively. Paradoxically, home-cooked …

Marketing Strategies To Encourage Rural Residents Of High-Obesity Counties To Buy Fruits And Vegetables In Grocery Stores, Emily Liu, Tammy Stephenson, Jessica Houlihan, Alison Gustafson
Dietetics and Human Nutrition Faculty Publications
Introduction
Obesity rates in Appalachia are among the highest in the United States, and knowledge of upstream approaches to decrease prevalence among this vulnerable population is limited. The primary aim of this study was to examine the association between healthy, diet-based, social marketing interventions in grocery stores and frequency of fruit and vegetable intake.
Methods
A social marketing campaign was conducted among 17 grocery stores (N = 240 participant surveys) over 4 months in 5 rural Kentucky counties. Interventions included providing food samples, recipe cards, and promotional discounts on fruits and vegetables and moving high-calorie foods to side aisles.

Does First Sex Really “Just Happen?” A Retrospective Exploratory Study Of Sexual Debut Among American Adolescents, 2017 Montclair State University
Does First Sex Really “Just Happen?” A Retrospective Exploratory Study Of Sexual Debut Among American Adolescents, Lisa D. Lieberman, Eva S. Goldfarb, Samantha Kwiatkowski, Paul Santos
Department of Public Health Scholarship and Creative Works
First sex marks a significant transition for most adolescents, yet teens often report that it was unplanned. Seventy-four college students participated in exploratory focus groups about their first sex. Although initially asked whether their first sex was spontaneous or planned, many participants revealed evidence of forethought or anticipation, signifying a third option, anticipation. This study suggests that the development and timing of sexual health messages should build on the apparent, albeit often unacknowledged, planning and thought that accompany the transition to first sex. Specifically, during the time immediately preceding first sex, young people might be particularly open to such messages.

Cruciferous And Allium Vegetable Intakes Are Inversely Associated With 15‐Year Atherosclerotic Vascular Disease Deaths In Older Adult Women, Lauren Blekkenhorst, Catherine P. Bondonno, Joshua Lewis, Amanda Devine, Kun Zhu, Wai Lim, Richard Woodman, Lawrence Beilin, Richard Prince, Jonathan M. Hodgson
Research outputs 2014 to 2021
Background
Higher vegetable intake is consistently associated with lower atherosclerotic vascular disease (ASVD) events. However, the components responsible and mechanisms involved are uncertain. Nonnutritive phytochemicals may be involved. The objective of this study was to investigate the associations of total vegetable intake and types of vegetables grouped according to phytochemical constituents with ASVD mortality.
Methods and Results
The cohort consisted of 1226 Australian women aged 70 years and older without clinical ASVD or diabetes mellitus at baseline (1998). Vegetable intakes were calculated per serving (75 g/d) and were also classified into prespecified types relating to phytochemical constituents. ASVD‐related deaths were …

Protective Role Of S-Adenosylmethionine Against Fructose-Induced Oxidative Damage In Obesity, Kameliya Zh Bratoeva, Mariya A. Radanova, Albena V. Merdzhanova, Ivan S. Donev
Journal of Mind and Medical Sciences
Introduction. It has been shown that S-adenosylmethionine (S-AMe) stimulates glutathione synthesis and increases cell resistance to the cytotoxic action of free radicals and pro-inflammatory cytokines. The aim of this study was to determine the effect of S-adenosylmethionine on the oxidative stress in adipose tissue in a model of fructose-induced obesity. Methods. The study was performed on male Wistar rats divided into 3 groups: control, fructose fed (HFD) (35%, 16 weeks), and HFD + S-AMe (20 mg/kg). We examined the changes in the ratio of retroperitoneal adipose tissue weight / body weight; levels of reduced glutathione (GSH) and malondialdehyde (MDA) in …

Bridging The Gap From Policy To Practice: Diabetes In Rural Morocco, Zoe H. Robbin
Independent Study Project (ISP) Collection
Morocco is in the midst of an epidemiologic transition ushered in by reduced fertility rates and extended life expectancy. Unlike two decades ago, today’s leading cause of death is chronic disease. In 2006, Moroccan officials launched Vision 2020, a comprehensive plan that seeks to expand access to healthcare and reign back the prevalence of noncommunicable disease, among other goals related to development. Through qualitative interviews with the residents of Tarmilat and Oulmes, a rural community south of Khamissat, this paper represents the first assessment of Vision 2020’s performance thus far to combat the spread of type 2 diabetes among rural …
