Abstract

Background: Basic needs insecurity (BNI), defined as having both food and housing insecurity, is an emerging issue on college campuses. Students experiencing basic needs insecurity may be more likely to have poorer academic performance, as well as poorer physical and mental health compared to other students. This research assesses the prevalence of food, housing, and basic needs insecurity among college students enrolled at a large, public university and identifies factors associated with experiencing food, housing, and basic needs insecurity.

Prenatal dietary education is a very important component of care in healthy pregnancies, but more than that, dietary education can be an indicator of the value a healthcare provider places on holistic care or preventive medicine. The United States and Ireland are compared in this study because they represent high intervention vs. low intervention approaches, respectively, to obstetric care. Some areas of the United States have poorer food environments than others. The Mississippi Delta has limited access to nutritious food, often relying on corner stores for sustenance. The impact of a poor diet can increase chronic disease prevalence, creating additional barriers to health and nutrition for Mississippians. The purpose of this study was to document and explore the rural food environment and discuss urban intervention studies in light of the current state of stores in the Delta. The seed coat of the legume lupin which is rich in insoluble dietary fibre is a major by-product in human food applications. Extrusion cooking has been demonstrated to increase desirable soluble dietary fibre in the Australian sweet lupin seed coat. In this study, processing condition of twin-screw extrusion cooking was optimised using a central composite rotatable design to increase soluble dietary fibre in lupin seed coat from 44.17 g/kg up to 113.69 g/kg dry basis. Sepsis is defined as the presence of an infection in combination with systemic inflammation in a host. One of the detrimental results of sepsis is multiple organ failure which eventually leads to death. Lipopolysaccharide (LPS), an endotoxin that can be found on the outer surface of gram-negative bacteria, can be used as a model for sepsis. LPS present in the circulatory system of hosts can induce symptoms that are seen in patients during septicemia.

Phytopathogenic Ascomycota are responsible for substantial economic losses each year, destroying valuable crops. The present study aims to provide new insights into phytopathogenicity in Ascomycota from a comparative genomic perspective. This has been achieved by categorizing orthologous gene groups (orthogroups) from 68 phytopathogenic and 24 non-phytopathogenic Ascomycota genomes into three classes: Core, (pathogen or non-pathogen) group-specific, and genome-specific accessory orthogroups. We found that (i) ~20% orthogroups are group-specific and accessory in the 92 Ascomycota genomes, (ii) phytopathogenicity is not phylogenetically determined, (iii) group-specific orthogroups have more enriched functional terms than accessory orthogroups and this trend is particularly evident in phytopathogenic …

Background and aims: Dietary berries, such as strawberries, are rich in bioactive compounds and have been shown to lower cardiometabolic risk. We examined the effects of two dietary achievable doses of strawberries on glycemic control and lipid profiles in obese adults with elevated serum LDL cholesterol (LDL-C). Methods: In this 14-week randomized controlled crossover study, participants were assigned to one of the three arms for four weeks separated by a one-week washout period: control powder, one serving (low dose: 13 g strawberry powder/day), or two-and-a-half servings (high dose: 32 g strawberry powder/day). This pilot study set out to assess food consumption measures within the Charleston FoodRx program. Assessments made through this investigation aim to improve the Charleston program as well as provide suggestions for future programs. Charleston FoodRx provides enrolled households with fruits and vegetables in a supply intended to last for two weeks. Purpose: Current biomedical cardiovascular disease nutrition counseling does not incorporate Chinese medicine principles.

Methods: A heart-healthy integrative nutritional counseling (H2INC) curriculum consistent with Chinese medicine principles and biomedical nutrition guidelines was taught to Chinese Americans in group education sessions. Chinese-speaking patients with cardiovascular disease or risk factors from an urban general medicine practice were recruited to attend a 90-minute group session. Participants completed pre-post surveys to assess the impact of H2INC on their perceived heart-healthy nutrition knowledge and empowerment, as well as the cultural relevance of H2INC.

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Vitamin D is an essential nutrient for the maintenance of skeletal muscle and bone health. The vitamin D receptor (VDR) is present in muscle, as is CYP27B1, the enzyme that hydroxylates 25(OH)D to its active form, 1,25(OH)D. Furthermore, mounting evidence suggests that vitamin D may play an important role during muscle damage and regeneration. Muscle damage is characterized by compromised muscle fiber architecture, disruption of contractile protein integrity, and mitochondrial dysfunction. The Reserve Officer Training Corps (ROTC) prepares college students for future military service. The ROTC includes a rigorous physical training program. As such, effective nutrition practices are necessary to maintain performance. The purpose of this study was to assess USU Cadets’ nutrition knowledge and practices to inform future research and intervention needs. Cadets were recruited through email and classroom announcements. Participants completed an online survey that gathered demographic, fitness, nutrition knowledge, nutrition behaviors, Intuitive Eating, perceived stress, and food security data.
