ความสม่ำเสมอของขนาดซากไก่เป็นปัจจัยหนึ่งของการเกิดปัญหาไก่ไส้แตก ซึ่งปัญหานี้มักพบในขั้นตอนการนำเอาอวัยวะภายในออก เมื่อเกิดปัญหาไก่ไส้แตกพนักงานในโรงงานผลิตไก่ต้องเสียเวลาทำความสะอาด และเสียเวลา จึงทำให้ต้นทุนการผลิตเนื้อไก่สูงขึ้น โดยปรกติขนาดของซากไก่ถูกควบคุม ด้วยน้ำหนักและอายุของไก่ แต่ในความเป็นจริง ขนาดไก่ มีความสัมพันธ์กับน้ำหนักและอายุ เพียงเล็กน้อย งานวิจัยนี้จึงนำเสนอวิธีการตรวจสอบความสม่ำเสมอของซากไก่ ด้วยวิธีการประมวลผลภาพดิจิทัล โดยงานวิจัยนี้แบ่งออกเป็นสองส่วน ได้แก่ ส่วนแรกนำเสนอวิธีการตัดแบ่งส่วนซากไก่ซึ่งเกิดจากการประมวลผลร่วมกันสามวิธีการ ได้แก่ การใช้แบ่งส่วนภาพด้วยสีการใช้ฟิลเตอร์โครงสร้างส่วนประกอบ และการใช้สัณฐานวิทยาของภาพ โดย งานวิจัยนี้ใช้ 5 ตัวชี้วัด เพื่อเปรียบเทียบประสิทธิภาพของกระบวนการ และงานวิจัยส่วนที่สองเป็นการนำเสนอวิธีการตรวจและสังเกตความสม่ำเสมอของขนาดซากไก่ หลังจากที่ภาพไก่ถูกตัดแยกด้วยกระบวนการแยกภาพซากไก่จากการวิจัยส่วนแรก ซึ่งงานวิจัยนี้ได้ทดสอบวิธีการนำเสอน 4 วิธีการ ซึ่งพบว่า วิธีการที่อยู่บนพื้นฐานของลายเซ็นภาพดิจิทัลทีมีการกำหนด ช่วงขอบเขตการยอมรับ เป็นวิธีการที่เหมาะสมที่สุด สำหรับการตรวจสอบความสม่ำเสมอของภาพซากไก่

สมบัติเชิงหน้าที่ของโปรตีนสกัดเข้มข้นในใบที่ได้จากแหนในประเทศไทย, สุภาภรณ์ กรณีย์

โปรตีนสกัดเข้มข้นในใบ (leaf protein concentrate, LPC) เป็นโปรตีนสำคัญที่ใช้เป็นส่วนผสมของอาหารมังสวิรัติ และอาหารเสริม ทั้งในมนุษย์และสัตว์ โดยส่วนใหญ่ LPC ผลิตจากผักและธัญพืช เช่น ถั่วลิสง มันสำปะหลัง และผักบุ้ง ขณะที่ปริมาณรายงานการผลิตโปรตีนจากพืชน้ำมีน้อยโดยเฉพาะจากแหน (duckweed) แหนเป็นพืชน้ำที่โตเร็วและมีปริมาณไนโตรเจนอินทรีย์สูง ซึ่งงานวิจัยครั้งนี้ศีกษาปริมาณโปรตีนทั้งหมด (total protein content, TPC) ในแหนที่พบในประเทศไทย 4 ชนิด ได้แก่ ไข่น้ำ (Wolffia globosa) แหนเป็ดเล็ก (Lemna minor) แหนเป็ดใหญ่ (Spirodela polyrrhiza) และแหนแดง (Azolla pinnata) ด้วยวิธี Kjeldahl พบว่าไข่น้ำมีปริมาณโปรตีนสูงที่สุด ซึ่งเท่ากับร้อยละ 27.45±0.02 (โดยน้ำหนัก) จึงคัดเลือกมาศึกษาสภาวะที่เหมาะสมในการสกัดโปรตีนเข้มข้นจากไข่น้ำโดยการปรับ pH ระหว่าง 3-6 และอุณหภูมิระหว่าง 37-80 องศาเซลเซียส ซึ่งสภาวะที่เหมาะสมในการผลิตโปรตีนเข้มข้นจากไข่น้ำมากที่สุดที่ pH 4 และอุณหภูมิ 80 องศาเซลเซียส โดยผลิตโปรตีนได้สูงสุดร้อยละ 69.96±0.10 (โดยน้ำหนัก) จากนั้นวิเคราะห์องค์ประกอบทางเคมีของโปรตีนเข้มข้นจากไข่น้ำพบว่ามีปริมาณโปรตีนร้อยละ 69.96 (โดยน้ำหนัก), ไขมันร้อยละ 8.96 (โดยน้ำหนัก), คาร์โบไฮเดรตร้อยละ 8.84 (โดยน้ำหนัก), ความชื้นร้อยละ 5.66 (โดยน้ำหนัก), เส้นใยร้อยละ 4.06 (โดยน้ำหนัก) และเถ้าร้อยละ 2.49 (โดยน้ำหนัก) เมื่อวิเคราะห์โลหะหนักในตัวอย่างด้วยวิธี Air-C2H2 Flame Atomic Absorption Spectrometry พบว่า LPC ที่ผลิตได้มีปริมาณ แมงกานีส 2.37 มิลลิกรัม/ลิตร, เหล็ก 2.29 มิลลิกรัม/ลิตร และสังกะสี 2.16 มิลลิกรัม/ลิตร จากการศึกษาชนิดและปริมาณกรดอะมิโนที่ในตะกอนโปรตีน พบว่ามีปริมาณกรดกลูตามิคสูงที่สุดคือร้อยละ 8.07 …

BACKGROUND: Crohn's disease (CD) is an inflammatory bowel disease (IBD) and has been associated with Mycobacterium avium subspecies paratuberculosis (MAP). MAP has been detected in stool, tissue and blood samples from patients with CD. Gamma interferon (γ-IFN) is an inflammatory cytokine that plays a crucial role in killing intracellular pathogens like MAP, and its receptor (IFNGR1) mutations cause immunodeficiency and severe disseminated mycobacterial infections. The liver is tasked with managing the concentration of various metabolites in the blood, and of particular importance is the uptake of free fatty-acid (FFA), as elevated concentrations of FFA are toxic to cells. FFAs are transported across the cell membrane by CD36 and distributed by LFABP to the endoplasmic reticulum (ER), where they are esterified to glycerol, yielding more chemically inert triglyceride (TAG), which is essential to the process of VLDL assembly. Epstein-Barr Nuclear Antigen 1 (EBNA1), a crucial protein encoded by the Epstein-Barr virus (EBV), plays an important role in the replication and transcriptional regulator of EBV virus latent gene expression. Therefore, it is associated with several diseases especially human malignancies. The previous studies have demonstrated that chalcone derivatives can potentially inhibit the EBV virus. In this study, a series of designed chalcones were in silico screened toward EBNA1 using molecular docking. Oxidized carbon nanospheres (OCSs) and graphene oxide sheets (GOShs) were prepared by oxidation of graphite. Oxidized carbon nanotubes (OCTs) was synthesized from single-walled carbon nanotubes. All three shapes of oxidized carbon nanoparticles (OCNs) were used for investigation of their intracellular trafficking in human embryonic kidney cells (HEK293T), mouse macrophage cells (RAW264.7) and human liver cancer cells (HepG2). The results revealed all three shapes of OCNs were internalized into through HEK293T and RAW264.7 cells without endosomal trapping, including localization of all the three OCNs in HEK293T's lysosome. In this study, isolation, screening, fermentation optimization, and determination of the expression of key enzymes involving in D-lactic acid production were conducted for selection of the novel D-lactic acid isolate with the high yield, productivity, and optical purity. From the screening experiment, the novel isolate, NK26-11T, was obtained. The isolate NK26-11T was a Gram-stain-positive, catalase-positive, facultatively anaerobic, spore-forming, rod-shaped bacterium isolated from soil sample in Thailand. This isolate homofermentatively fermented glucose for D-lactic acid and grew at the wide range of temperature between 20 and 45 °C and the pH of 5-8.5. Brackish water reverse osmosis (BWRO) and seawater reverse osmosis (SWRO) membranes were used in the 2-stage reverse osmosis (RO) unit to recover, pre-purify, and pre-concentrate lactic acid. Calcium lactate (CaLAC), sodium lactate (NaLAC), and ammonium lactate (NH4LAC) were used as model feed solutions. The operating pressure showed a pronounced effect on lactate passage through the first BWRO unit, and the Donnan exclusion effect and hydrogen bonding were responsible for cation rejection. A free radicals can promote denaturing reactions in many cellular components, which create oxidative stress and it results to damage in body tissue. The free radicals can causing many diseases including heart diseases, Alzheimer, inflammation and cancer. This research aimed to investigate the effect of bioactive peptides derived from Synechococcus sp. cultured for 21 days on antioxidant, anti-inflammation and anticancer activities. The Synechococcus sp. protein hydrolysate was prepared by trypsin digest and purified by ultrafiltration with molecular weight cut off membranes of 10, 5 and 3 kDa. The MW <3 kDa fraction showed the highest NO, ABTS and DPPH radical scavenging activities with IC50 values of 34.51±9.8 µg protein/mL, IC50 11.54±0.3 µg protein/mL and IC50 13.63±0.15 µg protein/mL, respectively. The F2 fraction from gel filtration chromatography showed the strongest NO and ABTS radical scavenging activities with IC50 values of 7.68±0.64 µg protein/mL and 9.74±0.2 µg protein/mL, respectively. The F2 was purified by RP-HPLC to yield four fractions. The 30 – 40 min sub-fraction (F2-4) was selected for further analysis by mass spectroscopy. Five isolated peptides with amino acid sequences of AILQSYSAGKTK; 1,265.69 Da, ALNKTHLIQTK; 1,265.74 Da, LLVHAPVK; 875.55 Da, IPDAHPVK; 875.48 Da and VVVLRDGAVQQLGTPR; 1,706.97 Da were identified. The F2-4 had higher DPPH and NO radical scavenging activity compared to the synthetic peptide. Moreover, AILQSYSAGKTK had the highest ABTS radical scavenging activity. Furthermore, the F2 fraction protected oxidation-induced DNA damage in pBR322, pKS and pUC19 cells. F2 fraction was selected to study anti-inflammatory and anticancer properties. Anti-inflammatory effect, F2 fraction showed no cytotoxicity toward RAW264.7 macrophage cells. RT-PCR and qRT-PCR results showed that F2 reduced gene expression of pro-inflammatory cytokines iNOS, TNF-α, COX-1, COX-2 and IL-6. For anticancer activity, F2 fraction showed high anticancer activities in the human colon cancer cells (SW620) according to cytotoxic activity (MTT assay), with IC50 values of 106.58±21.46 µg protein/mL. The F2 fraction activated the apoptotic pathway in SW620 cells after treatment for 24, 48 and 72 hours. The highest activities of caspases 3, 8 and 9 were observed after treatment for 72 hours. These findings suggested that unicellular cyanobacterium Synechococcus sp. may be used to develop for natural anti-inflammation and natural anticancer drugs.

Fifteen compounds including two new anthraquinones (118-119), two naturally occurring new compounds (116-117) and eleven known compounds were successfully isolated from the CH2Cl2 extracts of Dracaena cochinchinensis and Eleutherine americana i.e. dihydrochalcones (5 and 23), pterostilbene (27), homoisoflavanones (15 and 82-84), naphthalenes (85 and 116), pyranonaphthoquinone (86) and anthraquinones (99-100 and 117-119). Melanin is essential for protecting human skin from ultraviolet radiation. However, its overproduction in the basal epithelial layer leads to hyperpigmentary disorders of the skin such as melasma, blemish and age spots. Tyrosinase is one of key enzymes in melanogenesis. This study has evaluated biological activities of isolated compounds from Tinospora baenzigeri stems collecting from two different areas, and from mangrove-derived endophytic fungi isolated from trees inhabiting in Songkhla province. Four new rearranged clerodane-type diterpenes (66-69), one new glycoside (70), and six known compounds (61, 71-75), were extracted from plant obtained from local market in Bangkok. Twelve compounds including a new rearranged clerodane-type diterpene (76), a new rearranged clerodane glycoside (77), five known compounds (44, 78-81), and five compounds counting 61, 66, 70 and 74-75 were obtained from plant collected in Bueng Kan Province.
