Background: Diets low in vegetables are a main contributor to the health burden experienced by Australians living in rural communities. Given the ubiquity of smartphones and access to the Internet, digital interventions may offer an accessible delivery model for a dietary intervention in rural communities. Atlantic County, located off the Jersey Shore, faces the highest level of food insecurity in New Jersey, with a rate of 11.2% as of 2021, surpassing the state's overall rate of 8.8%. This situation contributes to health issues such as hypertension, diabetes, and heart disease.

The objective of this research is to understand and address the persistence of food insecurity in Atlantic County. Community stakeholders and local physicians were interviewed to identify barriers and disparities contributing to food insecurity.

Introduction: The Metropolitan Area Neighborhood Nutrition Alliance (MANNA) provides medically tailored meals (MTMs) to individuals in the Philadelphia area with nutritional risk and chronic illness (cancers, renal disease, heart disease, diabetes, HIV/AIDS). Registered dietitians prescribe 3 or 6 months of MTMs depending on risk severity. This study investigates the impact of MTM prescription length on malnutrition risk. Methods: Demographic, health, and program enrollment data for clients who received ≥2 months of MTMs and completed the intake and follow-up Malnutrition Screening Tool (MST) from 2020-2022 were extracted from client records and entered in REDCap. Growing evidence suggests a significant link between the composition of gut bacteria, dietary choices, and susceptibility to dementia. The growing older adult population has led to increased ageist tendencies among younger generations. Previous research suggests that ageism is associated with cognitive and physical decline among older adults. This mixed-methods research project examined changes in ageist perceptions among graduate student facilitators and undergraduate nutrition ambassadors after participating in a training that included information about healthy aging, addressing ageism, and communicating with older adults. Thiamine deficiency, also known as beriberi, is a nutritional disorder caused by a lack of thiamine (vitamin B₁) in the diet. It can occur in 2 forms: dry beriberi, which affects the nervous system, and wet beriberi, which affects the cardiovascular system. Gastrointestinal beriberi is a subtype that affects the digestive system and can lead to multisystem involvement. Our purpose in this research study was to examine perceptions of food and nutrition educators (FNEs, i.e., Registered Dietitians Nutritionists and Family and Consumer Science teachers) and young adults (ages 18–25) on the status of cooking and food skills among young adults. Using a cross-sectional survey design, FNEs (n = 93) and college-attending young adults (n = 270) in the United States completed electronic surveys. The qualitative and quantitative data were collected and analyzed using a convergent mixed-methods approach.
