International Journal for Business Education

The slow living movement is one that has come to the forefront due to the global economic uncertainties that currently exist. By introducing this concept to business educators, it is hoped that this concept can be integrated into future curriculum. Slow living can bring balance to working life, social life, and personal lives. We are reminded to live mindfully by paying attention to what is going on around us. Through the concept of slow living, there can be positive implications for the business education classroom globally, socially, and personally!

A Virginia native and graduate of Virginia Tech, Peggy H. Lee began her career in restaurant management, but soon switched to school food service. She first worked as a supervisor of twenty-two schools in the Norfolk school system and then became the nutritionist for Virginia Beach Schools. From Virginia Beach she moved to Norfolk as a supervisor and then took the director’s position in Chesapeake. After thirty years of service she retired and now works for the National Dairy Council.

This paper will be in three parts; the first section will examine the current tertiary education situation in Ireland amid the global economic crisis and will review what higher education’s contribution be to help alleviate the crisis. A native of Idaho, Dennis H. Barrett has spent his professional career in food service working in Alaska, Texas, Nevada, and California. After working thirty years as a food service director, he retired from the Dallas, Texas school district.

This paper is an outline proposal for an EdD thesis with the University of Sheffield which has been accepted. The principle aim of this research is to investigate what might an institute of education be in the future through viewing the current changes afoot in the Dublin Institute of Technology (DIT) and the underlying reasons for these changes to take place. She holds a bachelor’s degree in Nutrition in Business from Purdue University, a master’s in Dietetics and Nutrition from Florida International University, an MBA from Nova University, a graduate certificate in Social Marketing from the University of South Florida, and a PhD in Curriculum and Instruction from the University of South Florida.

Renee A. Hanks is a school food service director in New York. A New Jersey native, Hanks grew up in upstate New York. After college in the SUNY system, where she earned a degree in food service management and nutrition, Hanks worked in healthcare, before taking her first job as director of a small school district. She has progressively worked her way through steadily larger districts and is now the director of the South Colonie School District.

Lyman Graham hails from Roswell, New Mexico. After pursuing a career in ranching, as well as the restaurant business, he decided to try his hand a school nutrition. He started out as director in a small farming community and eventually worked his way up to more responsibilities. A firm believer in networking, he has been active in the School Nutrition Association. He is now director of three districts in Roswell, New Mexico, Carlsbad, New Mexico, and Dexter, New Mexico.

Sophie C. Hoover, a Brooklyn native, spent most of her formative years in Puerto Rico. After starting her college education in Puerto Rico she finished her degree in Nutrition and Dietetics at the University of Florida. After working as nutrition director for a nursing home, Sophie has been the Specialist in Food and Nutrition with Anne Arundel County, Maryland schools for twenty-seven years.

From Embedded To Integrated: Digital Information Literacy And New Teaching Models For Academic Librarians, Rob Morrison, Larissa Garcia

This paper describes our experience launching LIBR 200, moving beyond traditional library instruction to integrating digital information literacy into the larger curriculum. By creating a credit course that focuses on digital information literacy, the NLU Library was able to fill a void in the general education curriculum, thus making it possible for LIBR 200 to be included in undergraduate degree programs. Because librarians are faculty and have fostered a positive and collaborative reputation throughout the University, the library faculty role has evolved to include participation in program development and the development and teaching of library credit courses in order to …

Barry Sackin has more than 30 years’ experience in child nutrition programs, including 18 years in program operations, such as school breakfast, school lunch, summer feeding, Head Start, senior feeding, and the commodity program. He is now president of B. Sackin & Associates, a child nutrition consulting business. Introduction: Understanding and assessing behavioral risk factors, particularly among college populations, is challenging for health educators. Similarly, issues affecting mental health remain unclear in terms of how body image evolves year to year in college students. A better understanding of how students perceive their bodies and to what extent it affects behavior is needed. Purpose: This study assessed psychobehavioral aspects of body image perception and discrepancy in college students to better identify risk behaviors. Methods: Two surveys (Body Image Questionnaire and Behavior Assessment Questionnaire) were administered to college freshmen and seniors (N = 170).
