Cheddar cheese ripening creates favorable conditions for desired microbial changes but also allows survival and outgrowth of spores like Clostridium tyrobutyricum and Bacillus licheniformis, leading to late-blowing defects. In the first phase of the study, NSLAB dynamics were evaluated in the presence of spores, where pilot-scale cheeses (110 L) were produced in four treatments: control, T1 (BL), T2 (CT), and T3 (BL+CT), each inoculated at 2.0 Log10 CFU/mL with spores. Results showed that SLAB declined from 8.0 to 0.2 Log10 CFU/g, while NSLAB increased from 2.0 to 8.5 Log10 CFU/g by the third month and remained stable thereafter. Spore counts …

The objectives of the study were to assess the effects of cycling endurance exercise training and sex on cycling exercise mechanical efficiency (ME) and to explore its associations with body composition, glycemic profile, and skeletal muscle characteristics. Subjects were males (n = 371) and females (n = 465) of European (ED) and African descent (AD) of the HERITAGE Family Study. The measurements were repeated after a 20-week controlled endurance exercise program. This study aimed to analyze decomposition rates of plants containing different amounts of lignin. Lignin can be found within cell wall structures in plants and aids in natural rigidity. Opuntia humifusa was chosen to represent plants with high levels of lignin, and Allium schoenoprasum was chosen in contrast because of its significantly lower levels of lignin. Due to these characteristics, A. schoenoprasum is hypothesized to decompose at a quicker rate than O. humifusa. Amyloid fibril formation is a highly heterogeneous process as evidenced by polymorphism in fibril structure. It has been suggested that different polymorphs are associated with different diseases or disease subtypes. Detailed characterization of this heterogeneity is a key to understanding the aggregation mechanism and, possibly, the disease mechanism. In this work, we develop Förster resonance energy transfer (FRET) imaging of amyloid fibril formation in real time and investigate the concentration-dependent heterogeneous fibril formation of amyloid β 42 (Aβ42). The smooth marron (Cherax cainii) (‘marron’) is endemic to freshwater dams and rivers of south-west Western Australia. Marron are managed as a single stock within the South-West Recreational Freshwater Resource and are highly vulnerable to over-exploitation due to the biological characteristics of the species (e.g., low fecundity, localised populations) as well as environmental (e.g., habitat loss, reduction in rainfall) and human (e.g., fishing, land clearing) pressures on freshwater ecosystems.

Per- and polyfluoroalkyl substances (PFAS) are known for their persistence, ubiquity, bioaccumulation in different matrices of the environment and their detrimental effect on human health. In this study, we used EPA 1633 to examine the prevalence of ten PFAS compounds in two freshwater systems and investigated their bioaccumulation pattern across different tissues of grass carp fish (Ctenopharyngodon idella), common carp (Cyprinus carpio), and flathead catfish (Pylodictis olivaris). Among the PFAS compounds analyzed, PFBS exhibited the highest concentration in the freshwater sample, exceeding the U.S. EPA regulatory limit of 4 ng/L for drinking water. These wounds are characterized by prolonged inflammation, microbial colonization, and disrupted tissue regeneration, leading to substantial morbidity and healthcare costs. As neuromuscular performance assessment has become a fundamental component of athlete monitoring, ensuring strong measurement reliability is essential for supporting accurate data-driven decision-making. Thus, the purpose of this study was twofold: (i) to examine the reliability of countermovement vertical jump (CMJ) force-time metrics obtained using a portable force plate system (Hawkin Dynamics) and (ii) to determine whether absolute and relative reliability scores differ between well-trained individuals (i.e., athletes) and those less familiar with CMJ force-plate testing (i.e., non-athletes). Kru ppel-like factor 1 [KLF1; also known as erythroid Kru ppel-like factor (EKLF)] is a C2H2 zinc finger transcription factor that plays a crucial role in all aspects of erythropoiesis. Mutations in KLF1 lead to diverse phenotypes ranging from mild to severe anemias. Individuals with a (CDA) type IV] exhibit impaired erythroid terminal differentiation and increased presence of binucleate erythroblasts. Food system workers; farm laborers, grocery clerks, restaurant staff, and food processors are the backbone of our everyday meals, yet their voices are largely missing from the councils that shape local food policy. Despite being essential to food security and community health, these workers face low wages, poorworking conditions, and limited protections. Food Policy Councils (FPCs), which aim to advance equity and sustainability in food systems, rarely prioritize labor issues. The study, drawing on national survey data and interviews with over 25 FPC leaders, finds that structural constraints, internal conflicts, limited capacity, and weak connections with labor organizations prevent meaningful …

This study investigated how tree species diversity influences the variety of organisms living on or around trees across different habitat types. Field data were collected through random tree selection, measurement of tree diameter, identification of species, and estimation of surrounding ground cover types such as grass, herbaceous plants, woody plants, and leaf litter. Biodiversity associated with each tree was analyzed using the Shannon Diversity Index across several ecosystems, including grassland, woodland, and pond environments. Dusky grouse Dendragapus obscurus are a montane forest grouse species with a paucity of information regarding their temporal and spatial resource use during critical times of high mortality and reproductive output. This lack of vital data may leave dusky grouse at risk of sub-optimal management in many areas of their distribution, especially in the isolated ‘sky island’ mountain ranges of the Great Basin, where high elevation habitats are surrounded by sagebrush and salt desert shrub land flats. The estimation of treatment response heterogeneity (TRH) is increasingly important as medicine moves toward personalized approaches. While various statistical methods have been proposed to quantify TRH in parallel-group trials, the standard deviation of individual responses (SDIR) has gained prominence within physiological research. This method is intended to quantify individual response variation by comparing standard deviations of change scores between intervention and control groups. We acknowledge that SDIR represents an improvement over many other flawed approaches that often involve responder counting. Autonomy, competence, and relatedness are key elements under the self-determination theory (SDT) for student motivation in learning. Stump the Professor (STP) is a low-prep activity designed to model metacognition, normalize the experience of being incorrect, and encourage student participation in undergraduate biology classrooms. By empowering students to generate their own questions, STP promotes autonomy and gives students agency to shape classroom dialog. Observing the instructor verbally reason through uncertainty highlights strategies of problem-solving which model metacognition and competence. Taste concentration is a key determinant of palatability. For example, higher concentrations of sucrose, a sweet taste, are typically preferred to lower ones, whereas the opposite is true for citric acid, a sour taste. Yet taste is not the only determinant of food preference. Flavor arises from the integration of taste and olfactory cues, and repeated exposure to odor-taste combinations can lead odors to acquire the hedonic value of their associated taste. However, the contribution of odor concentration, independent of taste, in guiding consummatory behavior is not well understood.

The Western Rock Lobster (WRL) (Panulirus cygnus) is the most commonly caught Rock Lobster (RL) species in Australia. Catches from the commercial and recreational sectors are required to determine and monitor Total Allowable Commercial Catch (TACC), Total Allowable Recreational Catch (TARC) and the proportion of Allowable Harvest Level (AHL) achieved. The TARC is evaluated annually based on a 5-year average.

Data for the recreational sector are obtained using phone-recall surveys to provide annual estimates of participation, fishing effort and retained catch (by numbers) from recreational fishers who hold a RL licence. Average weight, obtained from boat ramp surveys, are used …

The goal of this study was to introduce the simultaneous use of hydrophobic-hydrophilic proteins bioinks for 3D food printing. Sorghum protein gel (SPG) at 25 % w/w and soy protein isolate gel (SPIG) at 11 % w/w were loaded into separate extruders. The effects of the first printed layer (SPG or SPIG), printing speed (10, 20 mm/s), and nozzle size (0.52, 0.64, 0.72 mm) on printability were evaluated. The textural properties, rheological characteristics, microstructure, crystallinities, and functional groups of the proteins were analyzed. Indian River Lagoon Shorelines

The spatial dataset: UCF_shorelinemodel_IRL_LWL.shp, was created with support from the Indian River Lagoon National Estuaries Program and Florida Sea Grant. These projects cumulatively led to creation of a living shoreline restoration prioritization model and hydrodynamic habitat suitability models for 1,550 km (963 miles) of estuarine shorelines in Indian River Lagoon and Lake Worth Lagoon.

The dataset presented herein includes:

  1. shoreline data from >15,000 transects collected in the field,
  2. shoreline wave climate data created through hydrodynamic modeling and frequency analysis of historic data,

Background: Falls in older adults often occur during unexpected gait termination, when rapid deceleration is required. Age-related declines in strength, proprioception, and coordination impair efficient distal-to-proximal braking, raising fall risk. Variable step lengths, ranging from “normal” steps to larger “big” steps used when hurrying, better reflect real-world walking demands and pose greater mechanical and neuromuscular challenges. This study investigated how age and step length affect muscle synergy complexity and joint coordination during unexpected gait stops.

Accurate monitoring is vital for optimising hydrolysis efficiency, minimising nonspecific proteolysis, ensuring consistent yields, and preserving peptide biofunctionality. While analytical and computational tools are well-established for non-fungal systems, their adaptation to fungal proteases remains exploratory, with no comprehensive evaluation addressing the unique challenges in this field. This review synthesises current knowledge, identifies methodological gaps, and outlines future directions for developing fungi-specific analytical pipelines and computational frameworks for BP discovery.
