Evidence Of Local Gastronomy In Rural Destinations: A Cross-European Study, Michael Vieregge

In 2020, the Coronavirus pandemic led to domestic travel to rural destinations. Local gastronomy is key to tourists' expectations, perceptions, and images of rural destinations' authenticity. Empirical data supporting evidence of local gastronomy in rural communities are lacking. This archival research focused on n=549 Cittaslow and non-Cittaslow towns and cities in 19 European countries. Rural towns offer more local gastronomy than cities, and Cittaslow-certified towns more than non-Cittaslow. All rural towns should focus on expanding their local gastronomy, and Cittaslow cities even more so.

The objective of this study was to examine nutrient claims signage on the purchasing of snacks in corporate foodservice operations. The effectiveness of claims among foodservice operations serving primarily administrative roles (white-collar) were compared with those serving primarily manufacturing roles (blue-collar). An experimental study was conducted through the implementation of six nutrient claims evaluated by a group of registered dietitians. The snack items were conveniently placed near the cash register to “nudge” purchases, and sales of snacks before and after the implementation of claims were examined. This dissertation includes three related essays investigating corporate governance structures, specifically, how firms leverage corporate social responsibility (CSR) related initiatives (providing CSR-linked compensation and establishing a sustainability committee) and the relevant corporate outcomes. This dissertation also examines the relationship between executive compensation and one dimension of CSR, diversity, in boardrooms. The first essay examines the relationship between CSR-linked executive compensation and corporate risk. Results from OLS and firm fixed effects regressions show that CSR-linked compensation reduces both total and idiosyncratic risks. Results also indicate that CSR-linked compensation reduces risk only when risk is well above the optimal level and has …

Existing academic literature consistently points to a changing role for modern fathers in which they take an egalitarian role in the caregiving responsibilities for their children. Despite this, fathers are observed to continue to dominate the realms of full-time working, aligning to more traditional breadwinning mentalities than such trends might suggest, raising questions around inequality. Fathers at work have previously been found to encounter challenges within the workplace when they alter, or consider altering their work patterns due to caregiving responsibilities. The National Collegiate Athletic Association (NCAA) adopted name, image and likeness (NIL) legislation in July 2021. The expectation was for all NCAA student-athletes to have the opportunity to seek compensation for their NIL, but the reality is quite different. International student-athletes are not easily able to benefit from their NIL due to restrictions placed on off-campus work under the terms of their entrance visas to the United States. Purpose: This paper aims to investigate the impact of Shariah-compliant hotel attributes on Muslim travellers’ revisit intention.

Design/methodology/approach: A total of 361 Muslim travellers who have stayed at Shariah-compliant hotels in the previous 12 months were recruited to take part in this research. The hypothesized research model was assessed using the partial least squares (PLS) approach.

Findings: The analysis revealed that Muslim travellers’ revisit intention is dependent on the halal food and beverages and the provision of Shariah-compliant facilities at the hotel, whereas the Shariah-compliant operation and interior design of hotels are not significantly associated with it. Our study examines whether CEOs’ birth order can predict firms’ credit ratings. Consistent with studies that document a positive relationship in the general population between being firstborn and being conservative, our study finds that firms managed by firstborn CEOs tend to have higher credit ratings than those managed by later-born CEOs. Our results are robust to controlling for additional personal CEO traits, such as political identity, and to using a propensity score matching sample. A change analysis supports the causality of the firstborn effect. We suggest that return on assets and free cash flow are possible channels through which firstborn …

This dissertation consists of two major parts. Essay I examines the relationship between the firm’s derivative risk management and its financial constraint. Firms face a wedge between their internal and external financing for their investments. I test whether this wedge reduces the firm’s financial constraint when it hedges using interest rate, foreign currency, and commodity derivatives. Using a difference-in-difference framework around the implementation of Financial Accounting Standard (FAS) 123R, this study shows a strong causal relationship between hedging intensity and the financial constraint. I find that net debt increases for the derivative hedging firms, on the other hand, cash holding …

Despite growing recognition of the importance of the founder’s personal legitimacy for successful venturing, various questions remain with respect to what founder legitimacy is and how it is achieved. My review of the legitimacy literature reveals that founder legitimacy can be conceptualized as both a characteristic and a process, and that the entity signaling the founder’s legitimacy can be the founder, an organization, or even an industry or region.
