Minnesota Cottage Food Industry: Insights From Extension Food Safety Education, Morrine Omolo, Regina Mcgoff, Suzanne Driessen, Katherine Brandt, Joanne Slavin, Michael Schmitt

The cottage food industry has become a significant part of the food supply in Minnesota, most likely as a result of the growing consumer demand for locally produced, minimally processed and value-added foods. Using post-training evaluations, we characterized the cottage food producers in Minnesota and assessed the impact of our food safety course. The results showed that the producers are mostly white women (71%), producing and selling a variety of products. The learners gained knowledge to safely produce and handle homemade food products for direct sale to consumers. Majority (80%) of the learners were satisfied with the course.

In this article, I share insights from research and experience working as a teaching artist and mentor inside and outside traditional institutions. I investigate how relational and contemplative pedagogies promote and sustain authentic relationships of reciprocity. Narrating recent experiments with mentoring practices that emerged from the cultural landscapes of adults engaged in arts learning, the paper highlights new connections discovered through a research model borrowed from intuitive inquiry. Background: Various innovative teaching-learning methods have been introduced in the medical curriculum for a better understanding of the difficult topics. We introduced the 3-dimensional (3D) model-making as an innovative tool for enhanced learning through student engagement among early professional medical graduates. This toolkit is a collaborative effort of ECMC Foundations fellows across four US states (Florida, Kentucky, Nevada, and Tennessee) with experience in postsecondary and secondary CTE teacher education, training, and recruitment. Through this project, fellows will apply lessons learned and best practices to create a digital toolkit of practical and proven strategies for recruitment, training, and retention of quality postsecondary CTE teachers.

This phenomenological study aimed to understand and interpret corporate trainers' perspectives when developing disaster or pandemic-driven training content for remote situations and suggest a baseline response to identified deficits. Using the disaster risk management theory by Kim and Sohn (2018), with specific emphasis on Petak's (1985) and McLoughlin's (1985) framework, data from the participants was collected using semi-structured individual interviews, document analysis, and observations. In this study, a Black scholar in the midst of understanding his neurodivergence and his identity as someone who has been dis/abled reacts to the prodding of white peers by creating a course on decentering whiteness. The scholar then interviews ten of the participants in said class to understand how they came to select such a course and what they might have accomplished in attempting to challenge the structure of whiteness in their institutions. Low retention rates and poor progression have plagued academic ESL students for decades. While these students aspire to eventual matriculation into an academic or vocational program, the vast majority will fall victim to attrition. The time has come for administrators and faculty leaders to reject the status quo and advocate for programmatic changes that have proven, substantive positive impact on student outcomes. This dissertation thesis examines the lived experiences, life stories, and storytelling of five Afro-Caribbean and Latina people, who are all local from the borough of Queens, alumni of New York City’s public schools, and since then, became their local public school teachers, classroom practitioners, and local community teachers. We refer to this specific and unique population of teachers as alumni-community teachers and to these and other similar stories as teacher life stories.

The purpose of this qualitative study was to describe the lived experiences of teachers of color and identify commonalities within the lived experiences of teachers of color employed in predominately White K–12 schools. This study utilized interpretive phenomenological analysis as viewed through the White racial frame lens. There were 15 participants that were included in this research study. Participants were teachers of color with at least 5 years of teaching experience in predominately White K–12 environments. Data collection procedures included confidential virtual, semistructured interviews that included specific information the researcher wanted to explore. However, students who transfer from two- to four-year institutions often experience challenges along the way. Patients scheduling or checking in for medical appointments often share with frontline employees’ details of their stories, including their worries, prior negative experiences, and hopes. These interactions require employees to not only complete their task, but also to be mindfully present, picking up on important social cues and showing appropriate emotional congruence and empathic understanding.
