Defining Deliberate Practice In Supervised Dietetics Education, Kevin D. Haubrick 2017 University of Southern Mississippi

Defining Deliberate Practice In Supervised Dietetics Education, Kevin D. Haubrick

Dissertations

Deliberate practice serves as a potential framework to understand what activities, attributes, and characteristics make an individual an expert in their chosen field or profession. Historically, deliberate practice activities included those that were highly structured with purposeful goals, frequent repetition, and active feedback with immediate remediation. Deliberate practice has never been defined within the context of supervised dietetics education; therefore, the purpose of this research was to develop a valid and reliable instrument to define deliberate practice in supervised dietetics practice, based on the opinions of practitioners and educators in dietetics and allied health professions. Segment one of the research …

Nutrient Content Of Human Breast Milk From Overweight And Normal Weight Caucasian Women Of Northeast Tennessee, Megan R. Kwon

Electronic Theses and Dissertations

Many factors influence the nutrient composition of breast milk (BRM) particularly within the fatty acids composition. In this study BRM between 2-14 weeks of lactation was collected from 44 Caucasian women (24 normal weight (NW, BMI 18.5-24.9kg/m2) and 20 overweight (OW, BMI >25.0kg/m2). BRM was subjected to proximate analysis and participants completed food frequency questionnaires (FFQ) to estimate fruit, vegetable, and fat intake. BMI differed between NW and OW groups, 22.03 vs 33.86kg/m2 (p0.10) were identified for total calories (5,581.8 vs 5562.9cal/g), %fat (39.6 vs 43.9), or %protein (9.8 vs 8.9) for BRM in NW …

Strategies For Increased Lactic Acid Production From Algal Cake Fermentations At Low Ph By Lactobacillus Casei, Tom J. Overbeck 2017 Utah State University

Strategies For Increased Lactic Acid Production From Algal Cake Fermentations At Low Ph By Lactobacillus Casei, Tom J. Overbeck

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

We explored using de-oiled algal biomass (algal cake) as a low-value substrate for production of lactic acid in fermentations with Lactobacillus casei, and strategies for increasing lactic acid production at low pH. L. casei 12A algal cake (AC) fermentations showed carbohydrate and amino acid availability limit growth and lactic acid production. These nutritional requirements were effectively addressed with enzymatic hydrolysis of the AC using α-amylase, cellulase, and pepsin. Producing 0.075 g lactic acid per g AC from AC digested with all three enzymes. We explored heterologous expression of the cellulase gene (celE) from Clostridium thermocellum and the …

Health Benefits Of A Plant-Based Diet, Jenna Jackson 2017 Western Michigan University

Health Benefits Of A Plant-Based Diet, Jenna Jackson

Honors Theses

While the rise and spread of Western culture has created remarkable advances in science, healthcare, and technology, it has also brought about a variety of chronic diseases that never once existed. Much of these ailments can be attributed to the typical Western diet, which places heavy emphasis on meats, dairy, and refined grains, contrasting the typical Eastern or Oriental diet which primarily focuses on fruits, vegetables, fish, and whole grains. This dietary transition has resulted in increased glycemic load, increased levels of unhealthy fats and cholesterol, decreased micronutrient and fiber levels, and skewed acid-base and sodium-potassium ratios. All of these …

Potassium Chloride As A Salt Substitute In Bread, Andrea Noud 2017 Western Michigan University

Potassium Chloride As A Salt Substitute In Bread, Andrea Noud

Honors Theses

Bread is a staple product in the diet of most consumers in America. It is also one of the ”Salty Six”; the top six processed foods containing the most sodium chloride (NaCl) or table salt. Dietary reference intake (DRI) guidelines are established by The Food and Nutrition Board of the Institute of Medicine. Per these values, children ages 9-13 should consume no more than 2.2 g/day of sodium, and men and women ages 14-70 and older should consume no more than 2.3 g/day.Yet the average intake of sodium in America is much higher than the DRI: 3.4 g/day. One potential …

Non-Celiac Gluten Sensitivity Is An Emerging Spectrum Of Gluten Intolerance, Darla O'Dwyer 2017 Stephen F Austin State University

Non-Celiac Gluten Sensitivity Is An Emerging Spectrum Of Gluten Intolerance, Darla O'Dwyer

Symposium on Arts and Research

People following gluten free diets have become increasingly prevalent. Many people indicate that they feel better on a gluten free diet and that their symptoms return after eating gluten. This is occurring in the absence of celiac disease or a wheat allergy. This new clinical entity is called non-celiac gluten sensitivity (NCGS). Volta and colleagues (2014) cite several reasons for an increase in this condition: 1) farming practices have led to an increase in specific wheat variants that contain high amounts of gluten peptides that maybe toxic to susceptible individuals; 2) dough fermentation has significantly been shortened compared to the …

Cyclosporine Exacerbates Ketamine Toxicity In Zebrafish: Mechanistic Studies On Drug–Drug Interaction, Bonnie L. Robinson, Melanie Dumas, Syed F. Ali, Merle G. Paule, Qiang Gu, Jyotshna Kanungo

United States Food and Drug Administration: Publications

Cyclosporine A (CsA) is an immunosuppressive drug commonly used in organ transplant patients to prevent allograft rejections. Ketamine is a pediatric anesthetic that noncompetitively inhibits the calcium-permeable N-methyl-D-aspartic acid receptors. Adverse drug–drug interaction effects between ketamine and CsA have been reported in mammals and humans. However, the mechanism of such drug–drug interaction is unclear. We have previously reported adverse effects of combination drugs, such as verapamil/ketamine and shown the mechanism through intervention by other drugs in zebrafish embryos. Here, we show that ketamine and CsA in combination produce developmental toxicity even leading to lethality in zebrafish larvae …

The Acute Impact Of A High-Fat Load On Pbmcs Among Women: The Impact Of Ethnicity And Weight Status, Regis Pearson

Masters Theses & Specialist Projects

Peripheral blood mononuclear cells (PBMCs) can respond to dietary stimuli modulating the up-regulation of pro-inflammatory cell signaling, which is associated with metabolic disease and has been seen to be elevated in African American (AA) when compared to Caucasian American (CA) women. Little is known about the response of PBMCs to a high fat meal among women and the potential impact of ethnicity and/or weight status on this response. The purpose of this study was to examine PBMC response to consuming a high fat meal and the response to culturing PBMCs in media supplemented with lipid among AA and CA women, …

Nutrition In Medical Education: Where Do We Stand And What Needs To Be Explored?, Rachel Flint, Kathleen Kline, Zhiyong Han, Mark S. Elliott, Natalie Nicolas, Rosalyn Jurjus

GW Research Days 2016 - 2020

Introduction:

Dietary interventions and nutrition care improve patient outcomes and reduce healthcare costs. Despite status as a necessary topic in medical school education, many U.S. medical schools do not adequately prepare future physicians for everyday nutritional challenges in clinical practice. There is immense research behind the necessity of nutrition education but little concerning the methods of implementing this change. The purpose of this work was to review the current innovations of nutrition curriculum in the literature and discuss future directions for our medical school.

Method:

A systematic search of scientific literature databases was performed to examine existing literature about the …

Lactose Intolerance: An Overview Of The Facts And Their Implications, Noelle M. Yeo 2017 University of Nebraska-Lincoln

Lactose Intolerance: An Overview Of The Facts And Their Implications, Noelle M. Yeo

Honors Program: Senior Projects (Public)

Lactose intolerance is often blamed for the symptoms such as bloating, diarrhea, gas, abdominal pain, and nausea, that ail many people. Patients often do not seek proper diagnosis from a physician and create their own treatment plans, severely restricting lactose intake, without professional guidance. Even those who do seek the care of a physician find that diagnosis is complicated by less-than ideal testing and confusion due to the symptoms common to many other conditions. The misconceptions and inability to confirm a diagnosis of lactose intolerance can cause nutrient deficiencies in these patients, as well as begin a pattern of unnecessary …

Sex-Dependent Effects Of Ho-1 Deletion From Adipocytes In Mice, Peter A. Hosick, Mary Frances Weeks, Michael W. Hankins, Kyle H. Moore, David E. Stec 2017 Montclair State University

Department of Exercise Science and Physical Education Scholarship and Creative Works

Induction of heme oxygenase-1 (HO-1) has been demonstrated to decrease body weight and improve insulin sensitivity in several models of obesity in rodents. To further study the role of HO-1 in adipose tissue, we created an adipose-specific HO-1 knockout mouse model. Male and female mice were fed either a control or a high-fat diet for 30 weeks. Body weights were measured weekly and body composition, fasting blood glucose and insulin levels were determined every six weeks. Adipocyte-specific knockout of HO-1 had no significant effect on body weight in mice fed a high-fat diet but increased body weight in female mice …

Anti-Adipogenic Effects And Mechanisms Of Ginsenoside Rg3 In Pre-Adipocytes And Obese Mice, Longyun Zhang, Lijuan Zhang, Xiaoyong Wang, Hongwei Si 2017 Tennessee State University

Anti-Adipogenic Effects And Mechanisms Of Ginsenoside Rg3 In Pre-Adipocytes And Obese Mice, Longyun Zhang, Lijuan Zhang, Xiaoyong Wang, Hongwei Si

Human Sciences Faculty Research

Red or black ginseng has been reported more powerful than white/fresh ginseng in dealing with various diseases/conditions including obesity. The major reason is that heating/steaming, the process of making red or black ginseng, produces large amount of bioactive compounds including ginsenoside Rg3 (Rg3), which are trace in fresh or white ginseng. In the present study, Rg3 was applied both in pre-adipocytes and obese mice to investigate the anti-adipogenic effects and relevant mechanisms. Our results show that Rg3 dose-dependently inhibited cell differentiation both in 3T3-L1 cells (30, 50, and 100 μM) and human primary pre-adipocytes (10, 20, and 30 μM). This …
