Design And Validation Of A Scale For Preschoolers: Measuring Nutrition Knowledge, Beliefs, And Behaviors, Michelle E. Johnson 2017 East Tennessee State University

Design And Validation Of A Scale For Preschoolers: Measuring Nutrition Knowledge, Beliefs, And Behaviors, Michelle E. Johnson

Electronic Theses and Dissertations

The literature indicates a lack of validated scales to measure nutrition knowledge, attitudes and behaviors in preschool-aged children. Reliable and valid assessment tools are critical in the development of nutritional interventions for young children; careful design, including psychometric evaluation of reliability and validity, is the best approach to scale development. Best practice points to an efficient, yet comprehensive look at the constructs of knowledge, attitudes, and behaviors. This multi-phase study included 298 preschool children ages 2-6 years (151 girls, 147 boys; mean age 3.936). A 45-item scale was created, with 4 subscales to measure the nutrition knowledge, attitudes, and behaviors …

The Effects Of A Supermarket Tour On Improvement Of Nutrition Knowledge And Eating Behavior, Elizabeth Hall

Electronic Theses and Dissertations

The purpose of this study was to determine if participation in a supermarket tour improves nutrition knowledge and eating behavior in adult participants. Participants were recruited in communities surrounding Food City stores, a local supermarket. Prior to completing a standardized tour, participants completed a survey to assess nutrition knowledge and eating behavior. This survey was given to participants again three months later. A program evaluation was given one time at the end of the tour. Data analysis revealed no significant findings, other than the behavior-based question: “How many meals or snacks on most days included vegetables”. Vegetable consumption appeared to …

Background

While age and the APOE ε4 allele are major risk factors for Alzheimer’s disease (AD), a small percentage of individuals with these risk factors exhibit AD resilience by living well beyond 75 years of age without any clinical symptoms of cognitive decline.

Methods

We used over 200 “AD resilient” individuals and an innovative, pedigree-based approach to identify genetic variants that segregate with AD resilience. First, we performed linkage analyses in pedigrees with resilient individuals and a statistical excess of AD deaths. Second, we used whole genome sequences to identify candidate SNPs in significant linkage regions. Third, we replicated SNPs …

The 2014 mini Ethiopian Demographic and Health Survey revealed that four out of ten children under five are stunted, nearly one out of ten are wasted, and a quarter are underweight. One of the factors that contributed to the high stunting rate is the shortage of capable providers who are competent to provide nutrition services. The purpose of this study was to assess graduating midwifery and nursing students’ nutrition competence and explore the factors that influence their competence.

Methods: A cross-sectional survey …

The Sensory And Textural Evaluation Of A St. Louis Style Butter Cake Made With Greek Yogurt As A Fat Replacer, Caprisse Johnson

Posters-at-the-Capitol

In modern America, many nutrition-related health issues are on the rise, including diabetes, obesity, and heart disease. Many nutrition professionals link the rise in these three diseases to the Western Diet, which includes a high fat and sugar content within its foods. Due to the increased consumption of this diet high in sugar and fat, obesity, heart disease, and diabetes rates seem to be rising. However, many people who eat this diet and are at risk for these complications, hesitate to change their diet because they feel that healthier alternatives are bland in flavor or have a repugnant taste when …

Socio-Ecological Approaches To Obesity Prevention: A Collection Of Exploratory Studies, Denise Marie Holston

LSU Doctoral Dissertations

ABSTRACT

Community-based, obesity prevention approaches based on the Socio-Ecological model may be effective in addressing factors within rural communities that influence resident’s ability to meet dietary and PA recommendations that will allow the potential reduction of obesity and chronic disease rates among this population. To understand how socio-ecological, community-based approaches to obesity prevention can be implemented by the Louisiana Cooperative Extension Service (LCES) (the Healthy Communities program), three inter-related studies were undertaken.

The objective of the first study was to describe the nutrition and physical activity (PA) environment of rural Tensas Parish, Louisiana. The study used the Reduced-item Nutrition Environment …

Hunger Doesn’T Take A Spring Break: Addressing Childhood Hunger Through Service-Learning, Jessica Isaacs

Purdue Journal of Service-Learning and International Engagement

The rate of food insecurity among Hoosier children is slightly above the national average. For many of these children, school lunches are their primary source of nutrition. During school breaks, these children are at risk of going hungry. The Purdue Nutrition Society partnered with Glen Acres Elementary School in Lafayette, Indiana, a school where, in 2016, 72.6% of students qualified for free or reduced lunches. Through the school, 20 students from low-income families were identified and chosen to receive food care packages over their spring break. These packages were delivered to the students’ homes, and they consisted of a minimum …

Effect Of Nutrition Education On Food And Beverage Choices Of Adolescent Female Dancers, Marie Ann Williams 2017 Eastern Michigan University

Effect Of Nutrition Education On Food And Beverage Choices Of Adolescent Female Dancers, Marie Ann Williams

Master's Theses and Doctoral Dissertations

Lifestyle choices affect the risk of obesity and ill-health among youth. This study determined whether providing nutrition education to adolescent females enrolled in dance classes influenced their beverage and food choices. It was hypothesized that providing six 10-minute nutrition education sessions for three weeks to adolescent dancers would increase their healthy beverage and food choices. Sixteen girls (12-18 years), from two dance studios in Kingsport, Tennessee, completed this pre-test/post-test study. After nutrition education, soda consumption reduced by 7.7%; sugar sweetened beverages (excluding sodas) reduced by 23%; intakes of fruits and vegetables were enhanced by 5.6% and 21%, respectively. Paradoxically, home-cooked …
