Quantitative Assessment Of Roasted Coffee Freshness Over Time Using Multi-Parameter Analysis, Maya Fetzer

Roasted coffee undergoes continuous chemical and physical degradation after roasting, yet industry freshness standards remain empirically defined rather than grounded in measurable parameters. This study developed a multi-parameter framework for quantifying roasted coffee freshness by integrating gas-phase and solid-phase analysis, backed by human sensory evaluation, across three roast levels — light (City+), medium (Full City), and dark (Vienna) — over a four-month storage period. CO2 off-gassing was monitored continuously for 30 day, gas chromatography-mass spectrometry (GC-MS) tracked volatile compound changes in headspace gas, and Fourier transform infrared-diffuse reflectance spectroscopy (FTIR-DRIFTS) quantified oxidation-associated functional group changes, and microindentation assessed bean stiffness. …

Patellofemoral Pain Syndrome (PFPS) is the most prevalent overuse injury in cycling, often linked to altered neuromuscular activation patterns of the quadriceps and hamstrings. While sensory feedback has successfully modified cyclists posture, there is a critical lack of evidence-based interventions targeting the underlying muscle activation imbalances associated with chronic knee pain. The Global Food Safety Initiative (GFSI) is a widely recognized entity. Many third-party certifications, such as Safe Quality Food (SQF), Brand Reputation through Compliance Global Standard (BRCGS), and Food Safety System Certification 22000 (FSSC), benchmarked against GFSI standards. This study compares the Salmonella detection rates in raw chicken products from SQF, BRCGS, FSSC-certified establishments to those from uncertified ones. We performed a probit regression and calculated average marginal effects using testing data from the Food Safety Inspection Service. Overall, products from certified establishments are associated with 3.2 % lower positive rate of Salmonella detection. Certification is associated with a greater …

Restoration of habitat is an important component of wildlife management. Surface coal mining has altered forest cover in the Central Appalachians, and most reclamation activities on previously mined lands result in non-native grasslands or shrub lands. The Forestry Reclamation Approach (FRA), which emphasizes non-native vegetation removal, soil decompaction, planting of native trees and shrubs, and, in some cases, wetland creation represents an alternative to grassland-based reclamation that may promote forest-associated wildlife on legacy surface mines. Collaboration is integral to understand, plan, coordinate, and implement management measures for fisheries that cross international borders. Regional Fishery Management Organizations (RFMOs) are the main arenas for countries to collaborate and make decisions for transboundary fisheries, but these organizations have generally failed to prevent the depletion of some of the world's most valuable fish stocks. It is unclear how the structure and functioning of RFMOs can improve collaborative performance to better manage transboundary fish stocks. APOE exists as three common alleles (APOE2, APOE3, APOE4) that encode their corresponding protein isoforms (apoE2, apoE3, apoE4). Despite differing by only one or two single-amino acid substitutions, each APOE allele confers a distinct AD risk profile with APOE4 increasing risk by 28% and APOE2 decreasing risk by 14% compared to the most commonly expressed APOE3 allele. While traditionally considered “neutral,” APOE3 still accounts for ~36% of AD cases while APOE4 contributes ~57%, indicating that the majority of AD cases would not occur in the absence of the APOE3 and APOE4 alleles. They often develop heart disease at younger ages and sometimes at lower body weights. (Jose, 2024; Patel et al., 2021; Volgman et al., 2018).

Insect gut bacteria are vital contributors to host physiology, yet the broader prevalence and fitness implications of symbiont-mediated detoxification remain poorly understood. This thesis investigates these dynamics across three research chapters. Chapter 1 uses 16S rRNA sequencing to characterize how grasshopper gut microbial communities vary across species, dietary breadths, and gastrointestinal segments. Chapter 2 evaluates the detoxification capacity of over 150 bacterial isolates from diverse herbivores against the plant allelochemicals phenethyl isothiocyanate, rutin, and chlorogenic acid to determine if host dietary specialization predicts microbial metabolic ability. Metabolic Associated Fatty Liver Disease (MAFLD) is characterized by abnormal liver fat accumulation in conjunction with metabolic syndromes. MAFLD affects 33% of individuals worldwide, though little is known about how increased liver fat impacts physiological responses to exercise. This study aimed to analyze the relationship between liver composition and metabolic flexibility during a graded exercise test.  Body composition was analyzed via dual-energy X-ray absorptiometry. The purpose of this study was to determine the extent to which extracellular vesicles (EVs) circulating in blood after exercise training act as an effective mimetic to maintain skeletal muscle mass during unloading and/or accelerate recovery after disuse. Ten healthy males (27.7 ± 7.1 y) were recruited for a 6-week progressive resistance and endurance training program. EVs were isolated from blood before (EVs) or immediately after training (ExerVs). Human health is linked to the health of the environment, a concept referred to as planetary health. As environmental challenges become increasingly complex, single-disciplinary approaches are insufficient to achieve sustainable solutions. This article presents a transdisciplinary framework, termed the "Nurse + Engineer" model, as a novel methodology for addressing complex problems at the nexus of environmental engineering and public health. The principal ethical obligation of the engineering profession, to "hold paramount the health, safety, and welfare of the public," has been challenged for decades. Professor P. Aarne Vesilind identified two primary deficiencies: an anthropocentric bias that values nature only instrumentally and the use of non-mandatory, aspirational language for environmental protection, which resulted in the exclusion of enforceable environmental canons. This paper argues that two recent developments provide a comprehensive response to Vesilind's recommendations for engineering ethics. Background: While blended teaching is approved in Rwandan medical education, the perceived effectiveness of online-only delivery for physiology modules remains unclear. This uncertainty limits its continued use. The present study assessed Rwandan health sciences students’ perceptions of the effectiveness of online teaching for physiology modules.

Bacterial resistance to antibiotics continues to be a global health problem, limiting antibacterial therapy against infective endocarditis caused by Enterococcus faecalis. To overcome increasing resistance, dual beta-lactam therapy has been advocated as an alternative regimen for treatment – the synergistic activity against E. faecalis demonstrated to be effective. Currently, ampicillin plus ceftriaxone is the standard of care, but the practical application of this therapy is limited by ampicillin’s poor stability in solution at room temperature. Overexpression of ATP-binding cassette (ABC) transporters, particularly ABCB1, is a major mechanism of multidrug resistance (MDR) and contributes to chemotherapy failure by reducing intracellular drug accumulation. Umbralisib is a dual inhibitor of phosphoinositide 3-kinase delta (PI3Kδ) and casein kinase 1 epsilon (CK1ε) that was developed for the treatment of hematologic malignancies; however, it was later withdrawn due to safety concerns. In the present study, we found that umbralisib has the potential to reverse ABCB1-mediated MDR. The MTT assay demonstrated that umbralisib significantly sensitized ABCB1-overexpressing KB-C2 and SW620/Ad300 cells, as well as ABCB1-transfected HEK293 cells. Neurological function is closely linked to both longevity and quality of life. While some degree of neurodegeneration occurs naturally with aging, pathological neurodegeneration leads to devastating functional decline. The mechanisms underlying these processes remain incompletely understood; however, neuroinflammation is recognized as a key driver of neuronal dysfunction and death. Emerging evidence indicates that neuroinflammatory cascades can precede and potentiate hallmark features of neurodegenerative diseases, including synaptic loss and cognitive decline observed in Alzheimer’s disease (AD). Urbanization can significantly alter freshwater ecosystems and influence sport fish populations. This study examined differences in largemouth bass Micropterus nigricans catch-per-unit-effort (CPUE) between urban and rural lakes in Minnesota and evaluated temporal changes between 2000–2010 and 2011–2021. Forty lakes (20 urban, 20 rural) were selected using Minnesota Department of Natural Resources fisheries survey data. Lakes were classified using NLCD 2019 land cover data, with ≥10% developed land designated as urban. Nonparametric analyses (Wilcoxon rank-sum and signed-rank tests) were used to assess spatial and temporal differences in CPUE. Brown Bullhead Ameiurus nebulosus, Yellow Bullhead Ameiurus natalis, and Bluegill Lepomis macrochirus are unique in their stark differences. Bullhead are scaleless bottom feeders that can tolerate high pollution and low O2 conditions. In contrast, Bluegill are scaled, aggressive nesters and are less tolerant of high pollutants or low-oxygen conditions. Northern pike Esox lucius are a dominant predatory fish in many aquatic systems. They can have significant impacts on the ecosystems they inhabit and are also a popular game fish among anglers. However, northern pike are a difficult species to age accurately.
