The Sensory And Textural Evaluation Of A St. Louis Style Butter Cake Made With Greek Yogurt As A Fat Replacer, Caprisse Johnson

Scholars Week

In modern America, many nutrition-related health issues are on the rise, including diabetes, obesity, and heart disease. Many nutrition professionals link the rise in these three diseases to the Western Diet, which includes a high fat and sugar content within its foods. Due to the increased consumption of this diet high in sugar and fat, obesity, heart disease, and diabetes rates seem to be rising. However, many people who eat this diet and are at risk for these complications, hesitate to change their diet because they feel that healthier alternatives bland in flavor or have a repugnant taste when compared …

Implications Of The Ketogenic Diet On Metabolic Syndrome, Jarad Blanton 2018 Eastern Illinois University

Implications Of The Ketogenic Diet On Metabolic Syndrome, Jarad Blanton

HS 5900 Project Papers

Metabolic syndrome (MetS) is a condition defined as a clustering of risk factors that is strongly associated with obesity, heart disease, and diabetes (Kahn, Buse, Ferrannini, & Stern, 2005). The prevalence of MetS has reached epidemic levels globally. It is estimated that 20% to 25% of the adult global population has MetS (Alic, 2018). MetS is diagnosed when three of the five risk factors are present. The risk factors are a large waistline (abdominal obesity), high triglyceride level, low HDL cholesterol, high blood pressure, and high fasting blood sugar. The standard and most effective treatment for MetS has been lifestyle …

Exploring The Relationship Among Role Models, Physical Activity And Dietary Behaviors Among Young Adults Enrolled In A Weight Management Trial, Rachel Ingersoll, Meghan Mavredes, Melissa Napolitano

GW Research Days 2016 - 2020

Background. Role models can have a profound impact on an individual’s development and lifelong behaviors. However, there are gaps in research when it comes to the impact of role models among young adults, particularly related to health behaviors. Previous research has primarily focused on youth, leaving a gap of knowledge surrounding the developmental life stage of young adulthood. Little research has been done examining health risk behaviors such as physical inactivity and unhealthy dietary practices. It is important for young adults to develop healthy habits in college, for many habits will follow young adults into their adult lifespan.

Purpose. To …

Coffee Drinking And Leukocyte Telomere Length: A Meta-Analysis, Bella Kotlyar 2018 Yale University

Coffee Drinking And Leukocyte Telomere Length: A Meta-Analysis, Bella Kotlyar

Yale Day of Data

Telomeres are long tandem nucleotide repeats responsible for maintaining chromosomal integrity. They shorten with each cell division, serving as markers for cellular aging and replicative ability, and shorter telomere length has been associated with greater risk of various chronic diseases of aging. There is increasing interest in the relationship between telomere length and lifestyle factors, such as components of the diet, that are associated with age-related chronic diseases, like cancer and diabetes.

There is mounting evidence that coffee, one of the most commonly consumed beverages in the world, has potential protective effects against chronic disease and mortality. Few studies have …

Nutrition, Dietetics, and Food Sciences Faculty Publications

During postmortem metabolism, muscle pH gradually declines to reach an ultimate pH near 5.6 across most meat species. Yet, broiler pectoralis major (P. major) muscle generates meat with high ultimate pH (pH ∼ 5.9). For better understanding of the underlying mechanism responsible for this phenomenon, we evaluated the involvement of breast muscle chilling on the extent of postmortem metabolism. Broiler breast muscles were either subjected to chilling treatment (control) or left at room temperature (RT) for 120 min. P. major muscle from the RT treatment had lower ultimate pH, greater glycogen degradation and lactate accumulation. While these findings suggest that …

A Plant-Based Dietary Intervention Improves Beta-Cell Function And Insulin Resistance In Overweight Adults: A 16-Week Randomized Clinical Trial., Hana Kahleova, Andrea Tura, Martin Hill, Richard Holubkov, Neal D Barnard

Medicine Faculty Publications

The aim of this study was to test the effect of a plant-based dietary intervention on beta-cell function in overweight adults with no history of diabetes. Participants (n = 75) were randomized to follow a low-fat plant-based diet (n = 38) or to make no diet changes (n = 37) for 16 weeks. At baseline and 16 weeks, beta-cell function was quantified with a mathematical model. Using a standard meal test, insulin secretory rate was calculated by C-peptide deconvolution. The Homeostasis Model Assessment (HOMA-IR) index was used to assess insulin resistance while fasting. A marked increase in meal-stimulated insulin secretion …

Objective

Identify determinants of plasma adropin concentrations, a secreted peptide translated from the Energy Homeostasis Associated (ENHO) gene linked to metabolic control and vascular function.

Methods

Associations between plasma adropin concentrations, demographics (sex, age, BMI) and circulating biomarkers of lipid and glucose metabolism were assessed in plasma obtained after an overnight fast in humans. The regulation of adropin expression was then assessed in silico, in cultured human cells, and in animal models.

Results

In humans, plasma adropin concentrations are inversely related to atherogenic LDL-cholesterol (LDL-C) levels in men (n = 349), but not in women (n = …

Proper Nutrition And Its Potential As Alternative Treatment Of Depression, Delaney Passmore 2018 Johnson & Wales University

Proper Nutrition And Its Potential As Alternative Treatment Of Depression, Delaney Passmore

Honors Theses – Charlotte Campus

Within the last two decades, a lot of research has been conducted to determine the factors that cause and prevent depression. This is important because the diagnostic count for mental diseases is rapidly increasing due to the stresses and unhealthy habits of many people. So far, researchers have come up with causes such as life-altering events, genetics, chemical imbalances in the brain, and lack of nutritional requirements. Many argue that all of these factors have something to do with why a person starts experiencing depressive symptoms. During tragic or uncontrollable events, such as a death in the family, it is …

Facilitating Factors And Barriers To Weight Management In Women: Physician Perspectives, Renee E. Walker, Jennifer Kusch, Jennifer T. Fink, David A. Nelson, George Morris Iii, Jessica Skalla, Ron A. Cisler

Journal of Patient-Centered Research and Reviews

Purpose: The complexity of addressing overweight and obesity in women has been an ongoing public health and health care challenge. While the mechanism for addressing overweight and obesity in women remains unclear, it has been speculated that disparities in overweight and obesity by race and gender contribute to the complexity. The purpose of the present study was to examine perceptions of primary care physicians when discussing weight management with their patients.

Methods: We conducted focus group discussions exploring facilitators and barriers to discussing weight management and weight loss among women patients. Participants included 18 family medicine and internal medicine physicians …

Backpacks: A Program For Improving Children’S Readiness To Learn And Family Food Security, Lauri Wright

Showcase of Faculty Scholarly & Creative Activity

An increasing gap has been seen between the government food assistance programs and need. One program filling the deficit is Feeding America’s BackPack Program. The Backpack provides nutritious food to children to eat on the weekends when they may not have access to an adequate amount of food. This study evaluated the impact of the program on children’s food security, readiness to learn, and behavioral and mental health. A mixed methodology was utilized. Results showed improved food security and increased readiness to learn among participants. BackPack may be an effective program for meeting the gap in food assistance.
