Pink And Dude Chefs: Effectiveness Of An After-School Nutrition Knowledge And Culinary Skills Program For Middle School Students To Increase Fruit And Vegetable Consumption, Alyssa S. Vaziri

The rate of overweight and obesity among adolescents aged 12-19 years has more than tripled since 1980, and disproportionately impacts low-income and marginalized populations. Reduction in adolescent obesity rates may result in decreased health risks, decrease healthcare costs, and increased quality of life. Effective intervention methods for adolescent participants have incorporated nutrition knowledge and culinary skill building into afterschool programs. This study examines whether building knowledge, skills, and confidence through a culinary intervention can improve adolescent participants’ choices of healthful foods through increased fruit and vegetable intake.

This study examines the impact large-scale animal agriculture has on the environment. It links the environment and health. The goal is to find protein sources that are sustainable and nutritious in order to replace typical meat and dairy products. A study is proposed to measure the impact of the typical American diet, a vegan diet, an insect-supplemented diet and a diet heavy in seafood.

Assessing food intake is important to estimate nutrient intake and counsel patients regarding their diet patterns and supplement use. The purpose of this study was to revise a validated Block Calcium/Vitamin D Screener to include protein for use in elderly patients with a history of fragility fracture. The Block Calcium/Vitamin D Screener food list was refined by adding protein foods and culling the calcium and vitamin D food items based on 2003-2006 NHANES survey. Abstract

Objective: The purpose of this study was to determine the relationship between iron storage and overall well-being in Division I female collegiate athletes. This was done to determine a cost-effective screening method for iron deficiency.

Design: Retrospective Cohort

Subjects and Settings: 117 Division I female athletes at James Madison University. Subjects were ages 17-22 from different teams (Cross Country, Track & Field, Basketball, Field Hockey, Lacrosse, Volleyball, Golf, Swimming & Diving, Soccer, and Softball). We excluded one subject based on a medical diagnosis.

Obesity prevalence in the United States continues to increase and is associated with health consequences such as type 2 diabetes, hypertension, atherosclerosis, and hyperlipidemia. Among many contributing factors to obesity, fructose may be one of the major reasons as it disrupts the antioxidant system thereby resulting in an accumulation of reactive oxidative species and leading to obese conditions. The enzyme, isocitrate dehydrogenase 2 (IDH2), reduces nicotinamide adenine dinucleotide phosphate from the TCA Cycle, hence might be implicated with not only energy metabolism but also cellular redox homeostasis. Recent data suggests that women are more likely than men to regularly consume a multivitamin, and that physically active individuals are more likely to take a multivitamin than those who live sedentary lifestyles. Background: Unhealthy non-alcoholic drinks for pregnant women include beverages with high caffeine and added sugar. High caffeine intake during pregnancy has been reported to be linked with adverse pregnancy outcomes such as miscarriages and stillbirth. In addition, high sugar-sweetened-beverages (SSBs) intake increases the risk of maternal obesity that is associated with many serious health problems in both mother and the fetus such as gestational diabetes, hypertension, congenital anomalies, macrosomia, childhood obesity and cardiac diseases. The process of partial hydrogenation produces trans fats and the fats that undergo this process are called partially hydrogenated fats (PHF). Clinical studies have shown a strong association between PHF and coronary heart diseases. In 2015 The U.S. Food and Drug Administration removed the Generally recognized as safe or "GRAS" status of PHF. Purpose: Heart failure is a global health concern with high morbidity and mortality rates. Individuals with heart failure commonly experience problems that impact daily life. However, little is known regarding which problems are most significant during the immediate posthospitalization period. The Mediterranean Diet, which is rich in complex carbohydrates and plant-based foods, may be beneficial to athletic performance. To date, no one has examined adherence of collegiate athletes to a Mediterranean Diet. This study compared how closely collegiate, recreational/intramural, and non-athletes in college followed a Mediterranean Diet. Surveys and validated Mediterranean Diet score questionnaires were completed by 933 undergraduates in HLTH 1520: Healthful Living at Georgia Southern University. Participants self-reported following various diets including decreased or increased carbohydrate, increased protein, and increased water intake. Background: Obesity is a complex health issue, which results from the interaction between many determinants: genetics, physical environments, society, economy, and culture. Data indicate that about 19% of American children (2 to 19 years) have obesity, a condition that considerably affects physical and mental health and that usually continues into adulthood.
