Preceptorship Within Accredited Nutrition And Dietetics Programs: A Pragmatic Mixed Methods Study, Angela K. Brekken

The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

Vitamin D is an essential nutrient for the maintenance of skeletal muscle and bone health. The vitamin D receptor (VDR) is present in muscle, as is CYP27B1, the enzyme that hydroxylates 25(OH)D to its active form, 1,25(OH)D. Furthermore, mounting evidence suggests that vitamin D may play an important role during muscle damage and regeneration. Muscle damage is characterized by compromised muscle fiber architecture, disruption of contractile protein integrity, and mitochondrial dysfunction. Muscle regeneration is a complex process that involves restoration of mitochondrial function and activation of satellite cells (SC), the resident skeletal muscle stem cells. The Reserve Officer Training Corps (ROTC) prepares college students for future military service. The ROTC includes a rigorous physical training program. As such, effective nutrition practices are necessary to maintain performance. The purpose of this study was to assess USU Cadets’ nutrition knowledge and practices to inform future research and intervention needs. Cadets were recruited through email and classroom announcements. Participants completed an online survey that gathered demographic, fitness, nutrition knowledge, nutrition behaviors, Intuitive Eating, perceived stress, and food security data. Results indicated that most cadets had a moderate knowledge of nutrition with a deficit in sports nutrition. This study …

Liver regeneration is critical to survival after traumatic injuries, exposure to hepatotoxins, or surgical interventions, yet the underlying signaling and metabolic pathways remain unclear. In this study, we show that hepatocyte-specific loss of the mitochondrial deacetylase SIRT3 drastically impairs regeneration and worsens mitochondrial function after partial hepatectomy. Sirtuins, including SIRT3, require NAD as a cosubstrate. We previously showed that the NAD precursor nicotinamide riboside (NR) promotes liver regeneration, but whether this involves sirtuins has not been tested. Here, we show that despite their NAD dependence and critical roles in regeneration, neither SIRT3 nor its nuclear counterpart SIRT1 is required for …

Research outcome: To determine the relationship between nutrition professionals’ knowledge, consumption, and recommendations of whole grains. Methods: A cross-sectional study was conducted with nutrition professionals (n=480). Participants were recruited via email and social media from October 2020-February 2021. The participants completed a validated 21-question survey about whole grain knowledge, consumption, and recommendations. Analysis: The analyses included descriptive statistics and Pearson correlation tests. Results: Survey respondents included 72.5% Registered Dietitians Nutritionists (RD/RDN) and 27.5% RD in training (e.g. dietetic intern, student). Research Outcomes: The RD Mentorship Program is designed to provide dietetic students (mentee) with the opportunity to gain one-on-one experience with a Registered Dietitian (mentor). This nationwide program evaluates project-based mentorships. Methods: Potential mentors and mentees completed an initial survey that indicated mentor projects and mentee interests. Mentees (n=378) were matched to a mentor (n=264) based on their project preferences and interests. Matches met virtually monthly from September 2020 to April 2021. A mid-program evaluation was sent out in December 2020. Both mental health and eating disorders are increasing health concerns for college students. This study aimed to examine associative links between psychological distress, adverse childhood experiences, food addiction, and weight-related concerns among first semester college students. Freshman students 18 years or older in all majors in a southeastern university were invited to take an online survey. The measures included demographic characteristics, psychological behaviors and eating disorder risks. Pearson’s correlation analysis was used to assess associations. Ninety-two students (79.3% female, 61.5% white) completed the survey. Psychological distress was significantly correlated with higher eating disorder risk (stress r=0.28, anxiety r=0.28, depression r=0.42; …

This study explores trends of sex safe practices in high school students, specifically the differences between white students and students of minority races and ethnicities. Past research and data have shown that condom and contraceptive use has decreased across all races, but more significantly among students of racial and ethnic minorities. The Youth Risk Behavior Survey (YRBS) is part of the Youth Risk Behavior Surveillance System (YRBSS). Data is collected at the national level from designated middle and high schools. Prior work suggests that actual, but not estimated, energy density drives the reinforcing value of food and that energy from fat and carbohydrate can interact to potentiate reward. Here we sought to replicate these findings in an American sample and to determine if the effects are influenced by body mass index (BMI). Thirty participants with healthy weight (HW; BMI 21.92 ± 1.77; M ± SD) and 30 participants with overweight/obesity (OW/OB; BMI 29.42 ± 4.44) rated pictures of common American snacks in 120-kcal portions for liking, familiarity, frequency of consumption, expected satiety, healthiness, energy content, energy density, and price. In response to the COVID-19 pandemic, collaboration among faculty in the Department of Dietetics and Human Nutrition at the University of Kentucky yielded two, four-week virtual experiential learning opportunities with Cooperative Extension for 19 dietetic interns. Remote experiences focused on development of new programming regarding the role of nutrition in the prevention/management of the most prevalent chronic diseases affecting Kentuckians and translating an existing social marketing program that promotes quality family time through preparation of nutritious, affordable home-cooked meals. In low- and middle-income countries, almost three-fourths of women in the labour force lack maternity protection. In the Philippines, current laws do not guarantee paid maternity leave to workers in the informal economy. A non-contributory maternity cash transfer to informal sector workers could be used to promote social equity and economic productivity and could provide health benefits by helping mothers meet their breastfeeding goals. Objective: This quality improvement project was conducted to determine the efficacy of an enteral feeding protocol to improve nutrition supplementation in pediatric burn patients.

Methods: Non-ICU patients with >10% total burn surface area requiring enteral nutrition supplementation were fed within 12 hours of admission or with the first sedated dressing change, whichever took place first. Pre (n = 3) and post (n = 5) implementation of the enteral feeding protocol data were obtained. Data were collected via chart audit and survey.
