Rowan-Virtua Research Day

BACKGROUND: Childhood obesity is defined as a child considered to have obesity when their body mass index falls in the top 5% compared to other children of the same age and gender. Unhealthy eating habits formed during childhood have been associated with diseases such as obesity and diabetes. We aim to examine the relationship between childhood obesity and barriers to optimal nutrition in our local South Jersey community.

METHODS: We conducted a literature review through Google, Google Scholar, and PubMed utilizing the key terms, “low socioeconomic status (SES),” “Childhood obesity in NJ,” “Nutritional Intervention,” and “Health Risks.”

RESULTS: Our study …

Understanding The Impact Of Colloidal Calcium Phosphate On The Ph Variation In Cheddar Cheese During Early Stages Of Aging, Rachel Lindstrom 2025 Utah State University

Understanding The Impact Of Colloidal Calcium Phosphate On The Ph Variation In Cheddar Cheese During Early Stages Of Aging, Rachel Lindstrom

All Graduate Theses and Dissertations, Fall 2023 to Present

The Cheddar cheese industry has recently observed variation in the pH of their cheese during the early stage of storage. This variation may be due to the addition of the faster acid producing thermophilic starter culture Streptococcus thermophilus which was recently introduced into the Cheddar cheese making process. This starter culture may impact the calcium buffering properties of the cheese due to more retention of the insoluble calcium (INSOL Ca) within the cheese. To investigate this problem, we studied how insoluble calcium affects cheeses with pH ranging from 4.8 to 6.6 and found that INSOL Ca was positively correlated with …

Influence Of Physical Properties Of Fat On Product Quality, Shelf-Life And Consumer Acceptance Of Chocolate-Coated Products, Audrey Lidgard 2025 Utah State University

Influence Of Physical Properties Of Fat On Product Quality, Shelf-Life And Consumer Acceptance Of Chocolate-Coated Products, Audrey Lidgard

All Graduate Theses and Dissertations, Fall 2023 to Present

In chocolate-coated products, oil migration in fats can lead to chocolate softening, filling hardening, discoloration, and lower consumer acceptance. This study examined three different fats (soy- palm-, and palm-kernel (PK) based), crystallized under different conditions (cooling rate and use of high intensity ultrasound (HIU)) to examine how the crystallization conditions impact the physical properties of confectionery products. These conditions produced fats with high and low oil binding capacities (OBCs); the ability of crystal networks to entrap liquid oil. Model systems were created to examine measurable quality degradation and consumer acceptance of chocolates placed in contact with the fats; one with …

Objectives: School meals are the healthiest food source for US children, yet stigma around free or reduced-price meals often hinders participation. School Meals for All (SMFA), also known as universal school meals, may improve children’s nutritional status and school social dynamics, but whether these policies effectively alleviate stigma remains unclear. This study examines whether embarrassment about school lunch predicts participation and how SMFA policies relate to stigma across household income levels. Methods: A cross-sectional, natural experiment was conducted in eight states (four with SMFA, four without) during the 2022–2023 school year. Surveys from 1,066 middle and high school students assessed …

Micronutrient Deficiencies In Celiac Disease: Systematic Review, Natalie A. Martinez 2025 California State University, San Bernardino

Micronutrient Deficiencies In Celiac Disease: Systematic Review, Natalie A. Martinez

Electronic Theses, Projects, and Dissertations

Celiac disease (CD) is a chronic autoimmune disease triggered by the ingestion of gluten in genetically susceptible individuals, leading to villous atrophy, nutrient malabsorption, and a range of systemic complications. Although adherence to a strict gluten-free diet (GFD) remains the only effective treatment, growing evidence suggests that the GFD alone may be insufficient in meeting the long-term nutritional and psychosocial needs of adults with CD. This systematic review evaluates the prevalence and persistence of micronutrient deficiencies—including iron, calcium, vitamin D, folate, vitamin B12, magnesium, and zinc—in adult CD populations following a GFD. It also examines the psychological burden associated with …

The Impact Of Lactoferrin And Iron-Enriched Whey On Iron Absorption, Gastrointestinal Symptoms, And Menstrual Health In Women, Mia Dustin

Undergraduate Honors Capstone Projects

Iron is an essential trace mineral involved in oxygen transport, energy metabolism, and cellular function, yet deficiency remains prevalent among women of reproductive age. In the U.S., approximately 20% of women aged 18-45 years fail to meet daily iron requirements due to lack of iron consumption in the diet, menstrual blood loss, or intense exercise, often leading to anemia, fatigue, and cognitive impairment. While ferrous sulfate is a common form of iron supplementation, it frequently causes gastrointestinal discomfort. Researchers have explored lactoferrin, a glycoprotein with immune and iron-binding properties, as an adjunct to traditional supplementation. This study examines the effects …

The Impact Of Social Media On Dietary Choices Among Young Adults, Celeste Martin

Electronic Theses, Projects, and Dissertations

Background and aims: For decades, the field of nutrition has been influenced by advertising, fad diets, and celebrity endorsements, often leading to confusion. Social media has introduced a new level of influence, potentially leading to more misinformation about health and nutrition. Platforms like TikTok, Instagram, and Facebook may serve as a primary source of news and information for young adults, drastically changing how nutrition advice is shared. Research suggests that social media can positively and negatively impact people’s views on health and nutrition, such as a poor relationship with food and a negative body image. This study aimed to …

Impact Of Water Quality On The Nutritional And Phytochemical Properties Of Culinary Herbs, Genesis Arroyo 2025 California State University - San Bernardino

Impact Of Water Quality On The Nutritional And Phytochemical Properties Of Culinary Herbs, Genesis Arroyo

Electronic Theses, Projects, and Dissertations

Water quality significantly affected food safety, especially since contaminated water impacted crop growth and the nutrient composition of foods. Nitrates occur naturally in vegetables. However, when introduced into the food supply through water contamination, excessive levels disrupted the natural physiological processes of vegetables and other agricultural plants. These excessive levels eventually led to nutrient imbalances, decreased phytochemical concentrations, and potential health risks such as the formation of carcinogenic N-nitroso compounds in humans. This study evaluated the effects of nitrates on the nutritional outcomes of food crops, focusing on commonly used culinary herbs. While synthesizing findings from relevant peer-reviewed articles, I …

Evolution And Strengths Of School Lunch Programs In The United States And Japan, Sarah Ritterling 2025 University of Nebraska-Lincoln

Evolution And Strengths Of School Lunch Programs In The United States And Japan, Sarah Ritterling

Honors Program: Senior Projects (Public)

School lunches around the world perform a vital role in children’s nutritional needs and overall health. These nutritional programs provide a chance for children to learn how to create a balanced meal and about the production and serving of food. However, many countries, including the United States and Japan, have taken different approaches to meet these goals, influenced by the needs of children and communities over time. The United States provides support, funding, and nutritional standards through the National School Lunch Program. Japan promotes the Basic Act of Shokuiku (food and nutrition education) within society and outlines goals for schools …

Methods: Food nitrate/nitrite composition …

The Effects Of Daily Beef Consumption On Sleep, Mood, And Wellbeing In Postmenopausal Women, Caroline M. Coughlin 2025 University of Arkansas, Fayetteville

The Effects Of Daily Beef Consumption On Sleep, Mood, And Wellbeing In Postmenopausal Women, Caroline M. Coughlin

Biological Sciences Undergraduate Honors Theses

Menopause is often accompanied by changes in sleep, mood, and overall well-being, partly due to hormonal shifts and loss of muscle mass. Protein intake, especially from nutrient-rich sources like beef, may help address these changes, but research in postmenopausal women remains limited. This study explored how daily beef consumption, as part of a higher-protein diet, affected sleep quality, mood, and well-being over eight weeks. Ten active postmenopausal women were randomly assigned to either a control group (meeting standard protein recommendations) or a treatment group consuming twice that amount, including one serving of lean beef per day. Sleep was measured using …

Relationship Between Nutritional Knowledge And Eating Disorder Risk Levels, Valeria Fernandez 2025 University of Arkansas, Fayetteville

Relationship Between Nutritional Knowledge And Eating Disorder Risk Levels, Valeria Fernandez

Human Nutrition and Hospitality Management Undergraduate Honors Theses

The prevalence of disordered eating is a critical public health concern that often progresses towards the development of a diagnosable eating disorder (ED). This, in turn, has detrimental physical and psychological consequences for individuals. Organizations such as the American Society of Parenteral and Enteral Nutrition (ASPEN) and the Academy of Nutrition and Dietetics (AND) have recognized nutrition education as a crucial component of prevention and recovery. Determining the extent to which nutrition knowledge is related to risk factors for EDs is worth investigating due to its implications for healthcare approaches – especially among adolescent and young adult populations. The goal …
