This study addresses the emerging concept of Industry 5.0, which aims to tackle societal concerns associated with the ongoing digital industrial transformation. However, there is still a lack of consensus on the definition and scope of Industry 5.0, as well as limited understanding of its technological components, design principles, and intended values. This study provides a systematic literature review of blockchain technology in the food industry with a supply chain lens. We identify primary and sub-themes, discuss implications and applications in terms of delivering value and propose literature-informed future research directions. This review uncovered three primary themes: a) Value Creation; b) Supply Chain Digitization; and c) Transformation. It demonstrates that digitalizing food networks with blockchain technology may benefit from increased stakeholder involvement and data visibility to gain competitive advantage. Beyond the theoretical contributions, this research provides a methodological contribution by demonstrating the uses of machine learning techniques to perform systematic literature reviews.

งานวิจัยนี้วิเคราะห์และศึกษาความเป็นไปได้เชิงพาณิชย์ของการพัฒนาเครื่องดื่มโปรตีนที่ผ่านกระบวนการไกลเคชั่นจากพืชรสช็อกโกแลต เนื่องจากปัจจุบันผู้บริโภคหันมาบริโภคเครื่องดื่มโปรตีนจากพืชเพื่อสุขภาพเพิ่มสูงขึ้น ผู้วิจัยจึงพัฒนาผลิตภัณฑ์นี้ด้วยเทคโนโลยีการไกลเคชั่น และประเมินศักยภาพทางการตลาดผ่านการสัมภาษณ์ผู้เชี่ยวชาญ ผู้ผลิต ผู้ว่าจ้างผลิตและผู้บริโภค ในทุกกระบวนการ กลุ่มตัวอย่าง 15 ท่าน ผลการศึกษานำมาใช้ออกแบบกลยุทธ์ทางการตลาดเพื่อให้ผลิตภัณฑ์สามารถพัฒนาเข้าสู่ตลาดได้อย่างมีประสิทธิภาพและได้รับการยอมรับ จากการสัมภาษณ์เชิงลึก ผู้ผลิตได้ยอมรับนวัตกรรมการผลิตนี้ เพื่อนำมาพัฒนาคุณภาพของผลิตภัณฑ์มากยิ่งขึ้น โดยมุ่งเน้นพัฒนาเนื้อสัมผัสของเครื่องดื่มโปรตีนจากพืช และ คุณภาพให้เพิ่มสูงขึ้นมากกว่าในปัจจุบัน เนื้อสัมผัสกลืนง่าย แต่ยังคงมุ่งเน้นรสชาติตอบสนองรสชาติตามที่ผู้บริโภคต้องการ ผู้บริโภคคาดหวังถึงคุณค่าทางโภชนาการที่สูงและเป็นเครื่องดื่มเพื่อสุขภาพอย่างแท้จริง รสชาติและราคาเหมาะสมเพื่อการบริโภคได้อย่างต่อเนื่องสม่ำเสมอ การศึกษาความเป็นไปได้ทางการเงิน โดยการผลิตแบบจ้างผลิต (OEM) การวิเคราะห์ผลตอบแทนทางการเงิน เมื่อจำหน่าย ผลิตภัณฑ์ในราคา 59 บาท คาดการณ์ส่วนแบ่งตลาดที่ 5 % พบว่าเป็นการลงทุนที่คุ้มค่า มีมูลค่า ปัจจุบันสุทธิของธุรกิจ (NPV) เป็นบวก อัตราผลตอบแทนที่แท้จริง (IRR) สูง ระยะเวลาคืนทุน (Payback Period) อยู่ที่ 2.4 ปี ถือว่าเป็นระยะเวลาที่สั้นและเหมาะสมแก่การลงทุน จากการศึกษางานวิจัยนี้ สรุปได้ว่า เครื่องดื่มโปรตีนที่ผ่านกระบวนการไกลเคชั่นจากพืชรสช็อกโกแลต เป็นผลิตภัณฑ์ที่มีศักยภาพได้รับการยอมรับและมีความเป็นไปได้ในการพัฒนาผลิตภัณฑ์เข้าสู่ตลาดเชิงพาณิชย์

สารนิพนธ์นี้ฉบับนี้เป็นการศึกษาความเป็นไปได้เชิงพาณิชย์ของผลิตภัณฑ์น้ำมะม่วงเพื่อสุขภาพโดยใช้เทคโนโลยีเอนไซม์ลดปริมาณน้ำตาลซูโครสและเสริมพรีไบโอติก และศึกษาความต้องการของผู้บริโภคที่ตอบสนองต่อผลิตภัณฑ์ รวมถึงศักยภาพของตลาดน้ำมะม่วงเพื่อสุขภาพ ร่วมกับการวิเคราะห์แนวทางการแข่งขันของอุตสาหกรรมทั้งปัจจัยภายในและภายนอก เพื่อการจัดทำแผนธุรกิจ กลยุทธ์ทางการตลาด การสร้างแบรนด์ และการออกแบบบรรจุภัณฑ์โดยใช้ระเบียบวิธีวิจัยเพื่อทราบถึงพฤติกรรมของผู้บริโภคและการยอมรับในผลิตภัณฑ์ ด้วยวิธีวิจัยเชิงคุณภาพ จากการสัมภาษณ์เชิงลึกจำนวน 20 คน และวิธีวิจัยเชิงปริมาณด้วยการใช้แบบสอบถาม จำนวน 129 คน โดยกลุ่มเป้าหมายคือกลุ่มคนรักสุขภาพและกลุ่มคนที่ควบคุมน้ำหนัก ซึ่งต้องการเครื่องดื่มผลไม้ที่รสชาติอร่อยและมีประโยชน์ต่อสุขภาพในราคาที่ 30 บาท ปริมาณ 250 มิลลิลิตร และราคา 120 บาท ปริมาณ 1,000 มิลลิลิตร และสะดวกต่อการซื้อในช่องทางการจัดจำหน่ายในร้านสะดวกซื้อ ซูเปอร์มาร์เก็ต และช่องทางออนไลน์ ผลการวิจัยพบว่ามีความเป็นไปได้เชิงพาณิชย์ของผลิตภัณฑ์ ทั้งในเรื่องของความพร้อมด้านเทคโนโลยีที่นำมาใช้ในการผลิต และโอกาสทางการตลาดที่มีแนวโน้มเติบโตของผลิตภัณฑ์ จากการศึกษาความเป็นไปได้ทางการเงิน พบว่ามีความสามารถในการทำกำไรในอัตราผลตอบแทนภายใน (IRR) เป็นบวก และมีระยะเวลาคืนทุนภายใน 1.2 ปี ในขณะที่การศึกษาความต้องการทางการตลาดและการยอมรับผลิตภัณฑ์พบว่าผู้บริโภคมีความต้องการผลิตภัณฑ์น้ำมะม่วงลดน้ำตาล เนื่องจากมีความกังวลในเรื่องระดับน้ำตาลในมะม่วงที่อาจมีผลเสียต่อสุขภาพ ซึ่งงานวิจัยนี้มีโอกาสทางด้านการตลาดพัฒนาสู่เชิงพาณิชย์ได้

การศึกษาในครั้งนี้ เกิดจากผู้จัดทำโครงการพบปัญหาในการรายงาน จัดเก็บ และติดตามข้อมูลในรูปแบบปัจจุบัน ผู้จัดทำโครงการจึงได้ศึกษาและพัฒนาต้นแบบกระบวนการ เพื่อช่วยปรับปรุงกระบวนการทำงานให้ดีขึ้น โดยกระบวนการนี้ช่วยลดระยะเวลาและขั้นตอนที่สูญเปล่าได้เป็นอย่างดี จากการศึกษาสามารถกล่าวได้ว่าระบบที่ผู้ศึกษาได้พัฒนาขึ้นเป็นระบบที่เจ้าหน้าที่ผู้ปฏิบัติหน้าที่ในหน่วยงาน มีความสนใจต่อการใช้งานหากได้พัฒนาระบบนี้แล้ว นอกจากนี้ระบบดังกล่าวยังสามารถพัฒนาปรับปรุงให้มีความหลากหลายตามความต้องการของผู้ใช้งานได้อีกด้วย ผู้จัดทำโครงการจึงเห็นความสำคัญและปัญหา จึงได้ออกแบบการศึกษานี้เพื่อพัฒนาต้นแบบของกระบวนการ (Process) โดยการประยุกต์ใช้ระบบอันประกอบไปด้วย Line Official , Line Notify , Application Programing Interface (API), เทคโนโลยีปัญญาประดิษฐ์ (AI), Google Sheet และ Looker Studio เนื่องจากผู้จัดทำโครงการเห็นว่าแพลตฟอร์มไลน์ (Line) เป็นแพลตฟอร์มหลักที่ใช้สื่อสารในองค์กรในปัจจุบัน จึงได้พัฒนาต้นแบบของระบบที่ประยุกต์ใช้กับแพลตฟอร์มที่ใช้อยู่เดิม ซึ่งจะช่วยสนับสนุนการปฏิบัติหน้าที่ของเจ้าหน้าที่ตำรวจที่สามารถใช้งาน เข้าใจ เข้าถึงได้ง่าย และมีประโยชน์ ตามทฤษฎีการยอมรับเทคโนโลยี ในการออกแบบต้นแบบระบบนี้ได้ใช้วิธีการสัมภาษณ์เจ้าหน้าที่ตำรวจจำนวน 10 คน นำมาปรับปรุงและออกแบบจนออกมาเป็นกระบวนการ (Process) ของต้นแบบของระบบ แดชบอร์ด และใช้วิธีตอบแบบสอบถามจากผู้ใช้งานจำนวน 100 คน เพื่อทดสอบการยอมรับเทคโนโลยี และนำข้อเสนอแนะ ไปพัฒนาและปรับปรุงระบบต่อไป จากการวิเคราะห์คุณค่าจากการนำเทคโนโลยีมาใช้ในองค์กร โดยการวิเคราะห์ผลตอบแทนจากการลงทุนพัฒนาระบบใหม่ในงบประมาณ 1,000,000 บาท พบว่าถ้าพัฒนาระบบนี้แล้วทางหน่วยงานจะมีระยะเวลาในการคืนทุนภายในเวลา 9 เดือน

This study focused on three main research objectives: analyzing the methods used to identify deceptive online consumer reviews, evaluating insights provided by multi-method automated approaches based on individual and aggregated review data, and formulating a review interpretation framework for identifying deception. The theoretical framework is based on two critical deception-related models, information manipulation theory and self-presentation theory. The findings confirm the interchangeable characteristics of the various automated text analysis methods in drawing insights about review characteristics and underline their significant complementary aspects. A large body of literature explores the role of context, structure, actors, and outcomes of open innovation (OI), yet pays little attention to the mechanisms underlying these relationships. In this review paper, we synthesize the OI literature using a context-mechanism-outcome approach to identify and classify the various mechanisms observed in empirical OI studies. Our findings demonstrate that the OI literature draws on a wide variety of mechanisms originating from the fields of management, sociology, economics, and psychology. This research claims that dynamic strategies demanded by today’s digital environment exacerbate inconsistency between an organization’s digital transformation efforts and its enterprise architecture (EA) planning process. This phenomenon leads to redundant investments, delayed implementation, and frequent failures in digital transformation projects. In order to investigate this inconsistency, we apply the socioeconomic approach to management (SEAM) theory. We integrate insights from the literature on social movements and institutional entrepreneurship into the strategic niche management (SNM) and multilevel perspective (MLP) frameworks to understand the emergence of Linux, a free/open-source operating system, in a regime dominated by proprietary operating systems such as Unix and Windows NT. Employing a “microhistories” methodology, we document how actors in the free/open-source movement took steps that enabled an alternate technological niche to form, gain momentum and eventually infiltrate the extant regime. ปัจจุบัน SMEs มีบทบาทสำคัญทางเศรษฐกิจ ทั้งในด้านการจ้างงาน การพัฒนานวัตกรรมและการเพิ่มขีดความสามารถในการแข่งขันของประเทศ การศึกษาชิ้นนี้ มุ่งเน้น SMEs ผู้ผลิตเครื่องดื่มชาขนาดย่อมที่พบว่าต้องเผชิญกับอุปสรรคต่างๆ มากมายที่ส่งผลกระทบต่อการทำกำไรและการอยู่รอดของธุรกิจ โดยเฉพาะอย่างยิ่ง ด้านประสิทธิภาพในกระบวนการผลิต และต้นทุนการผลิต การศึกษาครั้งนี้จึงมีวัตถุประสงค์เพื่อพัฒนานวัตกรรมกระบวนการผลิตสู่การจัดจำหน่ายที่มีประสิทธิภาพ ซึ่งเป็นการวิจัยแบบทดลองโดยทำการเก็บข้อมูลเชิงคุณภาพและข้อมูลในกระบวนการผลิตของธุรกิจผู้ผลิตเครื่องดื่มชาพร้อมดื่มที่มีการฆ่าเชื้อเพื่อยืดอายุการเก็บรักษาขนาดย่อมจำนวน 3 บริษัทในพื้นที่กรุงเทพมหานครและปริมณฑลเพื่อนำมาวิเคราะห์ตามแนวคิดลีนและบัญชีต้นทุนการไหลวัสดุและดำเนินการระบุปัญหาด้วยการระดมสมองจากการทำ Kaizen Workshop จากนั้นนำเสนอแนวทางแก้ไขโดยการจัดทำเครื่องมือตามหลักการ Standard Work และเครื่องควบคุมอุณหภูมิไร้สาย จากนั้น ผู้วิจัยดำเนินการทดสอบผลการปรับปรุงกระบวนการโดยพิจารณาการแก้ปัญหา 2 เรื่องคือระยะเวลาการทำงานรวมและต้นทุนการผลิตรวมและต้นทุนของเสียในกระบวนการ ผลการศึกษาพบว่าการทดสอบประสิทธิภาพเครื่องควบคุมอุณหภูมิสามารถควบคุมอุณหภูมิได้ตามเกณฑ์การทดสอบและผลการแก้ไขปัญหาในสายการผลิตทำให้ภายหลังการปรับปรุงสามารถลดระยะเวลากระบวนการผลิตรวมในบริษัท A, B และ C ได้ 21.4%, 21.9% และ 21.8% ตามลำดับและพบว่าสามารถลดต้นทุนของเสียในบริษัท A, B และ C ลงได้ 30.9%, 61.6% และ 34.3% ตามลำดับ จากนั้นนำเสนอนวัตกรรมผลิตภัณฑ์ที่เป็นแพลตฟอร์มสำหรับผู้ประกอบการในการใช้ควบคุมความสูญเสียภายในกระบวนการผลิต โดยผลการทดสอบกับผู้ใช้งานตัวอย่างจำนวน 30 คนซึ่งเป็นผู้ประกอบการ ผู้จัดการและหัวหน้างานในสายการผลิต พบว่านวัตกรรมผลิตภัณฑ์ดังกล่าวเป็นที่ยอมรับและมีความง่ายต่อการใช้งาน
