Smartphone Ecological Momentary Assessment: Adherence, Stress, And Sleep Study, David Massabni

It is known that lack of sleep correlates with more stress throughout the day. In this unique study, we utilize participants smartphones to complete surveys through a hyperlink via text message. The use of smartphones could help because stress and sleep can only be measured at a moment’s notice. A sample of 8 participants were assessed for Pittsburgh Sleep Quality Index (PSQI), Perceived Stress Scale (PSS), College Student’s Stressful Event Checklist (CSSEC) along with their height, weight, and blood pressure at baseline. Cooking Lessons: Oral Recipe Sharing In The Southern Kitchen, Alana Claxton

This study analyzes oral recipe sharing practices as they emerge in Southern cooking. Researcher and participants were immersed in cooking recipes together in a qualitative research method that combined interactive interviewing with sensory ethnography. Findings revealed a category of oral recipe sharing practices that is missing from the literature: cooking lessons. This study identified cooking lessons as a distinct recipe sharing practice and worked to further operationalize and concretize such practices in hopes of spurring further research.

Food Insecurity Awareness, Acknowledgment, And Actions On A University Campus, Heather Adams

Undergraduate Research Conference

The purpose of this pilot study was to understand student awareness of food insecurities. Subjects for the study were students enrolled in a Foundations in Human Sciences course at a university located in East Texas (n=55). Students were asked to complete an online survey concerning knowledge of food insecurities, impacts of budgeting on food buying, previous personal food insecurity, skipped or had less nutritious meals due to the cost, and the food pantry on campus.

Fueled by innovators in cuisine and tangible public excitement, it is an unprecedented time in terms of both quantity and quality for South Floridians to eat and drink. The Miami Craft Brewery Collection effort within the Special Collections hopes to document and celebrate the rise of Craft Brewing in Miami through the collection of brewery documents, advertising ephemera, bottles/labels, actual beer, and oral histories from prominent leaders in the field.

Lithuania hosts a diversity of places that offer consumers a taste of local food, which appear to mirror the recent popularity of local and alternative food initiatives globally. In this paper we show that the proliferation of local foods in the region is not a novel phenomenon, nor is it solely a manifestation of taste preferences or identities associated with food. Drawing on the growing scholarly work on the role of infrastructures in mediating social, economic and political relations, we conceptualize the taste for local food as embedded in broader networks and reproduced through material facilities. Food access is a central target for addressing poor health in low-income communities nationwide. A 2019 study found that the recent closure of a local family grocery store was a major concern for local elected officials and leaders of nonprofit agencies. However, people living in extreme poverty do not view food access as their most important health challenge. Finding safe and affordable housing, navigating the social welfare system, and finding employment are seen as larger concerns.

Climate Change, Agriculture, And Adaptations: Policy Recommendations For Conservation Agriculture, Sydney Abraham, Mel Dollison

Climate and Society

This paper examines the intersection of climate change and agriculture with a focus on possibilities for sustainable agriculture in a warmer world. The authors consider the impacts (both positive and detrimental) of climate change on food production systems before engaging with a variety of adaptive strategies including crop diversification, genetically modified organisms (GMOs), and conservation agriculture (CA). These strategies are then applied within the context of sub-Saharan agricultural policy. Ultimately, the authors suggest that policymakers should support rural agriculture by prioritizing conservation agriculture as a critical piece of both mitigation and adaptation policy.

Fighting food waste fights hunger. It also cleans the planet. Currently, one third of all the food produced in the world—1.3 billion tons of edible food—goes to waste every year. Each ton of food wasted produces 3.8 tons of the world’s greenhouse gas emissions. In America, wasted food produces over 20% of methane gas emissions annually. Recovering all this wasted food could feed the food insecure, could clean the environment, and could even create new market opportunities within the food industry. All this changed with the Celtic Tiger when the Irish public was introduced to Caesar salad, tomato and fennel bread, tapenade and Chardonnay. From 1989 to 1993, Restaurant Patrick Guilbaud was like a lone beacon of consistency in the Irish edition of the Michelin Guide. There is some controversy on the applicability of the summand-based Household Food Security Assessment Score (HFIAS) and Household Dietary Diversity Score (HDDS) as measures of food insecurity in urban areas in the Global South. These measures were primarily designed for measurement in rural communities where food insecurity itself was first identified and is still predominantly conceptualized. The objective of the research reported in this paper is to assess the internal and external validity of the HFIAS and the HDDS in determining food insecurity levels in an urban context, using HCP data for urban households in Windhoek, Namibia.
