Food Assistance May Help Families Prevent Emergency Department Visits For Child Asthma, Colleen Heflin

Population Health Research Brief Series

Childhood asthma is the leading cause of emergency department visits for children under the age of 15 in the U.S. Food insecurity may increase a child’s risk for developing asthma. This research brief shows that higher SNAP benefits are associated with fewer asthma –related emergency department visits.

Aim Undergraduate nutrition and dietetics students need to develop research skills and professional competencies to identify evidence-based nutrition and food studies research. Research skills are essential for student success in dietetic internships, graduate school, and future professional practice as nutrition and dietetics professionals. In a collaborative effort to improve student research skills, teaching faculty, the program director, and the liaison librarian developed a series of research skills one-shot sessions for an accredited undergraduate program in Foods and Nutrition at a public liberal arts college. Background: Food insecurity amongst South Asian Americans is a major public health issue. The South Asian American (SAA) community is the third largest Asian community in the United States. Despite this fact, very few specific studies have been conducted to investigate the food needs and barriers that exist within the SAA community so as to successfully help them improve dietary habits.

Methods: This study utilized a mixed methods convergent parallel design, where both qualitative and quantitative methods were conducted and analyzed separately and compared and contrasted at the end.

This thesis focuses on the adverse health impacts food systems have on Latinx immigrant communities. Marquez looks closely at emergency services programs using the food bank run by the Our Lady of the Pillar in Half Moon Bay, California, and interviewed five Latina immigrants from Mexico and Central America. While the food banks provided these families with fresh produce, the women expressed that it is substandard to the produce in their home countries. As a core part of Asian values, family plays a huge role in developing the individual’s identity. Family strongly contributes to the passing down of traditions and values. The expression of cultural values can be observed through many surface-level interactions such as food and meal rituals. This auto-ethnography explores the link between food and culture, specifically how it serves as a vehicle of communication that passes down traditions and values. However, women are not meeting these rates because they are not receiving enough support from their communities. Societal support is essential to successful breastfeeding rates. OBJECTIVE: The aim of this study was to examine students’ explicit and implicit attitudes toward women breastfeeding in public, to better understand the challenges associated with breastfeeding in public and social situations. It is known that lack of sleep correlates with more stress throughout the day. In this unique study, we utilize participants smartphones to complete surveys through a hyperlink via text message. The use of smartphones could help because stress and sleep can only be measured at a moment’s notice. A sample of 8 participants were assessed for Pittsburgh Sleep Quality Index (PSQI), Perceived Stress Scale (PSS), College Student’s Stressful Event Checklist (CSSEC) along with their height, weight, and blood pressure at baseline. Cooking Lessons: Oral Recipe Sharing In The Southern Kitchen, Alana Claxton

This study analyzes oral recipe sharing practices as they emerge in Southern cooking. Researcher and participants were immersed in cooking recipes together in a qualitative research method that combined interactive interviewing with sensory ethnography. Findings revealed a category of oral recipe sharing practices that is missing from the literature: cooking lessons. This study identified cooking lessons as a distinct recipe sharing practice and worked to further operationalize and concretize such practices in hopes of spurring further research.

Food Insecurity Awareness, Acknowledgment, And Actions On A University Campus, Heather Adams

The purpose of this pilot study was to understand student awareness of food insecurities. Subjects for the study were students enrolled in a Foundations in Human Sciences course at a university located in East Texas (n=55). Students were asked to complete an online survey concerning knowledge of food insecurities, impacts of budgeting on food buying, previous personal food insecurity, skipped or had less nutritious meals due to the cost, and the food pantry on campus.

The Miami Craft Brewery Collection effort within the Special Collections hopes to document and celebrate the rise of Craft Brewing in Miami through the collection of brewery documents, advertising ephemera, bottles/labels, actual beer, and oral histories from prominent leaders in the field.
