Objective: To quantitatively assess perceived coaching confidence of a community coach working with food councils, and to qualitatively determine perceived barriers and facilitators associated with coaching rural food councils.
Design: Two phases were implemented using a mixed methods study design with quantitative (scorecard) and qualitative (key informant interviews) methodologies.
Setting: Six rural, Midwestern states implementing Voices for Food.
Participants: Voices for Food community coaches (n=9) who coached rural food council(s).
Intervention: A component of the broader Voices for Food intervention.

Food security is a global issue. As food insecurity increases, it is continually important to find solutions. Food insecurity in the United States in children is visible is partially addressed via school programs, like the National School Lunch Program (NSLP) and School Breakfast Program (SBP). This project explores food inequity in the Alternative High School in Waterville, Maine, which participates in the NSLP and SBP to reduce food insecurity. Confined animal feeding operations (CAFOs) are highly concentrated feedlots that raise large numbers of livestock with an emphasis on efficiency and maximizing output. Hog and dairy feedlots in Minnesota are shrinking in number, yet growing in size. In hand with the rise of CAFOs, water scarcity is a growing concern as the effects of climate change worsen and the human population increases. The purpose of the study was to evaluate the effectiveness of using a video model, graduated exposure (i.e., touch, smell, try, eat), and positive reinforcement to first increase food exploration, and then increase consumption of non-preferred foods in young children that exhibit food selectivity in a school setting. A multiple probe design across behaviors replicated across participants was used to evaluate the effectiveness of a treatment package. The treatment package consisted of a video model of each target behavior (touch, smell, try, eat) and positive reinforcement which included preferred foods and materials. In the main study of the project, intervention messages that link household FEW consumption to equivalent climate consequences are pushed to the households. The goal of the FEWCON study is to determine potential intervention messages that influence household FEW consumption behavior.

Seeds that Feed (STF) is a mobile food pantry located in Fayetteville, Arkansas. STF receives produce from local farmers to distribute to residents in low-income housing sites throughout Northwest Arkansas. According to Feeding America, food insecurity affected 14.3% Washington County, Arkansas’ population in 2016. In her paper ‘A Cultural Field in the Making: Gastronomy in 19th-Century France’, Priscilla Parkhurst Ferguson argues that the field of gastronomy came into existence in the middle of the nineteenth century in France. This field of gastronomy was constructed from two elements, the significance that gastronomy, defined at the time as a structured set of culinary practices, had attained in France by the nineteenth century, but also, the contribution of writers of culinary discourse who wrote about this gastronomy. This thesis details the history of Claremont Market Shares, a Community Sourced Agriculture (CSA) project based out of Claremont, California. By using this project as a jumping off point for discussing local food networks, buzzwords such as "organic" and "local" are analyzed and re-defined. I argue for a people-based food network model over the currently popular 'place-based' that prioritizes producer-consumer relationships. The CSA functions as a sustainable model of this ideology.
