In 2017, Mozambique ranked as one of the least developed countries in the world by measures of health, education, and income. With a minimal annual income, purchasing adequate food to meet recommended levels of nutrients for a healthy diet is difficult, leaving 40% of the country undernourished. This study analyzed what foods are available during the dry months (hungry season) of May through October in the Nampula province of Mozambique to determine if it is possible to meet recommended levels of nutrients from purchasing and growing food. After centuries of colonization, the geographies and social relations of New Orleans are incredibly unequal. While many in the city were aware of this fact, the destruction brought on by Hurricane Katrina in 2005 laid bare all the problems built into the city’s environment and culture.

New Orleanians are subject to neocolonial power structures, and creating a more localized and democratic food system is a method in which we seek to subvert these systems. An analysis of the history of Puerto Rican cuisine from first contact between Indigenous Taínos and Spanish explorers to present day Chicago-Puerto Rican cuisine. This thesis will examine the development of Puerto Rican national cuisine as part of growing nationalism in the late nineteenth century and again in the early twentieth century. As Puerto Rican migrants settle in Chicago, they bring their cuisine with them and Puerto Rican national cuisine changes in their new context to become Chicago-Puerto Rican cuisine. Food-related artworks are as crucial to understanding culture as other mediums in art like painting, installation, sculpture, and drawings. From Greek and Roman mosaics, Egyptian banquet scenes, to Renaissance frescoes and Flemish still-life paintings, the depiction of food and meals has had multiple meanings. Food as a medium in Western contemporary art was introduced in the 1930s by the Italian Futurists’ banquets, which celebrated modernity and technology underlying social and political commentary. It continued throughout the 1960s with performance art, conceptual art, and happenings, and in the 1970s with the Fluxus movement’s exploration of the boundaries between art and life. …

This interdisciplinary thesis explores the foodways of six Syrian migrant families, both immigrants and refugees, in California and the role that culinary customs play in their homing process. The homing process is the dynamic way in which people create home according to their life circumstances: food, eating, and culinary customs after migration in this case. Home is not only the place where people live, but also, where they come from and how they feel comfortable; home is both a physical space and an abstract concept. RPJMN 2015–2019 mandates universal access of drinking water in 2019. This study analyzes the policy using panel data regression. Random Effect Model (REM ) shows funding, per capita Gross Regional Domestic Product (GRDP ), and population density explain the water coverage of 23.57%, while the rest are explained by variables outside the model. Gross Regional Domestic Product (PDRB) per capita has the biggest impact on coverage, followed by Population Density. On funding, central government’s budget significantly has the highest impact, followed by local government’s budget (APBD), while others aren’t significant. Over the past four years the Food Justice Lab, now housed within the Center for Resilient Communities at West Virginia University, hosted a series of food access planning workshops across the state of West Virginia. Mobilizing more than 200 participants, the Nourishing Networks workshop training program was designed to build grassroots capacity for food system change. Eighty-percent of workshop participants were women and dialogues recorded at these events revealed how women are disproportionately impacted by food insecurity and disproportionately labor to repair a broken food system. Substance use disorder (SUD) is a prevalent problem in the United States, with 19.7 million Americans aged 12 and older battling an SUD in 2017. Multiple factors influence the risk that someone will develop an SUD, including family history, childhood trauma, community factors, and poverty. West Virginia has the highest rate of overdose deaths in the nation, and individuals in WV are at high risk of SUD due to the aforementioned risk factors. There are a variety of treatment options available to someone with an SUD. These include outpatient or inpatient treatment, detoxification, therapeutic communities, and collegiate recovery programs. Objectives: Fruits and vegetables (FV) play an important role in people’s health. The current study aimed analyzed if specific colors of FV are associated with type 2 diabetes mellitus (DM) risk in the United States (US) Hispanic/Latino population.

Methods: This study used participants from the Hispanic Community Health Study/Study of Latinos (HCHS/SOL). It is a multi-center, prospective cohort study with 5,740 self-identified Hispanic/Latino individuals from 2008-2011. Data collected include anthropometrics, oral glucose tolerance test (OGTT), dietary intake, medical history, physical activity, and sociodemographic information. FV are categorized into five color groups: green, white, yellow/orange, red/purple, and uncategorized.

The purpose of this research is to examine how American dairy companies employ language and imagery in brand communications (marketing, advertising, and public relations) to persuade consumers regarding farm animal welfare (FAW) conditions on supplier farms, and to examine how consumers respond in instances in which conditions on supplier farms are shown to be counter to what is depicted in brand communications. My research, conducted from September through November of 2017, showed that the children preferred more processed foods and starches instead of healthier options such as fruits and vegetables, even when healthy options were available. According to the parents/caregivers surveyed, their children prefer to eat processed American meals. Parents/caregivers desired for their children to eat a variety of different foods including fruit, vegetables, proteins, and traditional Hispanic food. This study acknowledges that healthy meal options are available at schools, but there needs to be more research on how to best encourage students to take advantage of these nutritious choices in order …

We analyze the success of healthy corner store initiatives within the Saint Louis area. We use ARCGIS to map and geospatial analysis understand areas of demand within Saint Louis and food deserts to determine the level of competition between successful healthy corner stores and potential alternatives. We determine that based on the concentration of alternatives that healthy corner stores in Saint Louis are insufficient and other alternative policies should be used to address food insecurity include stricter standards for EBT retailers.
