Rice kernels with internal fractures of the endosperm, fissures, tend to break during milling, leading to head rice yield (HRY) reductions. Although the root is widely consumed, sweetpotato leaves (SPL) are often discarded and are only consumed in a few countries. In the United States, SPL consumption is limited to private gardens, particularly in the Southeastern United States. Not only are SPL a good source of nutrients such as vitamins and minerals, but they also contain polyphenol compounds including the caffeoylquinic acid derivatives and carotenoids such as lutein. Several studies have shown the polyphenol contents and antioxidant capacities of SPL, which vary based on year and variety, while few studies have shown anti-colon cancer effects of SPL. In response to the limitations of socialism and capitalism in meeting basic needs, this article explores the alternative version of modernity offered in post-Soviet Ukraine and its agriculture. Tracing a century of fundamental transformations through the story of milk, it finds a history that troubles universalized framings of indigeneity and colonialism. This article argues that under socialism milk became a product of collectivized effort and a reservoir of household resilience; and then, with post-Soviet disintegration of some forms of collective life and emergence of others, that milk has come to delineate spheres of both collective action and individual striving. Market Trends In Food Consumption Expenditures Away From Home Prior To The Covid-19 Pandemic, Rebecca Weir

U.S. food consumption expenditures away from home increased from 19 percent of total food expenditures in 1955 to 48 percent in 2015. Simultaneously, female participation in the labor force grew by 52.7 million women from 35 to 57 percent, signifying increased opportunity cost for women to prepare meals at home. This research uses an ordinary least squares regression to examine socioeconomic factors influencing the rise in U.S. food consumption expenditures away from home in 2018. Results inform food production and service industries’ marketing strategies, and set the stage for whether a new pattern emerges in response to the COVID-19 pandemic.

Poppy Cannon was a food writer whose prominence was most felt in post-World War II America. Within the pages of her books and syndicated food columns, she positioned the use of newly available processed foods as uniquely modern. Alternative food practices, including farmers markets and CSAs, are often inaccessible to lowincome families. Subsidized CSAs and fruit and vegetable prescription programs have the potential to decrease food insecurity, increase fresh fruit and vegetable consumption, and generate better health outcomes. However, several challenges can limit logistics of distribution and an inability to cook from scratch due to a lack of kitchen infrastructure, time, or skills. The purpose of this exploratory research was to study commercial food environments around high schools in the Portland metropolitan area to explore the question: How do the economic, geographic, and racial demographics of public high schools in the Portland metropolitan area affect the prevalence and make-up of obesogenic commercial food environments surrounding these schools?

Methods

Commercial food environments within a 1 km radius of 35 public high schools in the Portland metropolitan area were surveyed. ABSTRACT This exploratory study aims to explore the unknown needs among the unaccompanied youth population within a small urban community in West Texas. This cross-sectional study surveyed a convenience sample of 10 unaccompanied youth attending school within an independent school district. Data were collected using a social worker’s case load during the spring semester of 2020, during the COVID-19 global pandemic. Findings showed a certain level of need within this community, such as emergency shelters and further research on food insecurity for this population.
