This pilot study set out to assess food consumption measures within the Charleston FoodRx program. Assessments made through this investigation aim to improve the Charleston program as well as provide suggestions for future programs. Charleston FoodRx provides enrolled households with fruits and vegetables in a supply intended to last for two weeks. These goals combine social and pharmaceutical science, by addressing barriers in food environment and insecurity, nutritional health, and preventative treatment. This study aims to evaluate the nutritional impact the COVID-19 pandemic has had on children within the U.S. by assessing how children’s nutritional patterns have changed due to the COVID-19 pandemic, determining how these changes are impacted by participation in school federal nutrition assistance programs, and exploring additional food-related barriers the COVID-19 pandemic has created for families. A cross-sectional survey of American parents was used to evaluate changes to their children’s nutritional patterns. Data was collected through an electronic survey administered through the Qualtrics platform. At Whittaker Environmental Research Station, the first iteration of the Ursinus Food Forest was planted in 2019. The Ursinus Food Forest includes over 15 species of edible species and embraces lessons in urban agriculture, urban forestry, and agroforestry. The site has now been planted for over a year, and is monitored by Dr. Patrick Hurley, student researchers, and Ursinus facilities. There are two separate student research teams involved with the food forest, one focusing on stewardship of the site and the other focusing on outreach for the site. The purpose of this pragmatic mixed-methods study was to identify the factors that impact a nutrition professional’s preceptorship decision and potential solutions to combat preceptor shortages within accredited nutrition and dietetics programs. Homan’s social exchange theory provided the theoretical framework that if perceived costs of preceptorship outweigh the perceived benefits, then the activity will cease.

Phase one of the study included an online mixed-methods questionnaire. Phase two included a qualitative focus group and interview with self-identified volunteers from phase one. Quantitative analysis through SPSS included descriptive statistics (means and standard deviations) and inferential statistics (one-way ANOVA). Qualitative data for both …

Everyday people all over the world watch food media. These engagements happen through multiple media outlets -- both new and old -- such as documentaries, streaming platforms, and television. Through these outlets, viewers can immerse themselves in a group’s culinary culture from the comforts of their residences. The coronavirus (COVID-19) pandemic impacted socio-economic stability and food systems in the U.S. and worldwide. To better understand food access challenges and needs of those significantly impacted by the pandemic, an online survey was distributed in the San Francisco Bay Area from August to November of 2020. A total of 726 participants completed the survey who were recruited through paid Facebook ads and community partners outreach. This report features key results from the survey regarding changes in food security rates, food access challenges, and coping strategies used during the pandemic. In the U.S.A., the idea of eating insects is generally unappealing. This research took a methodical approach to understanding U.S. consumers perceptions of insects as food- specifically, products made with cricket powder. Craft cider-makers produce less than 1% of Irish cider which is a significantly smaller percentage than craft producers in other beverage markets. This study contextualises Irish cider’s importance by exploring its rich history in Gaelic and Georgian Ireland. It then examines how that importance is not reflected in today’s market and posits that introducing a new systematic approach to tasting will enable cider to be viewed beyond what many see as a cheap, simple summer drink.
