Online crowdfunding can help address the perennial financial shortfalls in environmental conservation and management. Although many online crowdfunding campaigns fail to collect any funds due to not achieving their targets, little is known about what drives success. To address this knowledge gap, we applied a mixed-methods approach to data from 473 successful and failed campaigns hosted on the online crowdfunding platform Readyfor. We found that fundraising performance varied by topic, with campaigns on pet animal management outperforming those focussed on landscape management and sustainable use. This study empirically tests the relative importance that U.S. consumers place on immediate and long-term food and non-food risks. We use a best–worst survey method to elicit relative rankings and weights for each risk in terms of its perceived cost and likelihood. Immediate food risks are perceived to be more costly but less likely than long-term food risks. Immediate non-food risks are perceived to be both more costly and likely than long-term non-food risks. While the food environment has been implicated in diet-related health disparities, individuals’ ability to shape the food environment by limiting attention to a subset of products has not been studied. We examine the relationship between BMI category and consideration set—the products the individual considers before making a final choice—in an online hypothetical shopping experiment. Specifically, we focus on the healthiness of the consideration set the individual selected. Secondly, we examined the interaction of a health prompt (versus a no-prompt control) with BMI category on the healthiness of the consideration set. For many years, food was seen as too quotidian and belonging to the domestic sphere, and therefore to women, which excluded it from any serious study or consideration in academia. This chapter tracks the evolution of gastronomy and food studies in Ireland. It charts the development of gastronomy as a cultural field, originally in France, to its emergence as an academic discipline with a particular Irish inflection. It details the progress that food history and culinary education have made in Ireland, suggesting that a new liberal / vocational model of culinary education, which commenced in 1999, has helped transform the …

Food studies and Irish Studies stem from the same ‘studies’ phenomena and share many similarities in their journeys from the margins to becoming established academic disciplines. A common feature of the new academic studies movement, whether French, gender, postcolonial, cinematic, African, Irish or food is their interdisciplinary or transdisciplinary nature. They become more than any one discipline and scholars within these new fields continuously investigate from various angles, often adopting ‘self-reflexivity’ as an approach. In 2018 over a period of five months researchers from National Oceanographic and Atmospheric Administration’s (NOAA) Southeast Fisheries Science Center (SEFSC) conducted a study with fishermen and local business owners who participate in the South Florida Yellowtail snapper fishery. Fishermen were asked about changes in their targeting strategies over the last several decades; and they perceive these changes to have altered the health and the biology of the snapper species. Customers visit restaurants for varying reasons ranging from utilitarian – to satisfy hunger – to hedonistic – displaying cultural capital (Bourdieu, 1984) more recently theorized as culinary capital (Naccarato & Lebesco, 2012). Restaurants are even more significant in the new ‘experience economy’ (Pine & Gilmore, 1998) where lunch or dinner are conceptualized as ‘meal experiences.’ There is widespread acceptance of the pivotal role (about 33% of tourist spend) that food now plays in the tourism product of any country (Quigley et al., 2019).

The prevalence of obesity is greater in rural communities, and current health promotion interventions have not shown broad positive impacts on dietary patterns in these areas. Focusing community-based efforts on unconventional food retailers is a unique avenue to encourage healthier food choices in rural populations. This study used shelf-wobblers to market healthier snack and beverage items at convenience stores (n=5) in a rural Kentucky county. This thesis concerns the injustices present in industrial animal agriculture in the United States, domestic violence, and their disproportionate impact on marginalized communities. Despite the work of social movements centered around domestic violence and the slaughterhouse, the state of both continues to worsen, particularly for communities of color. My research seeks to uncover what factors preclude the efficacy of these movements. The Expanded Food and Nutrition Education Program (EFNEP) is among the major nutrition education programs funded by the United States Department of Agriculture (USDA) with the aim of reducing food insecurity among low-income families. The program reaches about 70,000 adults and youth of low-income families in the US, District of Columbia, and six U.S. territories. Prior studies have used self-reported data, which possesses measurement errors, to estimate the benefits of the program. This can lead to underestimation or overestimation of results. Grocery sales taxes represent a stable tax revenue stream for state and municipal government, but there is rare empirical evidence suggesting grocery taxes may adversely affect health. In addition, the how governments set grocery sales taxes is still unclear. Therefore, based on a novel national dataset of annual county and state-level grocery taxes from 2009 through 2016, the following three essays in the dissertation investigate the health impacts of grocery sales taxes and the causes of grocery sales taxes in a framework of tax competition.

Understanding food choice is critical to be able to address the rise in obesity rates around the globe. In this paper, we examine the relationship between measured (BMI, using self-reported height and weight) and perceived weight status with the number of calories ordered in a controlled online food choice exercise. A total of 1044 participants completed an online food choice exercise in which they selected ingredients for a sandwich from five categories: meat/protein, cheese, spread/dressing, bread, and vegetables. Investigations of how past human societies managed during times of major climate change can inform our understanding of potential human responses to ongoing environmental change. In this study, we evaluate the impact of environmental variation on human communities over the last four millennia in the southern Lake Titicaca basin of the Andes, known as Lake Wiñaymarka. Refined paleoenvironmental reconstructions from new diatom-based reconstructions of lake level together with archaeological evidence of animal and plant resource use from sites on the Taraco Peninsula, Bolivia, reveal frequent climate and lake-level changes within major cultural phases.
