Nutritional Knowledge And Behaviors Of Undergraduate Students, Victoria Inghram 2019 University of Mississippi

Nutritional Knowledge And Behaviors Of Undergraduate Students, Victoria Inghram

Honors Theses

Poor dietary behavior can lead to various chronic health conditions, such as heart disease and obesity. Because dietary intake takes time to impact health, observing diet knowledge in college students can be beneficial. This study sought to measure whether greater nutritional knowledge would translate to a healthier dietary intake. Nutritional knowledge and behavior were measured and then compared in 257 students in two different undergraduate classes - an introductory nutrition course and a standard biology course - which was the control group. Each class was given the same survey at the beginning and end of the fall semester. Results indicated …

How To Be Ssb-Free: Assessing The Attitudes And Readiness For A Sugar Sweetened Beverage-Free Healthcare Center In The Bronx, Ny, P. Christopher Palmedo, Lauren M. Gordon 2019 CUNY School of Public Health

How To Be Ssb-Free: Assessing The Attitudes And Readiness For A Sugar Sweetened Beverage-Free Healthcare Center In The Bronx, Ny, P. Christopher Palmedo, Lauren M. Gordon

Publications and Research

In recent years, communities and institutions have sought new interventions intended to reduce sugar sweetened beverage (SSB) consumption among children. Among these interventions are “SSB-free zones,” where such beverages are not permitted to be consumed on the premises. Insufficient knowledge still exists, however, about the readiness for such restrictive SSB policies within health care institutions. Understanding attitudes toward SSB consumption among adults is necessary to guide an institution-wide policy, where staff and patients serve as role models for parents and their children. We conducted focus groups with health center patients and staff to determine perceptions surrounding health and SSB consumption …

Typical Diet Quality In New Zealand Compared To Other Westernized Countries With An Emphasis On Chronic Disease, Emily Kollar

Honors Projects

The diet quality was analyzed for people living in New Zealand and people living in other Westernized Countries (United States, Canada, Western Europe) based on the dietary guidelines. Diet quality was analyzed by looking at consumption of food groups such as fruits, vegetables, meat, and seafood as well as nutrients such as saturated/trans/unsaturated fat, sodium, and added sugars. These nutrients have been linked to certain health outcomes and chronic disease; therefore, the prevalence of chronic disease was researched to determine if there was a correlation between New Zealand's diet and their chronic disease rates in comparison to other Westernized countries.

Rising Rural Body-Mass Index Is The Main Driver Of The Global Obesity Epidemic In Adults, Con Burns, Tara Coppinger, Janette Walton, Et Al

Publications

Body-mass index (BMI) has increased steadily in most countries in parallel with a rise in the proportion of the population who live in cities1,2. This has led to a widely reported view that urbanization is one of the most important drivers of the global rise in obesity3,4,5,6. Here we use 2,009 population-based studies, with measurements of height and weight in more than 112 million adults, to report national, regional and global trends in mean BMI segregated by place of residence (a rural or urban area) from 1985 to …

Inducing Incentive Sensitization Of Exercise Reinforcement Among Adults Who Do Not Regularly Exercise—A Randomized Controlled Trial, Kyle D. Flack, Kelsey Elise Ufholz, Luann Johnson, James N. Roemmich

Dietetics and Human Nutrition Faculty Publications

Background

Increasing exercise reinforcement, or decreasing sedentary reinforcement, may reduce sedentary activity and promote habitual exercise. Repeated exposures to a reinforcer may increase its reinforcing value (i.e., incentive sensitization). It is not yet known whether incentive sensitization occurs for exercise or factors associated with incentive sensitization for exercise reinforcement. The purpose was to determine whether exercise exposures increase exercise reinforcement relative to a sedentary alternative and whether this sensitization of exercise reinforcement would alter physical or sedentary behavior. This work also determined whether exercise dose, intensity, and preference and tolerance for exercise intensity were associated with incentive sensitization of exercise. …

Food Is Medicine: A Low-Cost, Plant-Based Cooking Class Series For Food Pantry Users, Carolyn Ellis

Senior Honors Projects

Food insecurity, defined as the limited or uncertain access to nutritionally adequate, safe, and acceptable food, is a major public health concern. In 2017, 15 million US households were at one point food insecure. Food insecure adults typically have poorer diet quality than food secure adults independent of poverty. Both food insecurity and poor diet quality are associated with diet sensitive chronic diseases including cardiovascular disease, type 2 diabetes, and obesity. People who rely on food pantries are a subgroup of concern due to their limited ability to purchase food. As meat, poultry, and seafood are the most expensive items …

Characterization And Evaluation Of The Probiotic Properties Of The Sporeforming Bacteria, Bacillus Coagulans Unique Is-2, Amy Garrison

Department of Food Science and Technology: Dissertations, Theses, and Student Research

Probiotics are live organisms, that when consumed in adequate amounts, confer a health benefit to the host. To achieve probiotic status, each potential strain’s functional properties and their safety to the consumer must be comprehensively evaluated. Probiotic effects have been observed to be strain specific, therefore each new strain of interest must be characterized according to their phenotypic and genetic characteristics. There is a list of characteristics that potential probiotic strains should have to be considered as a probiotic. Potential probiotic strains should be evaluated for their acid and bile salt resistance, antimicrobial activity and adherence and colonization to intestinal …

The Functional Food Diet: A Pilot Study, Caroline Knight, Ralph Hamill 2019 MaineHealth

The Functional Food Diet: A Pilot Study, Caroline Knight, Ralph Hamill

MaineHealth Maine Medical Center

Background: Recently, several functional foods have been identified which have health benefits beyond providing energy and substrate molecules for cellular chemistry. These foods are effective in reducing fat absorption and lowering lowdensity lipoprotein (LDL) cholesterol (Asgary, Rasquar, & Keshvari, 2018). In the past, diets low in saturated fat have been found to be ineffective in lowering LDL cholesterol. Statins are capable of lowering LDL cholesterol up to 60% when the latest generation is used at maximal dose (Law, Wald & Rudnicka, 2003). However, some patients do not tolerate statins because of side effects. Evidently, decreasing the LDL lowers the risk …

Assessment Of Factors That Impact Hydration Status Of Professional And Collegiate Mascots, Caroline Atwell

Human Nutrition and Hospitality Management Undergraduate Honors Theses

Mascots have unique physical demands and nutrition needs. They exert themselves tremendously on a variety of game days and at practices throughout the week. Hydration is as significant for mascots as it is for any other athlete, yet there is little to no known research available to help this population achieve a good hydration status. Studying similar populations such as cheerleaders, band members, football players, and firefighters provided a better understanding of mascot hydration. The purpose of this study was to examine the level of hydration knowledge in mascots performing at the collegiate and professional levels and determine the different …
