The NHANES 2011–2014 protocol includes a taste and smell questionnaire (CSQ) in the home interview followed by brief olfactory and taste assessment in mobile exam centers. The CSQ asks self-reported taste and smell ability, and selected symptoms, comorbidities, and treatment for chemosensory disorders. In the taste assessment, participants rate intensities of 1 M NaCl and 1mM quinine hydrochloride applied to the tongue tip and these plus 0.32M NaCl sampled with the whole mouth. Smell function is assessed with two 4-item, scratch-and-sniff tests (Pocket TestsTM (PT), Sensonics, Inc.) to classify normosmia and olfactory dysfunction from microsmia to anosmia. We examined …

Fruit and vegetable (FV) intakes in MS children remain lower than recommended. Theory-based, multi-component nutrition education interventions like Farm to School (F2S) target FV consumption and utilize such interventions to improve children’s dietary behaviors by incorporating nutrition and agriculture education. The current study was designed with Theory of Planned Behavior (TPB) as its framework. Furthermore, there is growing evidence of a synergistic link between nutrition, systemic health, and oral health. Red blood cells (RBC) have been shown to mediate plaque development seen in coronary artery disease (CAD). This study determined whether differences in RBC fatty acid (FA) composition were related to CAD risk. FAs were extracted from RBCs of 38 individuals who have undergone cardiac catheterization, 9 of whom had obstructive CAD, and analyzed via gas chromatography. Ferric reducing ability of plasma (FRAP) assay was used to determine oxidative stress. Food frequency questionnaires were used to correlate RBC omega-3 FA to daily intake of omega-3 FA. No correlation was found between RBC content and intake of omega-3 FA. FRAP values …

High school coaches play a huge role in establishing a healthy environment for their athletes and often students. The coach‐athlete relationship has proven to be a strong and useful bond in prevention of adverse behaviors of athletes or in prevention of health problems such as concussions. The female athlete triad (triad) is a common health problem among female athletes. Many high school coaches are unaware of the triad or the serious health and performance consequences for their athletes. The pinto bean has been linked to the prevention of multiple diseases due in large part to the presence of phenolic antioxidants, which are higher in beans than in many fruits and vegetables. These components deliver health properties beyond basic nutritional characteristics by scavenging free oxygen radicals. However, these benefits are most likely due to the ability of these chemically diverse phenols to impart greater protective properties as additives or synergists acting in combination. The Baby-Friendly Hospital Initiative (BFHI) is a worldwide movement started by the World Health Organization (WHO) and the United Nations Children’s Fund (UNICEF) that is aimed at providing hospitals with a certification that guarantees the best possible patient-centered care for mothers and infants. It focuses on breastfeeding as optimal infant nutrition, and implements strategies to encourage and support mothers to breastfeed their infants exclusively for six months after birth. The purpose of this study was to determine the effectiveness of a calorie-restricted diet versus one with restricted food groups. To accomplish this, a survey with 19 participants, age ranging from 25 to 74 years, was taken for people who attempted Weight Watchers, a calorie-restricted diet, and Atkins, a low-carbohydrate diet. The success rates of each of these diets will be compared and analyzed in this study. Participants reported short-term and long-term weight loss results. It is well documented that obesity is a growing problem in the U.S. and worldwide. By 2010, 35.9% of U.S. adults age 20 and older were obese (Overweight and Obesity, CDC). Obesity has been associated with many health problems, including hypertension, type 2 diabetes, osteoarthritis, stroke, and cardiac disease (Lucey, 2008, p.202). What has just been described is the traditional, medicalized narrative of obesity. The incidence of Clostridium difficile infection (CDI) and associated mortality have increased rapidly worldwide in recent years. Therefore, it is critical to develop new therapies for CDI. In this study, we generated a novel, potently neutralizing, tetravalent, and bispecific antibody composed of 2 heavy-chain-only VH (VHH) binding domains against both TcdA and TcdB (designated “ABA”) that reverses fulminant CDI in mice infected with an epidemic 027 strain after a single injection of the antibody. We demonstrated that ABA bound to both toxins simultaneously and displayed a significantly enhanced neutralizing activity both in vitro and in vivo. Additionally, …

Trans fatty acids (TFA) are produced either by hydrogenation of unsaturated oils or by biohydrogenation in the stomach of ruminant animals. Vanaspati ghee and margarine have high contents of TFA. A number of studies have shown an association of TFA consumption and increased risk of cardiovascular disease (CVD). This increased risk is because TFA increase the ratio of LDL cholesterol to HDL cholesterol.
