Bones Of Contention: Bone Mineral Density Recovery In Celiac Disease—A Systematic Review, Patricia Grace-Farfaglia 2015 University of New Haven

Bones Of Contention: Bone Mineral Density Recovery In Celiac Disease—A Systematic Review, Patricia Grace-Farfaglia

Nutrition Sciences Faculty Publications

Metabolic bone disease is a frequent co-morbidity in newly diagnosed adults with celiac disease (CD), an autoimmune disorder triggered by the ingestion of dietary gluten. This systematic review of studies looked at the efficacy of the gluten-free diet, physical activity, nutrient supplementation, and bisphosphonates for low bone density treatment. Case control and cohort designs were identified from PubMed and other academic databases (from 1996 to 2015) that observed newly diagnosed adults with CD for at least one year after diet treatment using the dual-energy x-ray absorptiometry (DXA) scan. Only 20 out of 207 studies met the inclusion criteria. Methodological quality …

Maternal Obesity And Incidence Of Depression, Caroline A. Habjan 2015 Syracuse University

Maternal Obesity And Incidence Of Depression, Caroline A. Habjan

Renée Crown University Honors Thesis Projects - All

Obesity is a national epidemic in the United States, which both directly and indirectly affects the social productivity of individuals, the American macro economy and individuals’ personal health and well being. Depression often interferes with an individual’s ability to work, sleep, study, eat, and enjoy life. A maternal state of both obesity and depression may cause serious adverse medical conditions in the mother’s child. Taking steps to treat depression and obesity are critical in the construct of modern medicine. This project yields results that have the potential to make treatment options better tailored, more efficient, effective and economically-sound for the …

The Missing Link: The Impact Of Nutrition Education And The School Lunch Program, Rachel E. Calhoun 2015 University of Southern Mississippi

The Missing Link: The Impact Of Nutrition Education And The School Lunch Program, Rachel E. Calhoun

Honors Theses

In the U.S., the weight status of overweight and obesity in children is increasing from recent decades (Carrol & Ogden, 2010). Research shows that the prevalence of children developing chronic diseases is influenced by obesity and overweight statuses, shown by existing risk factors (Freedman, Dietz, Srinivasan, & Berenson, 1999). Recent legislation of the National School Lunch Program has aimed to improve the nutritional value of school lunches in elementary schools by requiring fruit and vegetable meal components be provided on each lunch tray (Nutrition Standards, 2012). This quasi experimental study aimed to increase fourth graders nutrition knowledge and fruit and …

Transport Of Bovine Milk Exosomes By Human Colon Carcinoma Caco-2 Cells And Rat Small Intestinal Iec-6 Cells, Tovah Wolf 2015 University of Nebraska-Lincoln

Transport Of Bovine Milk Exosomes By Human Colon Carcinoma Caco-2 Cells And Rat Small Intestinal Iec-6 Cells, Tovah Wolf

Department of Nutrition and Health Sciences: Dissertations, Theses, and Student Research

We have reported that microRNAs (miRNAs, miRs) in bovine milk regulate human genes. In milk, many miRNAs are encapsulated in exosomes, thereby conferring protection against degradation and a pathway for intestinal transport of miRNAs. We hypothesized that the uptake of bovine exosomes in human intestinal colon carcinoma Caco-2 cells and rat primary small intestinal IEC-6 cells is mediated by endocytosis. Transport studies were carried out using fluorophore-labeled exosomes purified from bovine milk. The transport of bovine exosomes exhibited saturation kinetics at 37°C (Km= 55.5±48.6 µg/200 µL, Vmax= 0.083±0.057 ng exosomal protein x 81,750 cells−1 x …

Obesity among children and adolescents is increasingly becoming a major public health problem. Poverty and lower socio-economic status as well as lack of parental awareness regarding a balanced diet and adequate exercise all contribute towards childhood obesity. Unfortunately minority children have been especially vulnerable, among them inner-city Latino children continue to have the highest incidence rates of overweight and obesity; hence targeted intervention for this population group is of paramount importance. Access and affordability of smartphones and mobile internet devices provide an opportunity to create nutrition education interventions that can significantly impact and change attitude and knowledge regarding healthy diet …

Oral Wellness: Using Occupational Therapy To Enhance Oral Hygiene Delivery In Long-Term Care, Lauryn J. Banovitz, Liberty Bellah, Rosemarie Lion

Dissertations, Masters Theses, Capstones, and Culminating Projects

Based on current literature, oral health in long-term care (LTC) facilities is frequently of low priority and does not follow evidence-based best practices. Poor oral health reduces the quality of life of older adult residents and patients and can lead to systemic diseases, such as cardiovascular disease, stroke, and pneumonia, the leading cause of death in LTC. Occupational therapists can play an instrumental role as oral care consultants, and educators, and can act as resource guides to raise the standards of oral care in LTC facilities.

This capstone project explored ways in which occupational therapy, a profession traditionally designated for …

Assessing The Nutrition Knowledge And Body Image Perceptions Of Minority Freshman At East Tennessee State University, Michele L. Becerra 2015 East Tennessee State University

Assessing The Nutrition Knowledge And Body Image Perceptions Of Minority Freshman At East Tennessee State University, Michele L. Becerra

Undergraduate Honors Theses

The health status of African American and Hispanic communities is in need of intervention. These minority groups have a health disparity gap from other races. The incidences of hypertension, diabetes, and obesity are greater in the African American and Hispanic communities. There is a need to continue addressing the specific health issues, along with ideas of body perception, plaguing the African American and Hispanic populations in the United States. Such disparities typically include those who follow “western” diets, have a lack of exercise, are predisposed to chronic illness, as well as have a need for continuous education of the subject …

The Skinny On Eating Attitudes, Body Image, And The Thin-Ideal In College Women, Lyndsay N. Greene 2015 Lynchburg College

The Skinny On Eating Attitudes, Body Image, And The Thin-Ideal In College Women, Lyndsay N. Greene

Undergraduate Theses and Capstone Projects

There is evidence of a link between body image and disordered eating among females, and some research that suggests exposure to the media exacerbates both body dissatisfaction and eating pathology. Despite these claims, little research has been done on the effects that exposure to photo-shopped images specifically has on body dissatisfaction and eating pathology. The present study sought to further understand the relationship between cognitive distortions of body image and eating attitudes and to examine the effects that exposure to the thin-ideal found in the media has on body dissatisfaction among college aged women. Eighty female college students answered questions …

Pregenomic And Genomic Effects Of 24,25-Dihydroxyvitamin D3, Yang Zhang 2015 Utah State University

Pregenomic And Genomic Effects Of 24,25-Dihydroxyvitamin D3, Yang Zhang

All Graduate Theses and Dissertations, Spring 1920 to Summer 2023

In the United States, the major dietary source of protein is poultry meat, particularly chicken. Phosphorus absorption in chickens is a critical problem in poultry production. It therefore is important to understand the cellular and molecular regulation of phosphorous absorption in intestine to increase efficiency of the process. This would provide the benefits of reducing feed costs and reducing phosphorous excretion, thereby contributing to the sustainability of agriculture in the United States. Therefore, the focus of this thesis is determining the effect of vitamin D metabolites involved in phosphate homeostasis using the chicken as a model.

Comparison Of Body Composition Assessment Techniques In Older Adult Females, Lauren Yacapraro 2015 Bowling Green State University

Comparison Of Body Composition Assessment Techniques In Older Adult Females, Lauren Yacapraro

Honors Projects

Comparison of Body Composition Assessment Techniques in Older Adult Females

Introduction: As the aging population increases, the need for accurate assessment of chronic disease risk also increases. There is considerable debate over the best way to assess this risk. BMI is a weight-to-height ratio that is commonly used to assess adiposity and obesity related risk. However, it does not differentiate lean (i.e., muscle and bone) versus fat mass – the true predictors of obesity-related diseases (e.g., cardiovascular disease and diabetes). This is prevalent in post-menopausal women who often experience age-related gains in fat mass and losses in lean mass.

Methods: …

Fueling Performance: Determining The Efficacy Of Low-Carbohydrate Diet Models For Athletic Populations, Chelsea Jackle 2015 Western Michigan University

Fueling Performance: Determining The Efficacy Of Low-Carbohydrate Diet Models For Athletic Populations, Chelsea Jackle

Honors Theses

Advocates of low-carbohydrate (LC) diets assert that these diets help lessen dependence on sugar while aiding in the metabolism of fat tissue. Additionally, it is believed that lipolysis helps dieters feel more energetic, lose weight, and improve physical performance. For these reasons, many athletes and active people are drawn to diets such as the Atkins Diet, the South Beach Diet, the Paleo Diet, and the Zone Diet. According to current evidence, excessive weight loss, ketosis, reduced glycogen availability, dehydration, and increased stress hormone levels make LC diets that severely limit carbohydrates disadvantageous for athletes. Although LC diets are widely followed, …

Food Addiction And Added Sugar Consumption In College-Aged Females, Sophia F. Stangl

Celebrating Scholarship & Creativity Day (2011-2017)

Addiction to highly refined foods, specifically sugar, may result in excessive caloric intake, which enhances comorbidity risks, such as obesity and cardiovascular disease. The American Heart Association recommends that women limit “added sugar” intake to 25 g per day (1). Purpose: To determine the relationship between food addiction and sugar consumption. Methods: IRB approved the study, and IT Services sent out a recruitment email to 1992 college-aged females. Participants gave their informed consent and completed two surveys: the Yale Food Addiction Scale (YFAS) (n=160) and the Automated Self-Administered 24-hour dietary recall (ASA24) (n=57). The YFAS questionnaire categorized individuals …

Integration Of Resistant Starch In Homemade Pasta, Anja Grommons

Honors Theses

In response to raised consumer awareness of health and well-being many manufacturers are transforming popular food items into functional foods with higher nutritional value. Typical pasta recipes consist of all purpose (AP) flour and/ or semolina flour which contain minimal nutritional value. Resistant Starch (RS) contains a high fiber profile accompanied by many physiological benefits. This study investigated the effect of partial substitution of RS for semolina and AP flours on functional, nutritional, and sensory properties of handmade pasta. RS was substituted for semolina and AP flours at levels of 20% and 30% substitution. As the amount of RS in …

Caloric restriction (CR) was recently demonstrated by us to restrict ovarian cancer growth in vivo. CR resulted in activation of energy regulating enzymes adenosine monophosphate activated kinase (AMPK) and sirtuin 1 (SIRT1) followed by downstream inhibition of Akt-mTOR. In the present study, we investigated the effects of metformin on ovarian cancer growth in mice fed a high energy diet (HED) and regular diet (RD) and compared them to those seen with CR in an immunocompetent isogeneic mouse model of ovarian cancer. Mice either on RD or HED diet bearing ovarian tumors were treated with 200 mg/kg metformin in drinking …

Measurement Techniques For Steady Shear Viscosity Of Mozzarella-Type Cheeses At High Shear Rates And High Temperature, Prateek Sharma, Tzvetelin T. Dessev, Peter A. Munro, Peter G. Wiles, Graeme Gillies, Matt Golding, Bryony James, Patrick Janssen 2015 Utah State University

Measurement Techniques For Steady Shear Viscosity Of Mozzarella-Type Cheeses At High Shear Rates And High Temperature, Prateek Sharma, Tzvetelin T. Dessev, Peter A. Munro, Peter G. Wiles, Graeme Gillies, Matt Golding, Bryony James, Patrick Janssen

Nutrition, Dietetics, and Food Sciences Faculty Publications

While measuring steady shear viscosity of Mozzarella-type cheeses in a rotational rheometer at 70 °C, three main difficulties were encountered; wall slip, structural failure during measurement and viscoelastic time dependent effects. Serrated plates were the most successful surface modification at eliminating wall slip. However, even with serrated plates shear banding occurred at higher shear rates. Because of the viscoelastic nature of the cheeses, a time dependent viscous response occurred at shear rates <1 >s−1, requiring longer times to attain steady shear conditions. Prolonged continuous shearing altered the structure of the molten cheeses. The effects of structural change were greatly reduced by …
