COMPLEMENTARY AND ALTERNATIVE MEDICINE (CAM) AND ADOLESCENT BODY MASS INDEX (BMI): A NATIONAL POPULATION-BASED STUDY
Abstract
Background
Childhood obesity rates in the United States have remained around 17% since the 1990s - this figure translates to an estimated 12.7 million obese children. Maintaining a healthy weight through adolescence may limit subsequent health risks in adulthood. Complementary and alternative medicine (CAM) encompasses a variety of non-pharmacological treatments and lifestyle choices that have been utilized in addition to or in place of typical Western medicine. The relationship between adolescent Body mass index (BMI) and the use of complementary and alternative medicine has …

Effects Of Egg And Egg Replacers On Consumer Acceptability Of Chocolate Cake, Stormey R. Trayter
Williams Honors College, Honors Research Projects
Egg allergies are very common, and affect 1% to 2% of all children (Savage, 2007). For this reason, egg replacers that can be easily used by home cooks are an important area of research. In this experiment, a simple egg replacer of flour, oil, baking soda, and water was added to a standard cake mix, with variables consisting of a control product and a product made with no eggs using the egg replacer. The null hypothesis was rejected; removing eggs and adding the egg replacer has an effect on the ability for consumers to discriminate between samples in a triangle …

Previous research has demonstrated the negative implications that poor maternal nutrition has on morbidity and mortality for both the mother and the unborn child. Although malnutrition is known to make pregnant women susceptible to miscarriage or birth of a child with stunted growth and development, many Central American countries such as Honduras lack a screening tool to detect maternal malnutrition. The purpose of this study was to develop and pilot a screening protocol for malnutrition during pregnancy using best practice and evidence-based recommendations from the AND and the ACOG, and creating a training protocol for obstetric nurse education to foster …

After more than a century of active research, the notion that the human fetal environment is sterile and that the neonate’s microbiome is acquired during and after birth was an accepted dogma. However, recent studies using molecular techniques suggest bacterial communities in the placenta, amniotic fluid, and meconium from healthy pregnancies. These findings have led many scientists to challenge the “sterile womb paradigm” and propose that microbiome acquisition instead begins in utero, an idea that would fundamentally change our understanding of gut microbiota acquisition and its role in human development. In this review, we provide a critical assessment of the …

Nutritious Meals For The Homeless Population: Challenges And Opportunities, Kayla A. Albrecht
Masters Theses
Objective: Consuming a nutritionally adequate diet is extremely challenging for the homeless population. Though meals are available to the homeless population through soup kitchens and homeless shelters, these settings often do not serve meals that provide essential nutrients. The consumption of energy-dense, low-nutrient foods has led in part to high prevalence of obesity, heart disease, and chronic illnesses among the homeless. The purpose of this study was to (a) examine the challenges that homeless shelters face in providing nutritious meals to guests and (b) investigate the need and interest of nutrition education at homeless shelters.
Methods: Nine homeless shelter directors …

Research outputs 2014 to 2021
Adherence to a Mediterranean diet (MedDiet) is thought to be achievable in non-Mediterranean regions, but this has yet to be investigated. We aimed to determine if an older Australian population could adhere to a MedDiet for six months. We conducted a randomised, parallel dietary intervention trial with two dietary arms: the Mediterranean diet (MedDiet) group and the habitual diet (HabDiet) control group. A 15-point Mediterranean diet adherence score and food and nutrient intakes were estimated from three-day weighed food records collected at baseline, two and four months. Erythrocyte fatty acids, serum carotenoids and urinary metabolites were assessed at baseline, three …

Motility And Adhesion Through Type Iv Pili In Gram-Positive Bacteria, Kurt H. Piepenbrink, Eric J. Sundberg
Food for Health: Publications
Type IV pili are hair-like bacterial surface appendages that play a role in diverse processes such as cellular adhesion, colonization, twitching motility, biofilm formation, and horizontal gene transfer. These extracellular fibers are composed exclusively or primarily of many copies of one or more pilin proteins, tightly packed in a helix so that the highly hydrophobic amino-terminus of the pilin is buried in the pilus core. Type IV pili have been characterized extensively in Gram-negative bacteria, and recent advances in high-throughput genomic sequencing have revealed that they are also widespread in Gram-positive bacteria. Here, we review the current state of knowledge …

The Impact Of Mindfulness-Based Interventions On Stress Eating, Emotional Eating, And Binge Eating: A Literature Review, Kira L. Minot
Food Science and Nutrition
This literature review examines the impact of various mindfulness-based interventions (MBIs) on the obesity-related eating behaviors of stress eating, emotional eating, and binge eating. With the inconsistency of the weight loss industry to provide long-term weight loss results, the United States is in need of alternative methods of weight loss and weight maintenance to combat the current overweight and obesity epidemic. MBIs are thought to be beneficial when targeted at behaviors of weight gain because mindfulness promotes an individual’s awareness of present physical and emotional sensations within the body, including hunger and satiety cues. Self-acceptance and stress reduction are also …
