Recent theoretical work has suggested that urban food security is the result of food system interactions. This work highlights the challenge of assessing household-level food insecurity and relating it to the broader food system. One priority is to develop food security metrics that incorporate household interactions with the food system retail environment. The Hungry Cities Food Purchases Matrix (HCFPM) is one such metric that has been developed for situating household food sourcing behaviour within the urban food system. Supporting local food has been a goal of dining services for some time now. Buying local means you know exactly where your food is coming from. Typically the farmer has a direct relationship with the processors that puts pressure on them to abide by all laws and regulations. Secondly, the shorter time between the farm and your table, the less likely that nutrients will be lost during the time it takes to transport food across the country. The explosion of the prison population over the past three decades, and the rise of privatized prisons with little governmental oversight, has opened the doors for Transnational Corporations to tap into this new source of cheap labor. Incarcerated individuals, barred from the protection of labor laws in the U.S., are at the will of these large corporations. Colossal supermarkets, such as Whole Foods and Walmart have recently come under scrutiny for their use of prison labor in producing food items, which raises an interesting question: is using prison labor in the food industry necessarily a terrible thing?

This dissertation consists of three essays that investigate consumers’ response to technologies that mitigate food safety risks: cattle vaccines against E. coli and direct-fed microbials.

The first essay examines the influence of information framing and issue involvement on perceptions of the two food safety technologies. This essay also examines the role of issue involvement on food safety perceptions. A hypothetical survey which includes six information treatments was developed, and targeted a representative, random sample of U.S consumers. Agriculture is a large part of the economy and society of Tanzania, equating to 28% of the country’s GDP. Up to 80% of these farms are owned and worked by 19 million smallholder agriculturalists (FAO, 2015). Smallholder farmers are an inherently vulnerable demographic, due to their high reliance on agriculture for food and income in addition to their limited financial, technological, and labor resources (Morton, 2007). This poster discusses one important metaphysical question concerning food and food technologies – that is, how technologies have gradually alienated food from its natural rooting and what are the consequent philosophical concerns behind that. In order to examine this question, this poster will discuss four key sources that each exemplifies a well-known, currently ongoing technology on different levels that has altered the natural properties of food and the controversy concerning such technology.

Since the late 1990's, "food deserts" have dominated the academic and policy literature on food access and food security. Food deserts are defined as areas that lack easy access to fresh, healthy, and affordable food, and are typically measured using Geographic Information Systems and spatial data sets. However, while food deserts may provide a useful measure for identifying food insecurity at a broad scale, they fail to account for individual definitions and perceptions of food access (Barnes et al. 2015; McEntee 2009).
