How sustainable is our food system? An investigation of diet choices and their environmental impacts

Food is often thought of as a commodity, when fundamentally it is our nourishment and foundation of life. In the United States, it appears as if we have a functional food system, but in reality what we have is an unsustainable system of industrialized agriculture perpetuated by a disproportionate allocation of resources. Current consumer behavior within our food system is detrimental to future environmental and human well being, ultimately exacerbating the timing and magnitude of global climate change.

The objective was to assess whether the food environment at the University of Nebraska-Lincoln (UNL) campuses supports healthy eating behaviors using components of the Healthy Campus Environmental Audit (vending, dining, and convenience store audits). Secondary aims were to compare the UNL food environment to other college campuses and explore whether there are existing health promotion and obesity prevention initiatives, programs, pledges and/or policies at UNL.

Measurement Of Commodity Price Risk: An Overview Of Brazilian Agricultural Markets, Daniel Henrique Dario Capitani, Fabio Mattos

This study explores different procedures to estimate price risk in commodity markets. Focusing on Brazilian agricultural markets, the paper proposes to assess both dispersion and downside risk measures using five different approaches (volatility, coefficient of variation, lower partial moments, value at risk and conditional value at risk). Results suggest that some commodities have large price variability but small downside risk, while other commodities show small price variability and large downside risk. Thus, there is no single answer to the question of which commodity exhibits more price risk, but rather distinct answers depending on how risk is perceived by different individuals. …

Cities across the United States have started to adopt urban agriculture zoning ordinances which provide access to land and encourage food production in low-income black and brown communities. However, many cities fail to use an anti-racist lens in the creation and implementation of these policies. According to scholars and activists, anti-racist practices in urban agriculture zoning require that first, community organizations and policy makers co-create policy with black and brown communities and second, develop secure land tenure arrangements for urban agriculture. Food insecurity occurs when an individual does not have consistent access to fresh, nutritious food in safe, socially acceptable, and affordable ways. This is a significant challenge facing Kentuckians, with one in six adults and one in four children experiencing some degree of food insecurity. The present study examines the effectiveness of customized nutrition education in improving 1) nutrition-related behaviors associated with food insecurity and 2) management of household food supply in food-insecure individuals with and without children. With a rise in obesity and other non-communicable, diet-related health problems and the persistence of food insecurity among many vulnerable populations, the involvement of young people in the current, burgeoning food-justice movement has the potential to bring forth transformative changes to our food system and thus improve population health. While much is known about the outcomes of providing opportunities for young people to be actively and civically engaged in their communities, there is a lack of research on the pathways, narratives, and experiences that bring young people into food justice activism.

This study fills a critical gap in research on the immediate postwar history of Japanese American community culture in Los Angeles and South Bay. The purpose of this thesis is to contribute research and literature of the immediate postwar period between the late 1940s resettlement period and the 1960s. During the early to mid-1940s, Americans witnessed World War II and the unlawful incarceration of over 120,000 Japanese Americans. Earlier this month, Singapore’s Hill Street Tai Wah Bak Chor Mee emerged first in the annual Top 50 World Street Food Masters list, making it the second time the hawker has been lauded internationally; it was one of two hawkers here to be awarded a Michelin Star earlier. Out of the top 50 in the World Street Food Masters list, 14 were Singapore hawkers. It says something about the high standards of our hawker fare in Singapore. Yet, Singaporeans are a spoilt lot when it comes to food, and the people we take most for granted are hawkers.

Bill Owens is a pioneer in the United States craft brewing industry through his efforts as an advocate, writer, publisher, brewer, and entrepreneur who created a lasting legacy by influencing generations of brewers and beer fans. Owens wrote the first book on homebrewing equipment (How to Build a Small Brewery: Draft Beer in Ten Days in 1982). He opened the third brewpub in the country (Buffalo Bill's Brewery in Hayward, California in 1983) where, in 1985, he introduced the first commercial pumpkin beer among other beer style firsts. Owens published numerous brewery-focused magazines that featured many illustrious beer writers. …

The Oregon Department of Environmental Quality partnered with Portland State University’s Community Environmental Services to conduct a five-part study on wasted food generation in the State of Oregon. The main research objectives for this study are:

• Understand the informational, psychological, socio-economic, and structural drivers that contribute to the generation of preventable wasted food;
• Collect reliable data on wasted edible food, including loss reasons and reporting biases; and
