How Is Food Insecurity Measured In The United States And What Share Of Older Adults Are Food Insecure?, Colleen M. Heflin, Madonna Harrington Meyer

Population Health Research Brief Series

The U.S. Department of Agriculture measures food insecurity based on whether households had problems affording food during the last twelve months. Based on the current definition, in 2023 9.2% of households with adults ages 60 and older were food insecure. But there are many problems with the existing definition for accurately capturing food insecurity among older adults.

Based on the book, Food for Thought: Understanding Older Adults Food Insecurity, this brief summarizes those limitations, noting that existing measures do not account for barriers that are common among older adults, such as mobility, physical distance, and transportation barriers.

There has been considerably less research into how gender, restaurant usage, and attitudes influence patterns of fast- food consumption. This study examined the factors that influence students' buying intentions for street food. A quantitative descriptive research design was employed to assess students' purchasing intentions toward street food in front of De La Salle University - Dasmariñas Gate 1. The study utilized convenience sampling, with 371 respondents consisting of undergraduate, masters, and doctoral students. Data were collected through an online survey using a Four-Point Likert Scale questionnaire. Statistical tools are weighted mean and Analysis of Variance (ANOVA) T-test. Background: Food literacy, which is a critical competency for nursing students, plays a pivotal role in promoting evidence-based nutrition behaviors and contributes effectively to public health. This study aimed to determine the level of perceived food literacy among nursing students.

Methods: This cross-sectional study involved 488 nursing students from two universities in the south of Turkey. The research data were collected face to face via the Personal Information Form, the Consumer Preferences Form, and Self Perceived Food Literacy. In this project, we worked alongside members from an urban farm in South Dallas to learn about issues related to food justice, urban farming, and food deserts. Using participatory design research methods, we created data visualizations showing how society can reduce inequities relating to food access produced in historically underserved neighborhoods. The research goals guiding this study are: a) to identify food deserts and urban farms in the Dallas-Fort Worth metropolitan region (DFW) and b) to determine which urban farms service the needs of these food deserts. One in seven workers in the United States is employed in food labor jobs, yet these jobs are among the lowest paid and least regulated in the country. Food Policy Councils (FPCs) have emerged to expand the benefits of food systems, however, few FPCs have prioritized food system labor concerns. This brief summarizes findings from a study that used data from the 2016-2023 Food Policy Network’s national survey as well as focus groups and interviews with over 25 FPC representatives and leaders to examine the challenges and barriers that have limited FPCs’ engagement with labor issues. This paper explores the overlooked practice of food-related remittances in the Ghana-Qatar migration corridor, emphasizing their social, emotional, and cultural significance within translocal households. While cash remittances are widely studied, food remitting remains under-researched despite its critical role in sustaining family ties and addressing food insecurity. Drawing on a mixed-methods study involving household surveys in Ghana and interviews with migrants in Qatar, the paper employs a tripartite conceptual framework incorporating gifting, caregiving, and moral economy to analyze migrant remittance narratives. Small Meat Processor Needs Are Similar Across Region, Jordan C. Wicks, Alexis Wivell, Thomas Archibald, David Gerrard

This needs-based assessment provides insight into the challenges of small meat processors in two regions of the US. On-line surveys were provided to processors and despite regional differences, data show approximately 70% of processors in each state find retention of skilled labor the greatest challenge in maintaining current levels of operation and impede future growth. These findings suggest educational and certification programing may help improve small processor viability and mitigate local food security concerns. Given the disparity in animal production and livestock availability between these diverse states but similarity in responses, we posit this information is translatable across the US.

This fact sheet presents data on simulated recession impacts to the Supplemental Nutrition Assistance Program (SNAP) in the Mountain West. The Urban Institute’s “How Would a State Cost Share Affect SNAP in a Recession?” report provides recession projections based on the current SNAP policy – which allows SNAP to automatically expand in the event of a recession – as well as a 10% cost share scenario, for all 50 U.S. states and the District of Columbia. This fact sheet focuses on recession projections for the five Mountain West states of Arizona, Colorado, Nevada, New Mexico, and Utah.

In this manuscript, we explore the intersection of artificial intelligence (AI) and equitable learning in higher education, focusing on data science as a subset of AI and social justice as the core theme of equity. Our investigation sheds light on the nuanced tensions inherent in employing data science for social justice. Rooted in situated perspectives of learning and consequential learning, our study employs an instrumental case-study methodology and analysis techniques from interaction and conversation analysis. In this dissertation, I present the findings of a descriptive phenomenological study I conducted focused on examining the experiences of community college students of color who utilize on-campus food pantries, aiming to understand how these resources impact their well-being. Through in-depth interviews, two central themes emerged. The first theme, Introduction to the On-Campus Food Pantry, highlights the accessibility of the service, with participants emphasizing the simplicity and efficiency of the registration process as a key factor in their initial engagement. Weight bias is present among pre-health professional students (e.g., nutrition, dietetics, nursing, physical therapy, medicine). Educators need support and guidelines about how to enhance learning through engaging assignments while also meeting accreditation requirements. This pilot study examined the impact of an innovative weight bias assignment using photovoice and reflection within existing nutrition education courses, measured through pre-post assessments from the Fat Attitudes Assessment Toolkit. While not all subscales showed significant change, improvements in the Fat Acceptance and Attribution Complexity Composites suggest these methods may be effective in shifting attitudes about fatness.
