The Impact Of High Temperatures On Child Anthropometric Outcomes Worldwide, Natalia A. Cancino Garcia

High temperatures caused by climate change significantly impact society, including child nutrition. Our research focuses on the impact of high temperatures on the anthropometric outcomes of children aged 1 to 5 in 54 countries worldwide. We analyze the historical climate and anthropometric data to evaluate the effect of high temperature on weight-for-age (WAZ) and weight-for-height (WHZ) in children. Results indicate that high temperatures negatively affect child nutrition, particularly in areas above 20°C, and children in rural areas are more vulnerable. The impact of monthly temperature on child anthropometric outcomes varies across countries, regions, and cultural practices. Economic status alone is …

Obesity, a pervasive global health concern, involves a complex interplay between genetic factors, dietary patterns, and the gut microbiota. Onion peels are rich in polyphenols and known for their antioxidant properties. However, the effects of in-vitro digested onion peel extract has not been investigated thus far. This study therefore assesses the effects of digested bioactive compounds from onion peels, emphasizing gut microbiota shift and metabolites. Onion peel extract (OPE), digested onion peel extract (DOPE), and solid-phase-extracted digested onion peel extracts (SPE-DOPE) were analyzed for total phenolic content (TPC) and antioxidant activity. Indigenous peoples, such as the Pawnee people, have been cultivating maize for thousands of years, resulting in diverse varieties adapted to their local environments. This study aims to deepen the knowledge of Indigenous maize by examining specific varieties from the Pawnee, including a comparative analysis of the genetic makeup through DNA sequencing. Berries are one of the most consumed fruits in our diet, and rich in dietary fiber, vitamins, minerals, polyphenols, and volatiles. Volatiles are responsible for the aroma of berries, and are widely used in food, perfumery, and cosmetic industries. However, the potential health beneficial effects of berry volatiles have not been extensively studied. Recently, we found that berry volatiles from cranberries, black and red raspberries, strawberries, blueberries, and blackberries have an anti-inflammatory effect on inflamed murine macrophage cells. The development of robust and efficient fish classification systems has become essential to preventing the rapid depletion of aquatic resources and building conservation strategies. A deep learning approach is proposed here for the automated classification of fish species from underwater images. The proposed methodology leverages state-of-the-art deep neural networks by applying the compact convolutional transformer (CCT) architecture, which is famous for faster training and lower computational cost. In CCT, data augmentation techniques are employed to enhance the variability of the training data, reducing overfitting and improving generalization. The purpose of this analysis is to review data from the USDA Economic Research Survey in a data collection regarding FoodAPS National Household Food Acquisition and Purchase Survey. Our data include a sample size of 4,826 participating households with 279 variables describing each household. Several variables were utilized which include average collective income for households, perceptions of fruit and vegetable prices and quality, self-reporting items about perceived fruit and vegetable consumption, and financial survey responses. With these chosen variables we made initial inferences that there would be a relationship between income and fruit consumption. We predict that throughout the duration …

Italy has become a common “landing country” for many European and Asian immigrants, creating a perception of invasion that has led to cultural reactionism masked in the reinforcement of “traditional cuisine.” For so-called traditional foods to endure, they must continually be reinvented, bearing different meanings and social values throughout time and space while accumulating rich, cultural baggage that serves as a powerful marker of identity in a given society. A modified version of the Eating and Food Literacy Behaviors Questionnaire (EFLBQ) with a new construct called cooking enjoyment was developed and validated. The instrument was titled the Eating and Food Literacy Behavior Questionnaire with Cooking Enjoyment (EFLBQ-C). The EFLBQ-C was developed with data from 18- to 30-year-olds who attended a university in the United States collected by an online survey platform. This research delves into the complex relationship between service quality, tipping behavior, and various influencing factors within the context of the hospitality industry. By collecting data from 19 casual and fine dining restaurants in Goa, India, the study focused on frontline employees, including waiters and barmen, who regularly interacted with diners. A total of 216 questionnaires were distributed during lunch and dinner periods, capturing diners' perspectives on service quality using a 7-point Likert scale.

Assessing the gene-environment interaction of pediatric obesity can provide valuable insights for the characterization of key factors contributing to obesity and identification of potential points of intervention. The data used in this thesis comes from a single sample of young children recruited from the communities surrounding Dartmouth College.
