Global experiential learning and engagement facilitate learning opportunities to better understand the processes that shape global agricultural and food culture systems. This study had two objectives; the first was to integrate experiential learning, through partnerships with selected universities and institutions abroad, into students’ education. The second was to enhance faculty and students’ global learning, discovery, and engagement experiences. Seven students from Tuskegee University, and two students from Delaware State University, were provided an opportunity to visit three universities overseas, where they engaged in classroom discussions and other experiences. This special issue is the outcome of a workshop held at Purdue University in April 2022. It comprises thematic syntheses of five overarching dimensions of the Global-to-Local-to-Global (GLG) challenge to ensuring the long-term sustainability of land and water resources. These thematic dimensions include: climate change, ecosystems and biodiversity, governance, water resources and cyberinfrastructure. In addition, there are eight applications of GLG analysis to specific land and water sustainability challenges, ranging from environmental stress in the Amazon River Basin to groundwater depletion in the United States. Background: Individual lifestyle risk factors have been linked to increased mortality globally; however, there is limited data on these associations in Russia. A secondary analysis of the Russia Longitudinal Monitoring Survey (RLMS) data was conducted to close this gap.

Methods: The secondary data have been obtained from a nationally-representative annual cohort survey conducted by the Higher School of Economics (HSE). In this original study, for the first time in Russia, we extracted RRs for researched risk factors. In Alaska, subsistence is a way of life for some communities. The Federal Subsistence Board (FSB) oversees the Federal Subsistence Management Program. One of its responsibilities is to determine areas as subsistence or non-subsistence areas. This decision, in part, is based on whether subsistence is a “principal characteristic of the economy, culture, and way of life”. (James A. Fall, Division of Subsistence, 2018). The federal policy grants these communities priority in the taking of wild resources (Title VIII of the Alaska National Interests Lands Conservation Act). Fifty-six percent of school-aged children participate in team sports, yet there is limited evidence on how participation in youth sports impacts the dietary behaviors of participants and their families. Our team surveyed parents and caregivers of children participating in recreation league youth sports (n = 178) to assess the foods and beverages offered as team snacks and factors that influence team snack choices. Juice was the most popular beverage, and crackers were the most popular snack reported by parents. Convenience, followed by cost and child preference, were the most frequently reported factors influencing team snack choices. Survey items also included …

Extrinsic cues like plate color have been shown to effect taste perception. Previous studies conducted show a consensus that plate colors can modulate taste perception (Piqueras-Fizman et al., 2012, Stewart & Gross, 2013). No studies, however, have investigated varying color hues and their effect on taste perception. This study aims to determine whether the change in the black to white ratio of plate color can affect consumer perception of sweetness or bitterness.

Understanding consumer perceptions of carbon emissions in agriculture is a critical step to help increase the sustainability of food consumption. According to the Food and Agriculture Organization of the United Nations, 14.5 percent of all global anthropogenic GHG emissions are estimated to be represented by livestock (FAO), and cattle, raised for beef and milk, are the largest animal species responsible for emissions, comprising over 60 percent of the livestock sector’s emissions. Clinical supervised practice experiences offered through dietetic internships have historically been among the most challenging to obtain. The COVID-19 pandemic heightened the scarcity of these experiences and forced dietetics education programs to offer alternative experiences in the absence of direct patient care opportunities. Simulation-based learning experiences (SBLE) or objective structured clinical examinations (OSCE) are one method of providing these alternative options, and if effective, could be routinely incorporated into dietetics education. Background: Dietitians are not frequently participating in or leading research. Cultivating greater research interest and involvement starts with dietetics education, but little is known about dietetics students’ research involvement and interest. This study examines relationships between research involvement and interest among graduate dietetics students. Methods: This study was a cross-sectional survey design incorporating participant characteristic data, the Practice-Based Dietitian Research Involvement Survey (PBDRIS), and the modified Interest in Research Questionnaire (IRQ) tools; 89 of 327 (27.2%) graduate dietetic students from 3 US universities were included. In 2019, the Indonesian Government proposed Ubud in Bali to become the United Nations World Tourism Organization (UNWTO) 's prototype for a world gastronomic destination. It turned out that, despite its rich inventory of gastronomic assets and attractions, Ubud met with challenges when convincing UNWTO to give it the title. To deal with this problem, the Indonesian Government practised gastrodiplomacy to influence UNWTO to endorse Ubud as the world gastronomic destination. This thesis uses gastrocriticism to explore food and drink in the 86 episodes of the long-form narrative HBO television series The Sopranos. Gastrocriticism is an emerging branch of literary criticism that draws on scholarship from a range of disciplines such as sociology, anthropology and cultural studies. A deeper understanding of the series was gained by using a structured framework of enquiry to explore narrative, setting, characterisation and genre through the lens of food and foodways.
