In most African cities, there is sufficient food to feed everyone and considerable wastage of fresh and processed foodstuffs. Poor households are food insecure because they cannot afford to purchase enough quality food and are unable to access the surplus food that exists. Food redistribution NGOs are well established in Southern Africa but more recently large centralized food banks have been advocated as a means to get surplus food to the hungry. The nutrition transition, including the presence of malnutrition and obesity in poor urban populations (the so-called ‘double burden’ of disease), is occurring in Southern Africa in the context of massive rural-urban migration and rapid urbanization. This seemingly contradictory situation poses one of the major threats to public health in the developing world, and impacts the poor – and therefore the most food insecure – to the greatest extent. Considerable attention has been devoted to the impact of the HIV and AIDS epidemic on small farmers and the food security of the rural poor. Despite the rapid progression of the epidemic in rural areas, it remains an ever-growing challenge in the continent’s rapidly-growing cities where prevalence rates are still higher than in rural areas. Chokeberries (Aronia melanocarpa) are an antioxidant-rich plant product due to their high content of polyphenols, especially anthocyanins and procyanidins. These polyphenols have been shown to provide protection against coronary heart disease, stroke, and lung cancer, as well as against oxidative stress, the main cause behind chronic diseases promoted by free radicals. The objective of this study was to determine the storage effects of gelatin encapsulation on monomeric anthocyanins, procyanidins, color density, and percent polymeric color of three gummy candies of different strengths formulated with a base of 25.4% chokeberry concentrate, 47.6% sucrose, 1.3% Splenda, and 0.025% potassium sorbate. Why is the relationship between our food system and federalism important to American law and health? It is important simply because federal law controls the American food system. This essay considers how federal law came to structure our food system, and suggests that though food is an essential part of our national economy, the dominating role of the federal government alienates citizens from their food system. There is general consensus that Randolph Bourne was right in his criticism of Dewey's support for U.S. participation in World War One. Bourne's central argument against Dewey was that war is inexorable. War cannot be controlled; pragmatist method becomes inoperable. Jane Addams largely agreed with Bourne, but would question his claim that war's inexorability is absolute. I will use Addams's participation with the U.S. Food Administration to show cracks in the inexorability of war and also to raise questions about the pragmatist grounding of Bourne's attack on Dewey. The current international food security agenda focuses almost exclusively on the food insecurity of rural populations and ways to increase smallholder production. The plight of the urban poor is marginalised in this agenda leading to neglect of the ‘invisible crisis’ of urban food insecurity. This paper argues that the future of Southern Africa is an urban one and that urban food insecurity is therefore a large and growing challenge. The number of people living in urban areas is rising rapidly in Southern Africa. By mid-century, the region is expected to be 60% urban. Rapid urbanization is leading to growing food insecurity in the region’s towns and cities. This paper presents the results of the first ever regional study of the prevalence of food insecurity in Southern Africa. The AFSUN food security household survey was conducted simultaneously in 2008-9 in 11 cities in 8 SADC countries. Crises impacting agriculture cost the nation billions of dollars in expenses and lost revenues annually. Organizations and governmental agencies continue to refocus energies on improving crisis communication plans in an effort to lessen economic impacts of unanticipated events. This study brought together an advisory team of agricultural communications professionals to gather perceptions of crisis communications educational needs for new professionals and to identify the best practices for using Second Life© (SL), a 3-D virtual world, simulations for training.
