This project examines the history of ramen, tracing its development from Chinese noodle traditions to its adaptation in Japan and its global spread through industrialization and postwar change. It highlights how migration, war, and globalization shaped ramen into a widely consumed food and a symbol of cultural exchange and adaptation.

Feeding The Future: Prenatal Dietary Effects On Offspring Neurodevelopment, Emma Whatley

This study examined the effects of prenatal Western (WD) and Mediterranean (MD) diets on offspring metabolic, cognitive, and neurobiological outcomes in a preclinical mouse model. Working and long-term memory performance, dendritic morphology, and gene expression were assessed using behavioural tests (CAL, YMRM, WM) and Golgi-Cox analyses. Behavioural effects were minimal, with female MD offspring showing improved memory performance under standard conditions. Metabolic findings showed effects on body weight and blood glucose. Dendritic morphology was largely unchanged; however, subtle, sex-specific differences were observed. Differential gene expression between MD and WD suggests a role for future environmental stressors. The purpose of this cross-sectional study was to examine eating patterns among college athletes attending a minority-serving, urban institution where commuting is highly prevalent to assess potential risks of disordered eating, nutrient deficiencies, and food insecurity. A total of 189 students [M age (SD) = 20.29 + 1.46 years] from a mid-sized university in the U.S. responded to an anonymous online survey. The survey consisted of questions regarding food security, hydration/beverage status, demographics, disordered eating attitudes and behaviors, and food consumption patterns. Polycystic Ovary Syndrome is an endocrine disorder among women of reproductive age and is associated with insulin resistance, menstrual irregularities, hyperandrogenism, and metabolic dysfunction. Dietary modifications targeting glycemic response have emerged as a nonpharmacologic approach for PCOS management. However, long-term randomized controlled trials targeting young adult populations remain limited.

The purpose of this study is to evaluate long-term effects of adherence to a low-glycemic index diet on the frequency and severity of PCOS symptoms among female college students ages 18-22. Chrononutrition focuses on how nutritional timing influences biological rhythms (Castro-Mata et al., 2025; Kim et al., 2025; Raji et al., 2024). This includes examining how dietary patterns (e.g., timing, frequency, and regularity) affect the circadian system and metabolic health (Cart & Pauling, 2025; Juliana et al., 2023; Negri et al., 2025). Sleep schedule, shift work, substance use, malnutrition, and other external factors, which will be discussed in this article, can disrupt the circadian rhythm. This paper examines a condiment popular among the ancient Romans which might seem off-putting to modern people: the fermented fish sauce garum. A brief history of the garum as well as an analysis of its chemical composition are given, before the author describes his experiments with the sauce in his own kitchen, conducted in an attempt to determine its suitability for the modern palate.

The “One Big Beautiful Bill” Will Deepen The Farm Crisis, Not Solve It, Rebecca Schewe, Rick Welsh

The One Big Beautiful Bill (OBBB) promises billions in new farm subsidies, but most of that money won’t go to the farmers who need it most. This brief describes how the OBBB’s changes to agricultural subsidy programs will disproportionately benefit large farms and non-farming investors, accelerating farm loss and consolidation across the United States. The authors argue that without reforms, the OBBB will inflate land values, raise barriers for new and small farmers, and further fuel absentee farmland investment. The Impact Of Michi-No-Eki (Roadside Stations) On The Regional Economy: An Input–Output Analysis Of Minamiboso City In Chiba Prefecture, Ryusaku Matsuo, Takeru Aizawa, Gon Jan, Wei Yuanxin, Masaharu Uchiyama, Gento Tagami

This study quantitatively examines the economic impact of Michi-no-Eki (Roadside Stations) in Minamiboso City, Chiba Prefecture, using an input–output analysis based on the Chiba Prefectural Interindustry Table. Eight Michi-no-Eki were evaluated in terms of direct, indirect, and induced effects, including employment creation. The results show that the total production-inducing effect generated by the stations amounts to ¥7.02 billion per year, and the employment-inducing effect reaches 108.7 persons annually, indicating that Michi-no-Eki function as a central engine of the local economy. Moreover, thematic diversity among stations—such as loquat, flowers, and seafood—enhances multiplier effects through inter-sectoral linkages. These findings demonstrate that Michi-no-Eki …

The research question for this project focuses on food sovereignty. “How do individuals working with food in Chicago identify their role in promoting food sovereignty?” is a research question that expands with some nuance into the question of “who” individuals are in terms of political orientation. When asked to identify political ideology and economic ideology, the values can be greater quantified. Using mixed-methods, this paper critically assesses perspectives of individuals working with food in Chicago. The online survey enumerates the individual perspectives, food culture, and sociopolitical interactions of food sellers, producers, and advocates. Ensuring the reliability of domestic food supplies is increasingly critical given the compounding shocks of production variability, transportation constraints, and demand surges. This study develops a spatially explicit framework for Zambia, introducing the food reliability index to quantify the probability that food requirements exceed supply under stochastic conditions. By integrating probabilistic production estimates with a gravity model of domestic trade, we evaluate reliability dynamics across rural and urban landscapes. We apply this framework to establish a 2020 baseline and project future vulnerabilities to 2050. Despite growing global interest in short food supply chains (SFSCs), little is known about how consumers in developing countries perceive these models, especially through digital platforms like social media. This study investigates how Twitter users represent and perceive SFSCs in the context of the Peruvian government´s “De la Chacra a la Olla” program. The study analyzed 1,167 tweets from Peruvian Twitter users referencing the hashtag #DeLaChacraALaOlla between 2014 and 2020, using reflexive thematic analysis within an exploratory case study framework to examine consumer perceptions of SFSCs. This paper develops a multi-market framework of analysis of vertical relationships in pork production and game theoretic models of heterogeneous firms to examine the economic, market and welfare impacts of abolishing vertical integration in the US pork sector. Different scenarios on the causes of vertical integration and the potential states of nature that can emerge after the removal of this vertical market arrangement are considered within this framework. Ultra-processed foods now comprise the majority of the U.S. food supply and have been directly associated with 32 chronic diseases including obesity, cardiovascular disease, cancer, and diabetes. Current classification systems such as NOVA provide a useful framework for identifying food processing, but rely on broad and subjective categorizations that may not capture the mechanisms most closely associated with promoting persistent overconsumption. In particular, existing classification systems remain limited in their ability to evaluate addiction-like behaviors associated with highly processed foods, including persistent purchasing patterns, reinforcement effects, and substitution responses.
