The purpose of this exploratory research was to study commercial food environments around high schools in the Portland metropolitan area to explore the question: How do the economic, geographic, and racial demographics of public high schools in the Portland metropolitan area affect the prevalence and make-up of obesogenic commercial food environments surrounding these schools?

Methods

Commercial food environments within a 1 km radius of 35 public high schools in the Portland metropolitan area were surveyed. Three trends are identified: the downsizing of consumption, emergence of anti-globalization sentiments, and negative consumer reactions to the misconduct of brands/companies. The public health and economic implications of the COVID-19 pandemic to the New York City (NYC) food system have been tremendous. In the six months since March 2020, when the pandemic reached NYC’s 5 boroughs, the number of food-insecure individuals has nearly doubled from 1.2 million to 2 million;1 diet quality for many individuals has decreased;2 the local food workforce has lost more than two-thirds of its workers;3 and more than 1,000 NYC restaurants and food retail outlets have closed,4 some never to re-open.

ABSTRACT This exploratory study aims to explore the unknown needs among the unaccompanied youth population within a small urban community in West Texas. This cross-sectional study surveyed a convenience sample of 10 unaccompanied youth attending school within an independent school district. Data were collected using a social worker’s case load during the spring semester of 2020, during the COVID-19 global pandemic. Findings showed a certain level of need within this community, such as emergency shelters and further research on food insecurity for this population. In June 2009, a group of masters students from the University of Gastronomic Sciences in Italy spent nine days visiting the lands of the Tevere river, travelling from its springs on Monte Fumaiolo in Emilia-Romagna to Rome by way of Umbria and the Lake Trasimeno. This article is a gastro-historic portrait of the lands of the Tevere, linking contemporary social, cultural and economic activities around food and tourism to the rich and long history of the region and highlighting persistent patterns, continuity and change.

Consumer socialization literature has focused on individual socialization agents and their isolated effects. However, as John (1999) pointed out, children do not grow up in a social vacuum. Instead, the multitude of agents socializing children find their narratives interacting and their effects continually shaped and co-created. To understand how school-age children learn about food, I interrogate the complexity of socialization in three essays.

Fortification of rice by parboiling is considered a potential alternative to currently available fortification technologies to produce rice with higher mineral and vitamin content significantly contributing to nutrient intake in populations with high prevalence of micronutrient deficiencies. Higher nutrient retention rates and improved sensory characteristics are advantages of fortified parboiled rice compared to fortified rice obtained by currently used fortification technologies including dusting, coating, and extrusion. However, conventional parboiling processes employ excess water that presents an environmental hazard if discarded without treatment. This paper examines adoption of online grocery shopping, and potential cost and time savings compared to brick and mortar food retailers, by New York City public housing residents using Supplemental Nutrition Assistance Program (SNAP) benefits. A mixed methods action research project involving the co-creation of an online shopping club, the Farragut Food Club (FFC), recruited 300 members who registered to shop online using SNAP, and received waivers on delivery minimums and provided technical assistance and centralized food delivery. Purpose: This project aimed to measure the acceptability and feasibility of plant-based diets among low-income individuals with type II diabetes at the Samaritan House Food Pharmacy and to create a user-centered pilot program to encourage the adoption of a plant-based diet.

High Fructose Corn Syrup is believed to be responsible for the increase of the obesity epidemic that is affecting both developed and developing countries, yet to date there are no rigorous analyses that quantify this effect. To estimate the impact of consumption of HFCS on obesity, I have paired country-specific data on imports of HFCS from the United Nations International Trade Statistics Database (UN Comtrade) with women and child health data from around 70 countries from 1985 to 2018.
