Small Meat Processor Needs Are Similar Across Region, Jordan C. Wicks, Alexis Wivell, Thomas Archibald, David Gerrard

This needs-based assessment provides insight into the challenges of small meat processors in two regions of the US. On-line surveys were provided to processors and despite regional differences, data show approximately 70% of processors in each state find retention of skilled labor the greatest challenge in maintaining current levels of operation and impede future growth. These findings suggest educational and certification programing may help improve small processor viability and mitigate local food security concerns. Given the disparity in animal production and livestock availability between these diverse states but similarity in responses, we posit this information is translatable across the US.

Many medium and smaller dairies are shifting to various kinds of value-added products that may expand in demand nationally aside from fluid milk. This study uses a latent class logit model to investigate the heterogeneity of consumer preferences and willingness to pay for dairy value-added products across four latent classes considering different local and environmental sustainability labels. The dairy products examined for this research are butter, cheese, yogurt, and ice cream. Community, local, and regional food systems (CLRFS) programming reflects important issues and priorities that intersect with Extension and the sustainability of our food system. CLRFS programming in Extension, however, is still developing slowly while food movements grow nationally. This article describes a CLRFS model and complementary process for conducting listening sessions with Extension professionals and community leaders to develop and enhance CLRFS programming to address critical food system needs. A recommendation for Cooperative Extension is that such a tool may aid CLRFS program potential as an integrated “food, farm, and health” approach for community-level application.

This thesis details the history of Claremont Market Shares, a Community Sourced Agriculture (CSA) project based out of Claremont, California. By using this project as a jumping off point for discussing local food networks, buzzwords such as "organic" and "local" are analyzed and re-defined. I argue for a people-based food network model over the currently popular 'place-based' that prioritizes producer-consumer relationships. The CSA functions as a sustainable model of this ideology.

The purpose of this study is to identify and describe the barriers that prevent local food producers from selling their food in a mainstream market. This study utilized both qualitative and quantitative analysis through a mixed-methods survey. Information collected through the study had a two-fold focus: barriers that producers face (or that they are providing assistance for) and what are consumers looking for in products that these producers are supplying. The major barriers found for local food producers in Arkansas were lack of capital and obtaining infrastructure for packaging, processing, and storing products. Organic and local foods have been on the rise in the global market since the new millennium began (Darnhofer, 2010: 68, Schupp, 2016: 319).
