Unearthing origins of modern mycophilia, this dissertation explores the mushroom mania which reverberated through American society at the turn of the twentieth century, empowering Anglo-American women in new ways. America’s largely forgotten first mushroom fad illuminates gendered negotiations of foraging culture and public science. Beginning in the 1880s, a remarkable cohort of women helped turn mushrooms from shunned, mysterious organisms into wholesome delicacies for culinary and intellectual enrichment. Female enthusiasts fostered a vibrant mushroom culture and nationwide network of mycophiles. Culinary applications and poisoning fears legitimized women’s presence in scientific endeavors, positioning mycology as vital female knowledge for public safety …

This work studied Black food geographies in Newark, NJ, which represent alternative food provisioning practices and strategies working within but also parallel to traditional food geographies and exist within and despite of foodscapes of domination. Black food geographies not only include the spatial agency of Black residents but also entail the structural intersectionality and organized abandonment that Black residents currently experience as well as their historical production. This dissertation delves into the pre-Columbian Preclassic Maya civilization, examining the societal dynamics, subsistence strategies, and cultural practices at Nixtun-Ch’ich’, Guatemala through the analysis of animal bones. Animal bones are used as indicators of dietary habits, social structures, and ideological beliefs. The findings highlight a diet that evolved from favoring a complex array of strategies in the Middle Preclassic period to one that concentrated on a few mammals and freshwater resources. This dissertation examines Syria during the French Mandate using food as a primary unit of analysis. The exploration of food pushes this project beyond the boundaries of political and diplomatic histories of Syria during the French Mandate, bringing forward the hidden voices of the nonelite. Nonelites are often not visible in archives, but their absence in most written sources permits us to ascertain their experiences in studying the materials that comprised their everyday lives. The sources consulted for this work include memoirs, print media, and state archives, to name a few.

The key idea this thesis aims to clarify is how anti Blackness is killing Black people and how one economic policy could improve health. Since at least the nineteenth century sweetness and a preference for sweet foods has been linked to femininity. Western, middle-class women learned and reproduced normative gendered dietary behavior due to both private and public pressure to control their appetites and those of their children. In performing their gendered roles, they came to embody them through everyday rituals such as teatime. Sugary foods and drinks served as necessary props in these performances. Theorists, most prominently Jean-Jacques Rousseau, began to propose a linkage of sweet foods with femininity in the seventeen hundreds. Using food-as-medicine, a valuable strategy of health, as its focus, this dissertation examines why and how New Yorkers use food to negotiate their health. I argue that while using food medicinally is a common health practice, food-as-medicine operates unequally among different groups of New Yorkers. I attribute this inequity, in part, to how those in power, including public health experts, biomedical doctors, and the food industry, operationalize food-as-medicine as a health remedy and to a neoliberal, healthist context that ties people’s morally “correct” uses of food-as-medicine to their abilities to access “good” citizenship and optimal health.

This dissertation examines the archaeofaunal remains from Skútustaðir, a middle to high-status farm in Mývatnssveit, Northern Iceland, to understand the experience of rural communities and their ecologies during Iceland’s transition from regulated colonial exchange to a capitalist economy during the 17^th through 19^th centuries. Archaeofaunal analysis is used to reconstruct changes in the ways that people herded, hunted, and fished, providing insights into how they managed their local environments for subsistence and novel contexts of exchange. The restaurant industry is one such industry to receive this spotlight. While most of the coverage has stemmed from celebrities, the misconduct of celebrity chefs has been paralleled by the stories of servers and their customers. This analysis will explore the theoretical underpinnings of the neoliberal food regime in relation to American democracy, and how an alternative food regime of food sovereignty may help to expand American democracy. This research introduces the serving temperature bias, which is defined as the belief that a food or beverage served hot has more calories and is considered more fattening than the same item served cold. Six studies, including an observational field study and follow-up controlled experiments, demonstrate that people indeed hold the serving temperature bias. This belief is grounded in the conceptual associations between warm foods and beverages and consumers’ affiliative semantic associations regarding home and hearth - concepts captured by the phrase “homelike.” Specifically, hot foods and beverages are perceived to be labor of love and reminder of home (homelike) …

In addition to increased intake of sweet solutions by mammals, learning, particularly classically-conditioned “Pavlovian-like” learning, also plays an important role. An orosensory conditioned flavor preference (CFP) can be elicited by pairing one novel flavor (conditioned stimulus, CS+) with a fructose solution and a second novel flavor (CS-) with a saccharin solution. Rats will prefer the CS+ flavor in a subsequent 2-bottle choice test with both flavors mixed in saccharin. Previous pharmacological analyses revealed that systemic administration of dopamine (DA) D1 and D2 as well as NMDA, but not opioid, receptor antagonists eliminated the acquisition (learning) of fructose-CFP.
