Culinary is not just food and drink, but has transformed into a study of culinary gastronomy which focuses on aspects of history, values, philosophy, taste and components. The study of the problems discussed in this research is related to the cultural identity of Javanese culinary gastronomy in the five songs by Ki Narto Sabdo. Descriptive qualitative research methods with an objective approach were applied in this research. This research uses Santich's culinary gastronomy theory and Stuart Hall's theory of cultural identity representation with a constructionist approach. Gathering Knowledge, Sustaining Science: The Female Forager And American Mushroom Culture, 1880–1930, Madeline S. Dede-Panken

Unearthing origins of modern mycophilia, this dissertation explores the mushroom mania which reverberated through American society at the turn of the twentieth century, empowering Anglo-American women in new ways. America’s largely forgotten first mushroom fad illuminates gendered negotiations of foraging culture and public science. Beginning in the 1880s, a remarkable cohort of women helped turn mushrooms from shunned, mysterious organisms into wholesome delicacies for culinary and intellectual enrichment. Female enthusiasts fostered a vibrant mushroom culture and nationwide network of mycophiles. Culinary applications and poisoning fears legitimized women’s presence in scientific endeavors, positioning mycology as vital female knowledge for public safety …
Assessing Legacy Collections: Analyzing The Preservation, Recovery, And Interpretive Value Of Archaeobotanical Remains From Site 15le70 (Pine Crest Rockshelter), Lee County, Kentucky, Jennifer Carroll

This paper uses the archaeobotanical assemblage from Site 15Le70, a multi-excavated and extensively looted rockshelter in eastern Kentucky, while opening new lines of inquiry into gendered labor and practice during the Archaic-Woodland transition. Because legacy collections are often dispersed across institutions and/or research projects, the materials from any single site may be fragmented, as was the case for 15Le70. Such collections can be overlooked, yet this investigation into 15Le70’s archaeobotanical assemblage demonstrates that partial or scattered datasets can yield meaningful results and hold the potential to fill gaps in the archaeological record left by looting.

This project examines the history of ramen, tracing its development from Chinese noodle traditions to its adaptation in Japan and its global spread through industrialization and postwar change. It highlights how migration, war, and globalization shaped ramen into a widely consumed food and a symbol of cultural exchange and adaptation.

This paper examines a condiment popular among the ancient Romans which might seem off-putting to modern people: the fermented fish sauce garum. A brief history of the garum as well as an analysis of its chemical composition are given, before the author describes his experiments with the sauce in his own kitchen, conducted in an attempt to determine its suitability for the modern palate.

Northern Indigenous communities have relied on traditional food systems for meaningful, nutritious diets since time immemorial. But many Indigenous communities in remote northern regions of Canada still face disproportionately elevated levels of food insecurity due to climate change radically altering the availability for traditional foods, colonial food policies imposing Western diets, and the high costs of transporting store-bought foods. Extreme weather events such as wildfires further isolate fly-in remote communities increasing both the costs of transporting store-bought foods and the difficulties of harvesting traditional foods. The Phone Eats First: Reconfiguring Cultural Capital And Performing Taste On Tiktok’S #Torontoeats, Annie M. Willick

This study investigates how TikTok reconfigures cultural capital through the visual commodification and performative display of Toronto’s food culture using the hashtag “#TorontoEats”. Through a digital ethnographic multimodal critical discourse analysis, my research considers Bourdieu’s (1984) definition of cultural capital as the guiding definition of distinction, status, and personal taste. This analysis considers how cultural capital manifests through algorithmic engagement, adherence to platform norms, and TikTok’s multimodal format that blends video, sound, text, and gesture to entice audiences. Findings suggest that mundane food practices and activities are transformed into conspicuous commodities on TikTok, where creators position themselves as tastemakers and …

Cultivating Diversity In Sustainable Food Systems: Black Farming And Lived Experience In Rural Southern Ontario, Kadeem Jerofy Morgan-Adamson Mr.

This research examines the lived experiences of Black food growers in rural Southern Ontario to understand how their perspectives challenge dominant narratives of rurality and inform broader discussions on food sovereignty in Canada. Grounded in postcolonial theory, the study highlights how historical dispossession and persistent inequities shape the access of Black communities to land and resources. Using a mixed-methods approach that includes surveys, semi-structured interviews, and reflexive journaling within a community-based research framework, the study documents the barriers Black food growers face. These include limited land access, insufficient funding, inadequate training pathways, and experiences of racial isolation in rural contexts. …

The current study investigates the relationship between noun classes and plant folk taxonomy in Chasu (G 22). The study focuses on two objectives: the first objective is to describe the plant folk taxonomy in Chasu and the second objective is to determine the relationship between noun classes and plant folk taxonomy in Chasu. Data were collected from rural villages in Same and Mwanga districts by using free listing, field interviews (jungle-walk-and-identify), and written texts containing Chasu plant names. Food for Indigenous Futures has put together a Youth Council which is an opportunity for both youth and facilitators of the lab to collaborate. This is a space in which youth can develop leadership skills, have a platform for their voices to be heard, and advocate for positive change. Campesinos, often reduced to the label of “farmworkers”, are too often seen only through the lens of their labor within profit-driven systems. This thesis disrupts that limited narrative by illuminating the rich, expansive nature of vivencias campesinas, ways of being that transcend capitalist measures of value. These vivencias are lived, embodied experiences rooted in campesino lifeways, encompassing cultural, spiritual, and relational practices that nurture and sustain life.

The 'Place-Based Learning Practices Project' (PBLP) is a graduate project under the Native American Studies Department Rau Dalagurr Food Sovereignty Lab and Traditional Ecological Knowledges Institute (FSL).
