Resilience Of Food Sovereignty Organizations To The Covid-19 Pandemic, Rachel M. Brice

This sequential explanatory mixed methods study explored the organizational resilience of food sovereignty organizations (FSOs) in the northeastern United States during the COVID-19 pandemic. Using a novel “open structural learning approach” that integrates structural contingency theory, open systems theory, and organizational learning theory, this research examined how FSOs’ structural attributes, resource flows, and organizational culture shaped their ability to navigate crisis. The study engaged FSO leaders through surveys (n = 13) and in-depth interviews (n = 7), supplemented by archival data analysis, to explore factors that strengthened or diminished FSO resilience. Meatpacking plants are hazardous workplaces with high injury rates and poor working conditions, negatively impacting the health of the industry’s predominately immigrant and refugee workforce. The COVID-19 pandemic illuminated ongoing concerns in the industry, including the problems associated with consolidation and concentration, worker safety, and poor public health outcomes. This brief summarizes findings from a study that used data from 39 interviews with local, state, and federal officials and bureaucrats, worker advocates, and workers to analyze meatpacking policymaking and oversight during COVID-19. This dissertation consists of three chapters that evaluate how a change in the redemption of Supplemental Nutrition Assistance Program benefits impacted grocery purchasing behavior and food consumption to provide some of the first estimates of the impacts from the pilot. The SNAP Online Purchasing Pilot (OPP) allowed recipients to use their benefits online for participating retailers which was initially planned for 8 participating pilot states with a few participating retailers but massively expanded during the COVID-19 pandemic. Food insecurity among college and university students has increased in the past decade. The COVID-19 pandemic has presented unique public health challenges, including increased food insecurity. In a cross-sectional survey of students at a private university in the midwestern U.S. (N=253) we examined how student food security status changed during the pandemic and what relation-ships exist between changes in food security and various aspects of student identities. Twenty-nine percent of responding students indicated that they became less food secure during the pandemic, and the overall reported food insecurity rate increased by 130.77%. The COVID-19 outbreak led to major disruptions in food systems across the globe. In the United States’ Chicago region, the outbreak created immediate concerns around increased hunger, food insecurity, supply chain disruptions, and loss of local livelihoods. This was especially evident in communities of color, which faced disproportionate impacts from the pandemic. In March 2020, the Chicago Food Policy Action Council (CFPAC) coordinated a Rapid Response Effort that convened people in working groups related to emergency food assistance, local food producers, small businesses, and food system workers to address urgent needs that arose due to the pandemic. The dominant food system is racially and economically unjust, environmentally unsustainable, and vulnerable to shocks, such as the COVID-19 pandemic. This research explored how non-profit organizations in the Chicago region who responded to increased food insecurity and other pandemic impacts are opening pathways to re-organize the food system towards racial equity and resilience to future shocks. Workshops held in 2022 brought together 26 individuals from 20 non-profit organizations in the Chicago region with majority people of color across their leadership, staff, and board. These days, urban agriculture is more than a hobby. It has expanded into a local commercial business, even to an export scale. However, urban farmers who have commercialized their products must adapt to the COVID-19 pandemic situation, which has impacted many aspects of global life. This research used a mixed-method approach. We collected quantitative data from 107 respondents on the household commercialization index, income level, and education level of export-scale-urban farmers in the Bandung metropolitan area, West Java, Indonesia. The study evaluated the perceptions and readiness of food business operators about COVID-19 through an online survey with respondents from Metro Manila and Region IV-A. Generally, they are knowledgeable about COVID-19 and its transmission, as reflected in their scores. The same is true about their attitude towards “new normal” practices. Years of operation, asset size, and continued operations and delivery services showed significant positive correlation with attitude scores. The resilience of some food business operators may be attributed to having more resources that enabled them to carry the added costs of what the new normal foodservice practices entailed. This study aimed to explore how food supply chains were impacted by COVID-19 and identify how the region could be better prepared for future crises. An online survey was completed by 107 consumers. In-depth interviews were conducted with 27 food supply stakeholders working in food production, distribution, retail, hospitality, institutions (i.e., childcare), logistics/freight and local government. Pre-COVID-19, farmer-direct distribution options and hospitality businesses comprised a substantial proportion of local food producer businesses. The Hunger Report Part II: Targeting Specific Needs in the Wake of COVID-19 is the first intervention study of its kind in Singapore, delving into how the food situation of previously identified food-insecure households has changed during the COVID-19 pandemic. Through surveys, this report reveals the impact COVID-19 has had on a small sample of food-insecure families in Singapore. The authors also administer a Needs Toolkit to understand the unique needs and preferences of each food-insecure household. The COVID-19 pandemic has further exacerbated physical inactivity, poor dietary intake and reduced mental wellbeing, contributing factors to non-communicable diseases in children. Cooking interventions are proposed as having a positive influence on children’s diet quality. Motor skills have been highlighted as essential for performance of cooking skills, and this movement may contribute to wellbeing. Additionally, perceived competence is a motivator for behaviour performance and thus important for understanding intervention effectiveness. Therefore, this research aimed to assess the effectiveness of an adapted virtual theory-based cooking intervention on perceived cooking competence, perceived movement competence and wellbeing.

This study examines the work of single, white, middle-class women feeding and caring for their families during the COVID-19 pandemic in the year 2020. The study draws from qualitative analyses of one-on-one interviews conducted with seven single mothers. After situating single mothers and family food provision in the academic literature, as well as and current knowledge about the pandemic in the U.S., the author explores ways that the pandemic disrupted family life. This study aims to evaluate the nutritional impact the COVID-19 pandemic has had on children within the U.S. by assessing how children’s nutritional patterns have changed due to the COVID-19 pandemic, determining how these changes are impacted by participation in school federal nutrition assistance programs, and exploring additional food-related barriers the COVID-19 pandemic has created for families. The public health and economic implications of the COVID-19 pandemic to the New York City (NYC) food system have been tremendous. In the six months since March 2020, when the pandemic reached NYC’s 5 boroughs, the number of food-insecure individuals has nearly doubled from 1.2 million to 2 million;1 diet quality for many individuals has decreased;2 the local food workforce has lost more than two-thirds of its workers;3 and more than 1,000 NYC restaurants and food retail outlets have closed,4 some never to re-open.

Worries over widespread food shortages in the first few weeks of the COVID-19 lockdowns in the United States eclipsed the real hunger crisis on the horizon—one intimately tied to already existing inequalities. In the midst of the pandemic, the specter of hunger is haunting the same people it always has—the poor, the undocumented, low wage workers, the un- and under employed. It is not our supply systems that are breaking down and causing hunger, but our systems for ensuring people can access the food that exists which have been broken for a long time.

The project content was collected through food culture research, interviews, and observation and then mediated through Instagram.
