From Kitchen To Canon: Women And Culinary Recognition Executive Summary, Eulanda A. Sanders, Andra Harris

Despite women comprising a majority of the U.S. restaurant workforce, they remain significantly underrepresented in culinary leadership and elite recognition. Using an exploratory, descriptive design that draws on secondary data from the ACS, NRA, U.S. Census Bureau, and the James Beard Foundation, this study maps gender disparities across the culinary career pipeline. Women represent approximately 54% of the restaurant workforce but only 24.8% of chefs and head cooks, with a substantial gender wage gap persisting across the occupation (NRA, 2026; U.S. Census Bureau, 2024). Culinary is not just food and drink, but has transformed into a study of culinary gastronomy which focuses on aspects of history, values, philosophy, taste and components. The study of the problems discussed in this research is related to the cultural identity of Javanese culinary gastronomy in the five songs by Ki Narto Sabdo. Background: The Accreditation Council for Education in Nutrition and Dietetics (ACEND) amended the competencies for the future education model (FEM) in dietetic education to include competency 3.6 stating that the Registered Dietitian Nutritionist (RDN) must be able to "Initiate and conduct bedside swallow screenings". There is no clear process for RDNs to implement dysphagia screening in practice or academia. The aim of this review is to inform clinicians and educators on current literature discussing current RDN and speech language pathology approaches to dysphagia screening and to provide a proposed curriculum for implementation of competency 3.6 in clinical practice and academia.

Limited theory-informed, dietetic-specific resources are available to guide the development, evaluation, and refinement of culturally competent (CC) curricula. This pilot study used a mixed-methods, theory-informed approach to evaluate CC integration within an undergraduate dietetics curriculum and examine the applicability of existing CC self-assessment tools for dietetic students. A senior-level undergraduate community nutrition curriculum was evaluated using the Tool for Assessing Cultural Competence Training (TACCT), guided by the Campinha-Bacote Model of Cultural Competence in Healthcare Delivery. James Banks’ Model of Multicultural Curriculum Reform was then applied to refine curricular content and learning activities. In addition, 74 students enrolled in a didactic …

Virtual Reality: The Future Of Didactic And Experiential Education For Nutrition And Dietetics, Michael Holik, Dexter Richardson

The integration of virtual reality (VR) into nutrition and dietetics education provides an innovative answer to challenges in accessing experiential learning. This study examined student perceptions of immersive VR experiences designed to simulate hospital foodservice operations and nutrition counseling sessions, guided by the Diffusion of Innovation Theory (DOI). A quasi-experimental design involved 55 participants who engaged with 360° VR modules featuring interactive elements, avatars representing key healthcare roles, and embedded critical-thinking questions. Results demonstrated strong support for VR’s educational value across DOI’s five key attributes: relative advantage, compatibility, complexity, trialability, and observability. Additionally, this issue explores the inclusion of disability-related curricula in education programs and features a commentary on RDNs implementing swallow screenings within clinical practice, highlighting how this procedure falls within an RDN’s scope of practice when supported by proper training and demonstrated competency.

The purpose of this study was to assess the impact of a food recovery program at a large university on food waste reduction and food insecurity mitigation. The primary goal of the food recovery program was two-fold: to help provide ready-to-eat meals for students facing food insecurity and to help the campus food service provider minimize post-production food waste. In the Mississippi (MS) Delta, more than 40% of residents are food-insecure despite predominantly agricultural land use. We hypothesized that limited social networks and non-navigable food market systems constrain MS producers, limit market viability, and hinder regional food sovereignty. This ethnography compared rural Italian and Mississippian food systems through semi-structured interviews of food producers, processors, and marketers. We described differences in social networks between groups that led to differential capacities to share capital and to overcome producer and labor constraints. The improper management of sewage sludge poses a significant global risk to environmental and public health. In this study, the valorization of sludge as an organic fertilizer for lettuce cultivation was evaluated, offering a sustainable waste-to-resource solution. Sludge from two wastewater treatment plants (Mazouna and El Kerma) were collected between 2019 and 2021. Comprehensive physicochemical analysis was conducted to determine its nutrient value and contaminant levels. In addition, the efficacy and safety of the fertilizer were assessed by measuring lettuce growth and the bioaccumulation of heavy metals in plant tissues. Chrononutrition focuses on how nutritional timing influences biological rhythms (Castro-Mata et al., 2025; Kim et al., 2025; Raji et al., 2024). This includes examining how dietary patterns (e.g., timing, frequency, and regularity) affect the circadian system and metabolic health (Cart & Pauling, 2025; Juliana et al., 2023; Negri et al., 2025). Sleep schedule, shift work, substance use, malnutrition, and other external factors, which will be discussed in this article, can disrupt the circadian rhythm. This study quantitatively examines the economic impact of Michi-no-Eki (Roadside Stations) in Minamiboso City, Chiba Prefecture, using an input–output analysis based on the Chiba Prefectural Interindustry Table. Eight Michi-no-Eki were evaluated in terms of direct, indirect, and induced effects, including employment creation. The results show that the total production-inducing effect generated by the stations amounts to ¥7.02 billion per year, and the employment-inducing effect reaches 108.7 persons annually, indicating that Michi-no-Eki function as a central engine of the local economy. Moreover, thematic diversity among stations—such as loquat, flowers, and seafood—enhances multiplier effects through inter-sectoral linkages. These findings demonstrate that Michi-no-Eki …

Despite growing global interest in short food supply chains (SFSCs), little is known about how consumers in developing countries perceive these models, especially through digital platforms like social media. This study investigates how Twitter users represent and perceive SFSCs in the context of the Peruvian government´s “De la Chacra a la Olla” program. The study analyzed 1,167 tweets from Peruvian Twitter users referencing the hashtag #DeLaChacraALaOlla between 2014 and 2020, using reflexive thematic analysis within an exploratory case study framework to examine consumer perceptions of SFSCs. This paper examines the concept of urban farming in residential areas with limited space to provide food security while improving the environment. The study examined economic analysis and technical efficiency of cassava production in rural household in Yewa South local Government area of Ogun state. Structure questionnaires were administered to one hundred registered cassava farmers within the ten (10) villages. Descriptive and inferential statistics was used to analyze the data; results revealed that the age of the cassava farmers ranged between (25 – 45) years. Only 55.0 % of the farmers were married, having both primary and secondary education respectively, majority (63.0 %) having 11-15 years of experience. Africa faces deep food insecurity with over 300 million undernourished people driven by, low agricultural productivity, and climate shocks. To enhance food production and sustainable development, there is potential seen in genetically modified (GM) crops. To explore the potential of GM crops, this paper examines their production, adoption, economic and environmental impacts, adoption barriers, and policy implications in Africa and globally. This is done using a structured narrative review of peer-reviewed literature, reports, and policy documents (2014–2024) sourced from different databases complemented by stakeholder consultations. The current study investigates the relationship between noun classes and plant folk taxonomy in Chasu (G 22). The study focuses on two objectives: the first objective is to describe the plant folk taxonomy in Chasu and the second objective is to determine the relationship between noun classes and plant folk taxonomy in Chasu. Data were collected from rural villages in Same and Mwanga districts by using free listing, field interviews (jungle-walk-and-identify), and written texts containing Chasu plant names.
