Limited theory-informed, dietetic-specific resources are available to guide the development, evaluation, and refinement of culturally competent (CC) curricula. This pilot study used a mixed-methods, theory-informed approach to evaluate CC integration within an undergraduate dietetics curriculum and examine the applicability of existing CC self-assessment tools for dietetic students. A senior-level undergraduate community nutrition curriculum was evaluated using the Tool for Assessing Cultural Competence Training (TACCT), guided by the Campinha-Bacote Model of Cultural Competence in Healthcare Delivery. James Banks’ Model of Multicultural Curriculum Reform was then applied to refine curricular content and learning activities. In addition, 74 students enrolled in a didactic …

The integration of virtual reality (VR) into nutrition and dietetics education provides an innovative answer to challenges in accessing experiential learning. This study examined student perceptions of immersive VR experiences designed to simulate hospital foodservice operations and nutrition counseling sessions, guided by the Diffusion of Innovation Theory (DOI). A quasi-experimental design involved 55 participants who engaged with 360° VR modules featuring interactive elements, avatars representing key healthcare roles, and embedded critical-thinking questions. Results demonstrated strong support for VR’s educational value across DOI’s five key attributes: relative advantage, compatibility, complexity, trialability, and observability. The Palm Farm Next-Door: Land Concessions, Livelihoods, And Nutrition In Plantation-Adjacent Communities, Julia Entwistle

Large-scale land concessions have reshaped agrarian landscapes globally, yet their implications for community land tenure, livelihoods, and nutrition remain unevenly understood. This dissertation examines how plantation agriculture and foreign investment have transformed land access, labor relations, and food systems in Liberia, a country with one of the highest proportions of land under concession globally. Guided by a political ecology framework, the study employs a mixed-methods design integrating policy analysis, in-depth interviews, and household surveys across two palm oil concession sites. The findings show that ambiguous land policies historically facilitated dispossession, while recent legal reforms have enabled communities to strategically mobilize …

Kid Eats is a free app for iPad encouraging children and parents to cook together at home using fruits and vegetables. A preliminary study with parents and children showed children enjoyed using the app and that it provided useful information to support children’s involvement in the kitchen, including guidance around safety concerns. Every family in the study voluntarily completed at least one of the recipes with their child at least once following the in-person activity. Parents reported that their children actively asked to cook the recipes from the app and felt the app helped increase their time spent cooking with …

The prevalence of disordered eating is a critical public health concern that often progresses towards the development of a diagnosable eating disorder (ED). This, in turn, has detrimental physical and psychological consequences for individuals. Organizations such as the American Society of Parenteral and Enteral Nutrition (ASPEN) and the Academy of Nutrition and Dietetics (AND) have recognized nutrition education as a crucial component of prevention and recovery. The National Right to Food (RtF) Community of Practice (CoP) is a membership-based national coalition of advocates and organizations working to advance the RtF in our cities, towns, and states. This research project sought to understand (1) how a membership based organization like the CoP grows into a social movement defined by the visions and needs of its participants, and (2) what the added value is of weaving together existing local and state efforts into a national movement. The tandem issue of obesity and overweight is a serious global issue that has attained pandemic scale. Media, particularly advertising, plays an active role in shaping perceptions and behavioural patterns, influencing both how and what people eat. This paper analyses food advertising in Serbia in 2023 in the context of promoting dietary habits. Content analysis of commercials aired on a selection of television stations during the year showed the overwhelming prevalence of ads for food high in fat, sugar, and salt (HFSS), with confectionary products in lead positions. This study looked at goal setting in sleep and nutrition on healthy active college students aimed to improve their perceived performance, resting metabolic rate, body composition, and overall well-being. The six-week-long intervention had two groups: a control (n=5) and intervention group (n=6). Both groups received an initial coaching session and guidance for self-motivated online goal setting, completed weekly check-ins asking about their sleep and nutrition quality and quantity, and perceived performance, then they would set small goals aimed at improving their sleep and nutrition. Social media use is increasing among young adults with an average use of over four hours per day. The validity of dietary content on social media is questionable and can cause impacts on several factors. This research focused on exploring how female college students' social media use impacts their nutrition knowledge, diet choices, and body image. Through the use of a survey, 332 participants completed this research. It was found that social media can cause changes in body image, both positive and negative. Diet-related diseases impact populations across the globe. While intertemporal preferences—a fundamental preference for the distribution of benefits across time—have been used to explain low-quality food choices, the recent literature proposes another cause: inattention to the future implications (or opportunity costs) of the options faced. Food choices tend to become habitual to conserve cognitive resources, rather than carefully modeling future health impacts. Both low discount rates for future benefits and attention to future health impacts predict healthier decisions. Objective: Dietetics education transitioned to competency-based education (CBE) in July 2022. Despite its benefits, managing competencies may be a challenging aspect of CBE for dietetics program and internship directors (PDIDs), yet it is unclear what specific aspects of competency management are difficult. Using design thinking, this study sought to capture the impact recent CBE implementation had on PDIDs by identifying specific pain points (i.e., challenges) related to competency management. Obesity, a pervasive global health concern, involves a complex interplay between genetic factors, dietary patterns, and the gut microbiota. Onion peels are rich in polyphenols and known for their antioxidant properties. However, the effects of in-vitro digested onion peel extract has not been investigated thus far. This study therefore assesses the effects of digested bioactive compounds from onion peels, emphasizing gut microbiota shift and metabolites. Onion peel extract (OPE), digested onion peel extract (DOPE), and solid-phase-extracted digested onion peel extracts (SPE-DOPE) were analyzed for total phenolic content (TPC) and antioxidant activity. Fifty-six percent of school-aged children participate in team sports, yet there is limited evidence on how participation in youth sports impacts the dietary behaviors of participants and their families. Our team surveyed parents and caregivers of children participating in recreation league youth sports (n = 178) to assess the foods and beverages offered as team snacks and factors that influence team snack choices. Juice was the most popular beverage, and crackers were the most popular snack reported by parents. Abstract: The purpose of this collective case study was to explore the diffusion of interprofessional education (IPE) in response to specific Future Education Model (FEM) Graduate Program accreditation standards and performance indicators. Data were collected via semi-structured interviews with a purposive sample of 12 FEM program directors from geographically diverse US states. Experts recommend individuals adopt healthy and sustainable dietary behaviors to improve human and environmental health. The objective of this study was to pilot a sustainable eating Family and Consumer Sciences (FCS) Cooperative Extension curriculum and evaluate the effectiveness of the lesson series by measuring participants’ changes in knowledge, perceptions, and intentions towards healthy and sustainable dietary behaviors as well as overall satisfaction with lessons. In this thesis I argue that improving diet in communities depends on building nutritional knowledge. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. The industrialization of food systems has fundamentally changed the way humans connect with food and diet. Background: Food is not equitably available. Deficiencies and generalizations limit national datasets, food security assessments, and interventions. Additional neighborhood level studies are needed to develop a scalable and transferable process to complement national and internationally comparative data sets with timely, granular, nuanced data. Participatory geographic information systems (PGIS) offer a means to address these issues by digitizing local knowledge.

Mission-driven, independently-owned community food stores have been identified as a potential solution to improve access to healthy foods, yet to date there is limited information on what factors contribute to these stores’ success and failure. A collaborative partnership launched the Great Grocer Project (GGP) in March 2021 in Detroit, Michigan where health inequities, including deaths due to COVID-19, have historically been politically determined and informed by socially entrenched norms. Institutional and structural racism has contributed to a lack of diversity in store ownership among Detroit grocers and limited access to high-quality, affordable healthy foods as well as disparate food insecurity among Detroit residents. Basic Needs Initiative at California State University, Monterey Bay is a department that provides students with food, housing, and wellness resources. Over half of the university's students experience food insecurity, and over 85% use non-academic resources to learn about nutrition. This project adds a dietary health section to the department’s website to increase students’ access to nutrition education. It addresses the micro-level agency problem that too few students eat a healthy, balanced diet. Unhealthy eating is a risk factor for food insecurity, so the project indirectly addresses the macro-level health problem that too many college students in California experience food …

University dining halls are understudied food environments that affect student diet quality. This study (1) assessed dining hall offerings at the University of Rhode Island (URI) using the Partnership for a Healthier America’s Healthier Campus Initiative (PAHA) criteria for healthier campus food environments and (2) evaluated student perceptions of the dining hall through a campus-wide survey (n=165). We evaluated breakfast, lunch, and dinner using spring cycle menus (16 weeks in 2019 and 4 in 2021) from two full-service dining halls totaling 29 meals in 2019, and 84 meals in 2021 to determine adherence with PAHA criteria for availability of: 1) …

The use of E-resources has become a way of life. Seeking nutrition information has been seen to be directly related to wellness. The objective of the study was to assess and ascertain the use of the Internet and digital information seeking among students and professionals. The study also aimed to assess the preference of allopathic therapy over home remedies among the respondents. 275 respondents- 155 students and 120 professionals residing in Chandigarh Tricity were assessed. The purpose of this quasi-experimental study was to evaluate the effects of two farm-to-school programs, specifically the Field-to-Fork Multi-visit Program (N = 264) and the Field-to-Fork After-school Club (N = 56), on nutritional outcomes of elementary school students (third to fifth grade) from urban, diverse, and lower-income communities. Data were collected via self-report surveys measuring: (a) knowledge of recommendations for daily fruit and vegetable intake; (b) fruit and vegetable consumption; (c) knowledge of cooking a healthy recipe using vegetables; and (d) desire for farm fresh foods at school.
