Culinary is not just food and drink, but has transformed into a study of culinary gastronomy which focuses on aspects of history, values, philosophy, taste and components. The improper management of sewage sludge poses a significant global risk to environmental and public health. In this study, the valorization of sludge as an organic fertilizer for lettuce cultivation was evaluated, offering a sustainable waste-to-resource solution. Sludge from two wastewater treatment plants (Mazouna and El Kerma) were collected between 2019 and 2021. Comprehensive physicochemical analysis was conducted to determine its nutrient value and contaminant levels. In addition, the efficacy and safety of the fertilizer were assessed by measuring lettuce growth and the bioaccumulation of heavy metals in plant tissues. This paper examines the concept of urban farming in residential areas with limited space to provide food security while improving the environment. Background: Food literacy, which is a critical competency for nursing students, plays a pivotal role in promoting evidence-based nutrition behaviors and contributes effectively to public health. This study aimed to determine the level of perceived food literacy among nursing students.
Methods: This cross-sectional study involved 488 nursing students from two universities in the south of Turkey. In 2060, Indonesia aims for a clean, emissions-free society. However, achieving this goal requires understanding how lifestyle choices affect household carbon emissions. This study, based on data from the Indonesian Family Life Survey 2014, examines the impact of different diets (plant-based, vegetarian, Mediterranean, full meat-based, and mixed) on carbon emissions. Using Ordinary Least Square Panel Data Regression, the research finds that plant-based and vegetarian diets have a lower carbon footprint compared to mixed and full meat-based diets. The findings suggest that transitioning to more environmentally friendly consumption patterns can help reduce carbon emissions and benefit the environment.

Hypertension is a non-communicable disease that still becomes a public health issue. The percentage of hypertension cases at Cibatu Public Health Center increased from 31.7% in 2021 to 37% in 2022. Based on a preliminary study, hypertension was found to be the most common non-communicable disease at Cibatu Public Health Center. Background: The burden of noncommunicable diseases (NCDs) is increasing worldwide, including in Thailand. One risk factor for NCDs is an unhealthy diet. Thus, this study aimed to investigate the factors affecting the consumption of an unhealthy diet and determine the proactive policies that support factors inhibiting an unhealthy diet.
Methods: We investigated the factors affecting unhealthy diet consumption behavior by multiple linear regression analysis by surveying 970 Thai patients with early-stage NCD. In addition, we investigated appropriate policy proposals by conducting in-depth interviews with 20 key informants.

This research analyzes the spatial correlation between freshwater aquaculture production in Magelang Regency and the social and economic welfare of the community. Utilizing the Indeks Moran, LISA, and bivariate LISA methods, the results indicate inter-district correlations in freshwater fish production with a clustered distribution pattern. Mungkid and Muntilan districts are identified as production centers and hotspots. Freshwater fish production is also associated with community welfare, showing correlations with farmer groups despite a scattered distribution. However, the analysis of freshwater fish production and freshwater fish-based SMEs reveals a strong spatial relationship, particularly in Mungkid district, a central area fostering local development.

This study aims to analyze the demand for food among Indonesian households, consisting of foods prepared at home (FPAH) and food away from home (FAFH). Utilizing longitudinal data from the National Socioeconomic Survey 2011-2013, combined with the Village Potential Statistics, the study estimates the demand with the Linear Approximated Almost Ideal Demand System (LA/AIDS). The results show that both FPAH and FAFH are normal goods, but FAFH is more elastic than FPAH. Additionally, in terms of income elasticity, we found that households show stronger responses in consumption on FAFH, compared to FPAH. We also present heterogeneity analysis on different types …

The health condition of the Indonesian from life expectancy at birth tends to increase, but not all years are in a healthy. The health conditions can be influenced by food insecurity, food aid and health insurance. This study aims to study the effects of food insecurity, food assistance and health insurance on health complaints. Indonesian Socio-Economic Survey (Susenas) data were analyzed using multinomial logistic regression. The results show that food insecure individu are risky health complaints and are disrupted more than twice than food secure individu. RPJMN 2015–2019 mandates universal access of drinking water in 2019. This study analyzes the policy using panel data regression. Random Effect Model (REM ) shows funding, per capita Gross Regional Domestic Product (GRDP ), and population density explain the water coverage of 23.57%, while the rest are explained by variables outside the model. Gross Regional Domestic Product (PDRB) per capita has the biggest impact on coverage, followed by Population Density. On funding, central government’s budget significantly has the highest impact, followed by local government’s budget (APBD), while others aren’t significant.
