Discovery Undergraduate Interdisciplinary Research Internship
Ever wondered how much food waste is generated at Purdue University—or how we compare to other Big Ten schools? This project aims to both evaluate existing practices and behaviors across major universities, and administer a survey to collect data on Purdue’s campus. AI-assisted photo deconstruction and demographic data collection is used to analyze Purdue’s food waste composition and behavior patterns. Concurrently, a comparative analysis of food waste strategies - including categorization of effectiveness, reach, and transparency of waste management efforts while focusing on composting, diversion programs, and dining hall operations - across Big Ten institutions was conducted. Anthropogenic greenhouse gas (GHG) emissions significantly contribute to climate change. Methane is a potent GHG emitted in landfills as organic material breaks down. Food waste is the single most common item disposed of in Lincoln’s Bluff Road Landfill (LTU, 2022). As such, food waste disposal in the landfill is a preventable issue that could dramatically reduce GHG emissions in Lincoln. This project seeks to determine what barriers and motivations exist for reducing food waste at a consumer level. The current food system is directly responsible for much environmental damage including severe climate change, biodiversity loss, and land scarcity. This research aims to find some strategies to mitigate these damages through diet by specifically targeting adolescents because they are potential problem-solvers. This period is also when personality and habits are articulated. By focusing on reducing greenhouse gas emissions, land use, and food waste, a more environmentally sustainable diet can be formulated. The most prevalent material in the California landfill-destined solid waste stream is food. Food waste is not only an economic and social concern, but a significant environmental challenge as well. Most food waste is disposed of in landfills, where it anaerobically decomposes and releases methane, an extremely potent greenhouse gas and driver of climate change. Policies passed in California, including AB 1826 and SB 1383, aim to implement organic waste recycling programs and reduce methane emissions by diverting organic waste from landfills. Food waste and food insecurity are strange bedfellows, but in the United States they shamelessly walk hand-in-hand. The USDA’s Supplemental Nutrition Assistance Program (“SNAP”) and the Emergency Food Assistance Program (“TEFAP”) are two federal programs that provide for large numbers of people in the United States. Local food recovery and donation programs serve their communities as the “backbone of the America hunger response" efforts. In the United States, the legal framework for product date labeling is minimal and varies across states. Manufacturers have the discretion to use any date label that they deem appropriate, and this lack of uniformity leaves room for misinterpretation by both retailers and consumers. Previous studies have examined consumer misinterpretation of date labels and how this lack of knowledge correlates to food waste behaviors. The University of Nebraska-Lincoln took a major step toward sustainability this past fall when Dining Services installed their first ever biodigester on November 8, 2019 within Selleck Dining Center. The impact this biodigester has had, thus far, is observable in the form of quantitative data collected in the amount of food waste digested by this technology. This study focuses on analyzing collected data from the LFC Cloud database, while also searching for trends and patterns that could further suggest substantial impact and efficiency of the biodigester on food waste reduction and sustainability initiatives within UNL Dining Services. The work of our team of over 35 student volunteers reflects that dedication. This past year we became the official Food Recovery Network chapter for Ursinus, broadened outreach efforts on- and off-campus, and boosted food waste education, all while recovering unprecedented quantities of food. The practice of gleaning began as a way for the poor to provide sustenance for themselves and their families. Changes in societal ideas about private property as well as a shift toward a neoliberal style of governance have caused gleaning to become what it is today: a practice primarily undertaken by charitable organizations, nonprofits, and church groups who then donate their bounty to local food banks, providing fresh produce to the food insecure. This paper explores North America’s food waste issue associated with our current industrial globalized food system. Through a sociocultural lens, this essay examines the new social movement of dumpster diving among food waste activists and ‘freegans’ in urban areas. Millions of people are currently unaware as to where their next meal will come from, yet Western households and supermarkets waste massive amounts of edible food. Food waste in child care facilities is both a monetary waste and a danger to the environment. The purpose of this study is to explore the impact of portion control in a child care facility on the amount of food wasted and the costs associated with food waste. Households that are considered to be food insecure do not receive enough support from government agencies like WIC and SNAP to have access to adequate food sources. These agencies only supply $171 dollars per month per person in a household (Coleman-Jensen et al, 2016). The average person needs nearly $200 worth of food a month. These programs also are not offered to everyone that is considered food insecure. After more than two decades of rapid urbanization, Chinese cities now face severe sustainability chal- lenges in terms of balancing economic viability, social justice, and environmental protection goals.
