Ultra-processed foods now comprise the majority of the U.S. food supply and have been directly associated with 32 chronic diseases including obesity, cardiovascular disease, cancer, and diabetes. Current classification systems such as NOVA provide a useful framework for identifying food processing, but rely on broad and subjective categorizations that may not capture the mechanisms most closely associated with promoting persistent overconsumption. In particular, existing classification systems remain limited in their ability to evaluate addiction-like behaviors associated with highly processed foods, including persistent purchasing patterns, reinforcement effects, and substitution responses. In examining the role of community level organizations, I look specifically at how knowledge is conveyed through agriculture and gastronomy. This project analyzes how civil society organizations work to reintegrate individuals into food systems, compelling consumers to take agency over their diets and pursue better livelihoods. Utilizing global coffee commodity prices as an exogenous variable on households' consumption, I examine how global coffee commodity price fluctuations affect the well-being of households in the third-largest coffee-producing nation, Colombia. The results show that rural regions and regions designated as part of the "Coffee Axis" are most affected by fluctuations in prices. While results on other regional distinctions are not significant, the size of a household's farming operation dictates how increases in consumption are affected.
