The frequent outbreaks of food-borne illness necessitate development of intervention strategies, including the use of natural antimicrobials. Listeria monocytogenes is one of the most important bacterial pathogens that recently has caused a significant number of outbreaks. With the aim of finding potent natural agents that can minimize pathogen contamination concerns, this study evaluated the inhibitory activities against L. monocytogenes of grape seed extract (GSE), malic acid (M), nisin (N), and combinations thereof incorporated into soy-protein edible films. Between the 9th and 12th centuries A.D., Chaco Canyon, located near the middle of the high-desert San Juan Basin of north-central New Mexico (fig. 1), was the focus of an unprecedented construction effort by pre-Columbian Native Americans. It has been estimated that from 2,000 to 6,000 people occupied Chaco Canyon during its heyday (Windes, 1984; Drager, 1976). One indication of Chaco’s regional importance is a network of roads that linked Chaco Canyon with other great houses and communities spread throughout a region covering at least 60,000 km2 (fig. 2). The Tenderisation Of Shin Beef Using A Citrus Juice Marinade, Roisin Burke, Frank Monahan

The effectiveness of organic acids (acetic, citric, lactic) and a citrus juice marinade as tenderising agents in shin beef muscle was investigated. At 0.2 M, citric acid was more effective as a tenderising agent than acetic or lactic acid. Immersion of shin beef strips in citric acid (0–0.05 M) showed that a significant tenderising effect was obtained above a concentration of 0.013 M. When shin beef strips were immersed in the citrus juice marinade (31% orange juice, 31% lemon juice, 38% distilled water) mean pH decreased from 5.7 to 3.1 and mean sample weight increased by ∼65%. The objective of this research was to evaluate a potential time-saving method for surface lipid content (SLC) measurement of milled rice by utilizing new extraction technology. The SLC is often used as the basis for quantifying the degree to which bran has been removed from kernels during the rice milling process; this quality factor is often referred to as degree of milling (DOM). The SLCs of two long-grain cultivars of rice, ‘Cypress’ and ‘Cocodrie’, were determined using an accelerated solvent extraction system (ASE) and compared to the conventional, manual system (Soxtec extraction system) that is typically used for SLC measurement. …

Physicochemical Properties And Leaching Behavior Of Eight U.S. Long-Grain Rice Cultivars As Related To Rice Texture, Devon Cameron, Ya-Jane Wang

There are many long-grain rice cultivars produced commercially in the U.S.; however, little work has been done on correlating the structure and physicochemical properties of starch with their texture. The physicochemical properties, leaching behavior, and texture attributes of eight long-grain rice cultivars were studied. Differences were observed in the approximate composition of kernels, including crude protein (6.6-9.3%), crude lipid (0.18-0.51%), and apparent amylose content (25.5-30.9%). These cultivars also differed slightly in thermal properties, such as onset temperature (73.7° to 77.4°C) and peak temperature (78.8° to 81.9°C). Pearl Street Grill & Brewery came into existence in 1997 at 76 Pearl St in downtown Buffalo, NY. It was initially formed as a partnership between a group of local investors and the Wynkoop Brewing Company of Denver, Colorado which was already a successful brewpub operation.

Fissures are fractures of a rice kernel that can be created during the drying and tempering process. They cause tremendous postharvest losses in milling yield. Understanding why and how rice kernels fissure will lead to optimal drying and tempering operations. This information could also provide input to plant breeders for producing rice cultivars that are more resistant to fissuring. Rice kernels were dried using various air conditions in a controlled environment chamber. The kernels were viewed by video microscopy to observe the occurrence of fissures. Fence-in laws in most states require ranchers to pay for fences to keep their livestock from trespassing onto others' property. Some states, or jurisdictions within states, have a fence-out rule that requires ranchers' neighbors to pay for fences to keep livestock out. Both rules are Pareto optimal. Using a potential Pareto criterion, we show that a preference for fence-out in some areas may end as conditions change, such as increased nonranching land uses. Changed conditions may have legal consequences. Specific fence-out and fence cost-sharing provisions may be potentially Pareto inefficient and may be challenged for being unconstitutional under the due …

The fact that people are living longer has heightened awareness of the elderly and many of their special needs. Due to this trend, experts have begun to more closely investigate caloric and nutrient needs of the elderly as well as factors that may alter dietary intake. Forty-two older persons in Lincoln County, West Virginia agreed to participate in research designed to explore the relationship between dietary intake and food availability among rural, community-based elderly. Participants completed a 38 item telephone questionnaire which provided information on demographics, grocery shopping habits, and dietary intakes. Obligations And Penalties Under Lemon Laws: Automobiles Versus Tractors, Terence J. Centner, Michael E. Wetzstein

Distinctive new provisions of tractor lemon laws which create obligations and provide penalties for defective self-propelled agricultural equipment are contrasted with provisions of automobile lemon laws. Lemon-law obligations involve both producers' guarantees to provide consumers with a serviceable vehicle and producers' promises to remedy defects. Due to fewer manufacturer obligations under the tractor lemon laws as opposed to automobile lemon laws, tractors may be expected to have more defects than automobiles. Yet the tractor lemon laws contain fewer penalties in the form of restitution remedies. The inconsistences of these obligations and penalties suggest tractor laws may be inefficient.
