In most African cities, there is sufficient food to feed everyone and considerable wastage of fresh and processed foodstuffs. Poor households are food insecure because they cannot afford to purchase enough quality food and are unable to access the surplus food that exists. Food redistribution NGOs are well established in Southern Africa but more recently large centralized food banks have been advocated as a means to get surplus food to the hungry. The nutrition transition, including the presence of malnutrition and obesity in poor urban populations (the so-called ‘double burden’ of disease), is occurring in Southern Africa in the context of massive rural-urban migration and rapid urbanization. This seemingly contradictory situation poses one of the major threats to public health in the developing world, and impacts the poor – and therefore the most food insecure – to the greatest extent. Considerable attention has been devoted to the impact of the HIV and AIDS epidemic on small farmers and the food security of the rural poor. Despite the rapid progression of the epidemic in rural areas, it remains an ever-growing challenge in the continent’s rapidly-growing cities where prevalence rates are still higher than in rural areas. This report examines the reciprocal relationship between HIV and urban food security. Chokeberries (Aronia melanocarpa) are an antioxidant-rich plant product due to their high content of polyphenols, especially anthocyanins and procyanidins. These polyphenols have been shown to provide protection against coronary heart disease, stroke, and lung cancer, as well as against oxidative stress, the main cause behind chronic diseases promoted by free radicals. The objective of this study was to determine the storage effects of gelatin encapsulation on monomeric anthocyanins, procyanidins, color density, and percent polymeric color of three gummy candies of different strengths formulated with a base of 25.4% chokeberry concentrate, 47.6% sucrose, 1.3% Splenda, and 0.025% potassium sorbate. Why is the relationship between our food system and federalism important to American law and health? It is important simply because federal law controls the American food system. This essay considers how federal law came to structure our food system, and suggests that though food is an essential part of our national economy, the dominating role of the federal government alienates citizens from their food system. It does so by characterizing food as a primarily economic issue, rather than one that has ethical, health, and cultural components. There is general consensus that Randolph Bourne was right in his criticism of Dewey's support for U.S. participation in World War One. Bourne's central argument against Dewey was that war is inexorable. War cannot be controlled; pragmatist method becomes inoperable. Jane Addams largely agreed with Bourne, but would question his claim that war's inexorability is absolute. I will use Addams's participation with the U.S. Food Administration to show cracks in the inexorability of war and also to raise questions about the pragmatist grounding of Bourne's attack on Dewey. Over 1 billion people in the world are now undernourished. The current international food security agenda focuses almost exclusively on the food insecurity of rural populations and ways to increase smallholder production. The plight of the urban poor is marginalised in this agenda leading to neglect of the ‘invisible crisis’ of urban food insecurity. This paper argues that the future of Southern Africa is an urban one and that urban food insecurity is therefore a large and growing challenge. Optimism about the role of household food production (urban agriculture) in improving the food security of the urban poor has given way to pessimism and even scepticism. This paper critically examines the views of advocates of urban agriculture and suggests that it cannot be isolated from a broader consideration of the changing nature of urban food supply systems in Southern African cities. The number of people living in urban areas is rising rapidly in Southern Africa. By mid-century, the region is expected to be 60% urban. Rapid urbanization is leading to growing food insecurity in the region’s towns and cities. This paper presents the results of the first ever regional study of the prevalence of food insecurity in Southern Africa. The AFSUN food security household survey was conducted simultaneously in 2008-9 in 11 cities in 8 SADC countries. The results confirm high levels of food insecurity amongst the urban poor in terms of food availability, accessibility, reliability and dietary diversity. The survey …

This article will discuss the introduction of the potato from its South American origin into Irish cuisine and culture. The authors will outline the stages of devopment from introduction to acceptance as a winter vegetable, to widespread acceptance, moving on to overdependence and leading to subsequent famine. The article will discuss the varieties of potatoes used, the methods of production at different levels of society, and a number of quintessentially Irish potato dishes including boxty, champ, and colcannon, which will be compared with similar potato dishes in other cultures.

The Millennium Development Goals measure ‘access to improved drinking water’ using an indicator that defines access as the presence of an improved water source within 1 kilometer of a person’s dwelling. This purely linear measurement has significant shortcomings, including a lack of consideration for the difficulty of the terrain being traversed and the weight of the loads being carried. This paper examines in detail the human energy costs associated with fetching water, first using two Lao villages as case studies, then applying a predictive energy expenditure model to measure the potential caloric effect of variations in the age and gender …

In December 2008, Governor David Paterson (D-NY) proposed an 18 percent tax on nondiet sodas and fruit drinks containing less than 70 percent natural fruit juice. While the tax was part of a broader budget proposal designed to address New York State's fiscal crisis - a plan that that included new taxes and tax hikes on 137 items and services' - state officials promoted the "obesity tax," as the soft drink levy came to be called, as a public health measure.

Today, livestock farming is a far stretch from the nostalgic notion of animals grazing in green pastures, roaming free in the fresh country air and returning at the end of the day to a cozy barn. Simply stated, livestock farming is a large scale business, where tens of thousands of animals are swiftly raised industrial-style for maximum profit. Under the "factory farm" model, large corporate owned operations grow quantities of animals for slaughter for human consumption as food. In fact, livestock farms now raise 40% of all animals in the United States.
