Food insecurity occurs when an individual does not have consistent access to fresh, nutritious food in safe, socially acceptable, and affordable ways. This is a significant challenge facing Kentuckians, with one in six adults and one in four children experiencing some degree of food insecurity. The present study examines the effectiveness of customized nutrition education in improving 1) nutrition-related behaviors associated with food insecurity and 2) management of household food supply in food-insecure individuals with and without children. Participants were recruited through HOTEL INC, and one was from a household without children and one with children. A pre-assessment survey evaluated …

With a rise in obesity and other non-communicable, diet-related health problems and the persistence of food insecurity among many vulnerable populations, the involvement of young people in the current, burgeoning food-justice movement has the potential to bring forth transformative changes to our food system and thus improve population health. While much is known about the outcomes of providing opportunities for young people to be actively and civically engaged in their communities, there is a lack of research on the pathways, narratives, and experiences that bring young people into food justice activism.

Earlier this month, Singapore’s Hill Street Tai Wah Bak Chor Mee emerged first in the annual Top 50 World Street Food Masters list, making it the second time the hawker has been lauded internationally; it was one of two hawkers here to be awarded a Michelin Star earlier. Out of the top 50 in the World Street Food Masters list, 14 were Singapore hawkers. It says something about the high standards of our hawker fare in Singapore. Yet, Singaporeans are a spoilt lot when it comes to food, and the people we take most for granted are hawkers.

This study fills a critical gap in research on the immediate postwar history of Japanese American community culture in Los Angeles and South Bay. The purpose of this thesis is to contribute research and literature of the immediate postwar period between the late 1940s resettlement period and the 1960s. During the early to mid-1940s, Americans witnessed World War II and the unlawful incarceration of over 120,000 Japanese Americans. In the 1960s, the Sansei (third generation) started to reshape the character and cultural expressions of Japanese American communities, including their development of the Yellow Power Movement in the context of the …

Bill Owens is a pioneer in the United States craft brewing industry through his efforts as an advocate, writer, publisher, brewer, and entrepreneur who created a lasting legacy by influencing generations of brewers and beer fans. Owens wrote the first book on homebrewing equipment (How to Build a Small Brewery: Draft Beer in Ten Days in 1982). He opened the third brewpub in the country (Buffalo Bill's Brewery in Hayward, California in 1983) where, in 1985, he introduced the first commercial pumpkin beer among other beer style firsts. Owens published numerous brewery-focused magazines that featured many illustrious beer writers. …

Between 1600 and 1800, the promise of fresh food attracted more than seven hundred English, French, and Dutch vessels to Madagascar. Throughout this period, European ships spent months at sea in the Atlantic and Indian Oceans, but until now scholars have not fully examined how crews were fed during these long voyages. Without sustenance from Madagascar, European traders would have struggled to transport silver to Asia and spices back to Europe. Colonies in Mozambique, Mauritius, and at the Cape relied upon frequent imports from Madagascar to feed settlers and slaves.

Malnutrition during old age is a significant public health issue. Prevailing behavioral and structural senior malnutrition interventions have had marginal success, largely failing to reflect the realities of people's daily lives. This novel study employed Social Practice Theory (SPT) to explore the food practices of an under-researched, yet highly vulnerable, segment of the older adult population—Lesbian, Gay, Bisexual, and Transgender (LGBT) seniors. Four focus groups were conducted with 31 older adult clients and volunteers at a national LGBT social service and advocacy organization. Since the 1980s, cutbacks to welfare programs, widespread economic insecurity, and increased federal funding for nonprofit agencies have led to a massive expansion of emergency food providers (EFPs) such as soup kitchens and food pantries across the United States. These anti-hunger organizations are often staffed exclusively or predominantly by volunteers who are empowered to care for their communities. But, like all caring labor, volunteer work is shaped by race, class, and gender inequalities. Hunger and poverty motivate poor women to become volunteers, and contradictions around how this labor should be remunerated, recognized, and regulated create conflicts within EFPs. By mobilizing …

This study seeks to analyze the complex relationship between local and national food systems, and articulate the multi-level implications of Question 3. Recent theoretical work has suggested that urban food security is the result of food system interactions. This work highlights the challenge of assessing household-level food insecurity and relating it to the broader food system. One priority is to develop food security metrics that incorporate household interactions with the food system retail environment. The Hungry Cities Food Purchases Matrix (HCFPM) is one such metric that has been developed for situating household food sourcing behaviour within the urban food system. Incarcerated individuals, barred from the protection of labor laws in the U.S., are at the will of these large corporations. This dissertation consists of three essays that investigate consumers’ response to technologies that mitigate food safety risks: cattle vaccines against E. coli and direct-fed microbials.

The first essay examines the influence of information framing and issue involvement on perceptions of the two food safety technologies. This essay also examines the role of issue involvement on food safety perceptions. A hypothetical survey which includes six information treatments was developed, and targeted a representative, random sample of U.S consumers.
